How to Make Pistachio Cookies

In a large bowl whisk together the cornstarch, flour, corn starch, baking powder and salt. Set aside.
Combine the butter, egg yolks and sugar in a separate bowl. Using a stand or hand mixer, beat on a medium speed for about 2-3 minutes until the color lightens and the texture is fluffy.
Add the vanilla extract and lemon zest and mix until combined.
Fold in the wet mixture into the dry mixture. Mix on low until just combined.
Transfer the dough onto a silicone mat and flatten (1/4-inch thick) using a rolling pin.
Place on a large cutting board, cover with plastic and freeze for 20 minutes.
Once the dough is chilled, preheat the oven to 350 F. Line a baking sheet with parchment paper.
Use a star cookie cutter to cut the dough and transfer to the prepared baking sheet.
Bake for about 8-10 minutes. Allow to cool on the baking sheet before decorating.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

Can the dough be frozen for later?

Yes – this dough can be frozen and baked later. If you would like to roll the dough prior to freezing, just roll between the plastic and then freeze. When you are ready to bake, let the dough sit at room temp for about 30 minutes – then cut the shapes and bake as directed.

How many cookies does this make?

This will depend on the size of the cookie cutters you choose to use. As you can see here – I used different sizes and ended up with about 30 cookies – including the small stars. If I had stopped with only the larger cutters, I would have had less.

Can these cookies be made ahead of time?

You bet. This cookie dough can be made ahead of time and kept in the refrigerator for up to 4 days prior to baking.

Make sure to cover tightly with plastic wrap so it doesn’t dry out. You do not need to let it sit out at room temperature before rolling and baking. Just proceed with the recipe as written when you are ready to bake.

You can also bake ahead of time – store the baked cookies in an airtight container and then decorate later on.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

How to Decorate Pistachio Cookies

Melt chocolate or chocolate chips as per package instructions.
Dip the top side of each cookie in melted chocolate, sprinkle with sliced pistachio and decorate with sugar pearls.
Refrigerate for 10-15 minutes or until the chocolate is set. Enjoy!

Can these baked cookies be frozen?

Yes – the baked cookies will keep when frozen for up to 3 months. Wrap each cookie individually with plastic wrap and then place them all in an airtight container before freezing.

How do I properly measure the flour and cornstarch?

The official way is to spoon the flour or corn starch into the measuring cup & level off. This makes sure the light and fluffy ingredients aren’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry. make sure to spoon and level when measuring.

Can this recipe be made without a stand mixer?

I think you could possibly get away with using a hand mixer if you have firm beaters.

I don’t recommend using a whisk or even the whisk attachment on a stand mixer for this dough as a whisk isn’t strong enough for this dough.

Do I really need to chill the dough?

Yes, Yes, Yes! Chilling the dough is important for a couple of reasons. First – while the dough is chilling the ingredients are coming together. It gives a better overall flavor to the cookie.

The second and probably even more important than the first – is that chilling helps the dough hold together during the baking process.

Without chilling, the dough would not only be too sticky to really it out and hold the shape once cut. But it would also spread way too much while baking – leaving flat and not very appealing cookies in the end. Please don’t skip the chilling process.

Can this dough be rolled into balls like drop cookies?

I think that as long as the dough isn’t too large you can make them like drop cookies or rolled cookies. But rolling out with a rolling pin and using the cookie cutter makes them so much cuter.

1 ¼ cups corn starch 180 g
1 cup all-purpose flour 120g
2 teaspoons baking powder
¼ teaspoon salt
¾ cup unsalted butter room temperature (170g)
3 egg yolks
½ cup granulated sugar 100 g
1 ½ teaspoons lemon zest
1 teaspoon vanilla extract

Decorate

7 oz high quality white chocolate or chocolate chips 200g
6-8 tablespoons pistachio nuts sliced
sugar pearls as needed

Instructions

Cookies

In a large bowl whisk together the cornstarch, flour, corn starch, baking powder and salt. Set aside.
Combine the butter, egg yolks and sugar in a separate bowl. Using a stand or hand mixer, beat on a medium speed for about 2-3 minutes until the color lightens and the texture is fluffy.
Add the vanilla extract and lemon zest and mix until combined.

If your dough starts getting too soft while you’re cutting out the cookies just put it back in the freezer to firm up a bit.

Do you love meringues? Growing up they were my mom’s absolute favorite – so we had them in the house all of the time.

She would just pick them up at the store but since she was also a baker, every once in a while I’d wake up to find her making huge batches of them early on a weekend morning. It was positively wonderful!

Meringues are incredibly easy to make with a handful of ingredients that you probably already have in the house – especially during the holiday season.

They give the appearance of being difficult – so you can really impress everyone you gift them to. They don’t have to know that they were easy to make.

I really love that it’s easy to make this recipe in big batches – making it great for dividing between multiple gift trays for the neighbors and friends.

Here are some commonly asked questions

What is the best way to store meringue cookies?

MOST IMPORTANTLY – make sure the meringues are completely cooled before packing them in an airtight container. If they have any warmth to them at all once they are packed – the warmth will create just enough condensation to ruin the texture of the cookie.

Once completely cooled – you can keep them in an airtight container at room temperature for up to 3 weeks. I have heard that they can be frozen so long as they don’t get any moisture in the container. But I personally don’t like to do that.

Can this recipe be doubled?

You can, and we do it often. It might take a bit longer to get all those egg whites to whip to the proper peaks, but overall doubling works fine.

Do I really need to use cream of tartar?

Cream of tartar helps stabilize the egg whites and prevent cracking. If you don’t have it, this recipe can definitely be made without it! But I highly recommend it.

Can these be made with a different flavor of extract?

Yes – if you aren’t a fan of peppermint extract or you are just craving a different flavor – you can use any extract flavor you like. I almost always make my meringues with vanilla – but once in a while, I will use cotton candy, coffee, cake batter, or even rum extract.

Can meringues be made with powdered egg whites?

Yes! You can use powdered egg whites + water – (1 teaspoon of egg whites & 1 tablespoon of water for each egg you wish to replace) to replace the eggs in this recipe.

Why did my meringues crack?

Sometimes because of the delicate nature of the meringue whip, it can separate as it dries out. If you want to avoid this, I recommend using Cream of Tartar. It helps stabilize the egg whites and prevent the dreaded cracking. If you don’t have it, this recipe can definitely be made without it!

How to Make Meringue Cookies

Preheat the oven to 200 degrees F.
Line a baking sheet with parchment paper. Set aside.
In the bowl of a stand mixer or large bowl, beat egg whites, cream of tartar, extract and salt on medium speed until soft peaks form.
Gradually add the sugar 1 tablespoon at a time, beating on high speed until stiff peaks form.
Using a food-grade paint brush, add stripes to the inside of a plastic decorator piping bag fitted with a large star or round tip.
Gently fill the bag with the meringue – taking care to not deflate the meringue.
Pipe the cookies onto the prepared baking sheet.
Bake for 90 minutes or until cookies are set.
Turn the oven off and leave the oven door slightly open for about 60 minutes.
Remove the cookies from the oven. They should feel dry to the touch andhave a hollow sound when tapped.
Store in airtight container.

Can meringues be made with meringue powder?

Yes – you can do that too! Use the same measurements as you would when using powdered egg whites.

What is Caster Sugar?

Caster sugar, sometimes also spelled castor sugar is basically a super-fine grain sugar. Smaller than granulated sugar but not quite ground to the point of being confectioner’s sugar.

When shopping for Caster sugar you can also look for Superfine Sugar or Baker’s Sugar.

Easy Meringue Recipe

This recipe calls for a stand mixer. Can I also make this recipe by hand?

Because of the speed at which the egg whites need to be whipped in order to reach the stiff peaks stage, I don’t recommend trying to make this recipe by hand. You can try it with a hand mixer – but even that will be quite an arm workout.

Can these be made without the food coloring?

Yes – of course! If you want plain white meringues – just skip the step of painting the lines on the inside of the piping bag. If you want to make them a solid color – just gently fold in the desired color of food coloring before adding it to the piping bag. Be very gentle, making sure to not deflate the egg whites!

Can I use caster sugar in place of granulated sugar?

This recipe calls for granulated sugar – but you can use caster sugar because of its ultrafine texture – which makes it easier to dissolve in the mixing process.

You will also end up with a slightly lighter meringue due to the shortened mixing time.

Please make sure you are measuring those ingredients correctly and that they are at room temperature when you start the mixing.

Make sure you have a rotation of baking sheets so you can always place the unbaked dough on a cool tray.

How to Make Frosted Christmas Cookies

Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
In a stand mixer, mix the butter with the granulated sugar until fluffy.
Little by little add in the confectioner’s sugar. Mix until combined.
Add the vanilla, and one egg at a time.
Add the cream cheese and mix until combined.
In another bowl, sift the flour, baking soda, and baking powder.
Slowly add the dry ingredients to the butter mixture until everything comes together. Do not over mix.
Place the mixture in the refrigerator for at least an hour so it is easier to handle.
With a small cookie scoop, scoop round balls onto the prepared baking sheet. Place them on the baking pan around 2 inches apart. They really do expand, so keep that in mind.
Bake for 12 minutes or until they are starting to brown.
Allow to cool completely before removing.

Can I use a gluten-free flour?

I’m not sure just yet. I have been meaning to give this a try but haven’t had a chance. If you do try this, I would recommend using a 1:1 flour like this one as I don’t believe it would require additional ingredients that are typically called for when trying to make baked recipes in a gluten-free version. Please come back & tell me how it turned out.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Can this recipe be made without a stand mixer?

I think you could possibly get away with using a hand mixer if you have firm beaters. But I must warn you, this dough is very thick and it will be quite an arm workout.

I don’t recommend using a whisk or even the whisk attachment on a stand mixer for this dough as a whisk isn’t strong enough for this dough.

Should I use salted or unsalted butter?

When making a sugar cookies recipe like this one, I like to keep the butter unsalted.

Can I use a different extract?

Yes, I do it often. You can use almond extract if you want a more traditional sugar cookie flavor. Sometimes I like to do 1/2 a teaspoon of each to balance out the flavors a bit.

Do I really need to chill the dough?

Yes, Yes, Yes! Chilling the dough is important for a couple of reasons. First – while the dough is chilling the ingredients are coming together. It gives a better overall flavor to the cookie.

The second and probably even more important than the first – is that chilling helps the dough hold together during the baking process.

Without chilling, the dough would not only be too sticky to really roll it into balls. But it would also spread way too much while baking – leaving flat and not very appealing cookies in the end. Please don’t skip the chilling process.

Can I roll these out and cut out shapes?

Unfortunately, this dough isn’t for rolling. But I do have a very good rolled sugar cookie recipe that is perfect for that.

What type of sprinkles do you recommend?

Now I know that when you go to the store there are things like sanding sugar that is labeled as sprinkles. Those are not sprinkles.

Please make sure to use nonpareils as they hold their color better and their shape and won’t soak into the dough as easily. Or you can use jimmies – which are really great at holding their color and shape.

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

¾ cup granulated sugar
¾ cup butter – softened
¾ cup confectioner's sugar
1½ teaspoon vanilla
3 eggs room temperature
½ cup cream cheese
2¾ cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder

Buttercream frosting

⅓ cup butter softened
2½ confectioner’s sugar
1 teaspoon vanilla
3½ tablespoons whipping cream

Decorations

Sprinkles
Food coloring of your choice

Instructions

Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
In a stand mixer, mix the butter with the granulated sugar until fluffy.
Little by little add in the confectioner’s sugar. Mix until combined.
Add the vanilla, and one egg at a time.
Add the cream cheese and mix until combined.
In another bowl, sift the flour, baking soda, and baking powder.
Slowly add the dry ingredients to the butter mixture until everything comes together. Do not over mix.
Place the mixture in the refrigerator for at least an hour so it is easier to handle.
With a small cookie scoop, scoop round balls onto the prepared baking sheet. Place them on the baking pan around 2 inches apart. They really do expand, so keep that in mind.
Bake for 12 minutes or until they are starting to brown.
Allow to cool completely before removing.

Once the chocolate has completely firmed up you can transfer them to an airtight container – making sure to keep them in a single layer.

These cookies do not need to be refrigerated and can be kept at room temperature for several days. I do not recommend stacking as the gel colors don’t firm up and will get ruined when stacked.

What is the best chocolate for dipping cookies?

While you can use white chocolate chips and then tint the chocolate if desired, I have found that it often requires a bit of coconut oil or shortening to get the chocolate to melt to the right consistency.

I like to use candy melts because the chocolate is made with just the right formula so that it performs exactly as needed. PLUS it already comes in the color that I need – making it so much faster and easier. I have had instances where the white chocolate melted fine and then seized once I tried adding the food coloring.

The candy melts come in a multitude of colors, varieties, and flavors so the sky is the limit on what you can do with them when it comes to making these cookies.

Can these cookies be made ahead of time?

You bet. You can coat the cookies with the chocolate ahead of time if you want to keep things simple when it comes time to decorate.

Just keep the coated cookies in an airtight container at room temperature. The chocolate coating tends to sweat when it sits out at room temperature after being refrigerated – which can make the decorating part more difficult.

All that being said – the decorations adhere to the cookies better if they are being added when the chocolate coating is still semi-soft and not fully set.

Can I use chocolate chips instead of candy melts?

So, because we are melting the chocolate, I have found that chocolate chips don’t always temper well for recipes like this. Sometimes you need to add coconut oil to get it to melt creamy enough for it to coat the cookies well.

Sometimes – usually with white or colored chocolate- it likes to seize and then you are stuck with an unusable mess. I highly recommend using candy melts for this recipe.

How to Make Decorated Christmas Wreath Cookies

Line a baking sheet with parchment paper.
Prepare 8 licorice bows (4 for green and 4 for red cookies).
In a small microwave-safe bowl, add 1 ½ cups of one color candy melts. Then follow heating instructions on the back of the package. Make sure candy melts are all melted and the mixture is smooth.
Place one fudge striped cookie, top side down, into the melted candy melt chocolate. Use a fork to flip onto the other side, making sure that the cookie is completely covered.
Lift the cookie out with the fork and gently tap off the excess chocolate and continue until the top is smooth.
Place the coated cookie on the parchment paper and decorate! It’s best to decorate while the chocolate is still warm in order for the decorations to stick. This works best by dipping 2-3 cookies and then decorating those before continuing with the remaining cookies of that color.
Repeat the process with the other colors of candy melts.
Once decorated, let the cookies cool for the chocolate to harden. Put the tray in the refrigerator for 10 minutes for faster cooling.
Serve chilled or at room temperature.
Store in an airtight container for up to two weeks.

Santa Belt: Put a mini M&M into the hole so the gel doesn’t fall through. Use black glitter gel to draw the belt, including filling in the center buckle, then add white glitter gel to highlight the buckle. Then add the “Ho! Ho!” with white glitter gel.
Green & White Stripes: Draw lines using the glitter gel, alternating between green and white, then add a licorice bow in the upper left.

Why didn’t my chocolate wafers melt correctly?

When your chocolate wafers become chunky rather than creamy, it is said that the chocolate is seized. This is typically due to overheating or contact with water or steam.

In the first case, the chocolate is just burning from excess heat, but in the second case, there is a negative reaction between the chocolate (which is waxy and has many oils that are hydrophobic, or “water-fearing”) and the water, causing the components of the chocolate to separate.

Be sure to refer to the package directions when melting chocolate to prevent this from happening.

Tips for the Best Decorated Christmas Wreath Cookies

The glitter gel doesn’t harden all of the way, so be careful when eating and transporting. I would not recommend stacking.
To make the licorice bow, tear off one string of licorice. Take one end and make a small loop, then take the other end and make another small loop, while crossing the middle sections, like an “x”, over each other to make a bow. Firmly press together the part where the licorice crosses in order for it to stay. Then trim the bow ribbon to the desired length.
If candy melts are too thick, continue adding one teaspoon of vegetable shortening until desired consistency is achieved.
For the white candy melts, the chocolate from the cookie may start to melt and turn the white candy brown. Do you love Krispie treats? We sure do – mostly because they are so easy to make and incredibly delicious. They were one of my mom’s favorites – so of course, we make them all the time.

A friend came over and like every time I have a friend over, we always end up in the kitchen. We wanted to create something quick and easy – with few dishes, that we didn’t have to wait forever before we could enjoy.

These super adorable Christmas Rice Krispie Treats were the perfect recipe. I know you will love them as much as we do.

I think you’ll love this recipe because not only are they quick to make – but you can make a ton of them in very little time. This makes it easy to have these as the treat you bring to a holiday party or a classroom party for the kids.

The little ones love to help with these. You can add some squeeze bags of frosting to let them decorate them like you would a cookie with candies and frosting.

You can also leave the colored sprinkles off and maybe dip them in melted chocolate before decorating too. The possibilities are endless.

How to store rice krispie treats

These treats are best at room temperature. So once you add the pretzel, you need to wrap each one tightly with plastic wrap or place them in individual zip-top bags. I don’t like to place them all together in one large bag because they tend to stick together.

I don’t recommend refrigeration because the pretzels will absorb the cool, moist air and become soggy – which is no good.

You can also cover them in the pan and store them before cutting. (then just make your cuts and add the pretzels right before serving.

If you use a metal baking pan – just a bit of foil or press-n-seal on the top works just fine. But I like this baking dish with the lid for ease.

Can these be made with different sized marshmallows?

Yes – you can make this recipe with any size of marshmallows – just be sure to check this marshmallow conversion table below to make sure you are keeping that ratio just perfect when making these treats.

How to Make Christmas Rice Krispie Treats

Grease a 9×13 baking pan. Set aside.
Melt the marshmallows and butter in a large saucepan.
Remove from heat and stir several drops of green food coloring until you achieve the shade of green you’d like. (Keep in mind that the shade will look slightly lighter after adding in the rice krispie cereal).
Stir in the rice krispie cereal until evenly coated.
Spread the mixture evenly into the prepared baking dish.
Add an even layer of sprinkles across the top of the rice krispies.
Allow to fully cool before slicing your Christmas trees. You will first make one even cut lengthwise to form two rectangles, followed by cutting out 6 even triangles from each rectangle (with 4 leftover uneven pieces from the edges total, see photo for example).
Carefully place a pretzel stick into the bottom of each tree and they’re ready to serve, enjoy!

Can you freeze krispie treats?

While I’m not a fan of freezing treats in general, I have plenty of friends that swear that these will do just fine in the freezer. If you plan to do this – I recommend doing it prior to adding the pretzels – for the same reason I mentioned above. The cool air makes them soggy.

I also recommend making sure you have color-fast sprinkles. The nonpareils used here tend to bleed when stored in a moist environment. This will not look pretty when you are ready to serve.

I recommend wrapping each bar individually in plastic wrap. Then place them all in an airtight container and freeze for up to 6 weeks. Let sit at room temperature to thaw before serving again.

For the best possible results – follow these tips so you can make THE BEST KRISPIE TREAT CHRISTMAS TREES EVER!

ALWAYS USE FRESH MARSHMALLOWS! Trust me on this – don’t take that old bag of sticky marshmallows from the back of the pantry. Stale marshmallows mean stale krispie treats. If you want them soft and chewy – always use the freshest marshmallows.
USE REAL BUTTER – please don’t try to make this recipe with margarine. It just won’t turn out the same.
Don’t pack the treats too tighly in the pan – this will make them too dense. You want them to be just tight enough so they don’t fall apart but not crushed.
Don’t over cook the marshmallows – this will make them too firm once they cool.
Keep the treats in an airtight container once cooled. Try to keep the container as close to the size of the treats as possible. A container that is too large will allow for too much air to be in the container with the treats and make them dry out faster.
Dampen your hands with water before pressing the mixture into the pan – this will help to keep the marshmallow from sticking to your hands.

Christmas Rice Krispie Treats

A classic holiday treat – these buttery, chewy Christmas Rice Krispie Treats are made into Christmas trees and topped with festive sprinkles.

Ingredients

10 oz mini marshmallows
3 tablespoons salted butter
Green food coloring
6 cups rice krispie cereal
Sprinkles of your choice
14 pretzel sticks

Instructions

Grease a 9×13 baking pan. Set aside.
Melt the marshmallows and butter in a large saucepan.
Remove from heat and stir several drops of green food coloring until you achieve the shade of green you’d like. (Keep in mind that the shade will look slightly lighter after adding in the rice krispie cereal).
Stir in the rice krispie cereal until evenly coated.
Spread the mixture evenly into the prepared baking dish.
Add an even layer of sprinkles across the top of the rice krispies.
Allow to fully cool before slicing your Christmas trees. You will first make one even cut lengthwise to form two rectangles, followed by cutting out 6 even triangles from each rectangle (with 4 leftover uneven pieces from the edges total, see photo for example).
Carefully place a pretzel stick into the bottom of each tree and they’re ready to serve, enjoy!

Notes

You can get creative with your trees and add icing for garland, stars, play with other food dye colors, or use cut-up plain rice Krispies as “tree stands”.
Try swapping straws for the pretzel sticks.

This time of year it seems I am baking nearly every single day. I don’t mind – as you probably guessed, I love to bake.

There is always someone we are whipping up goodies for around here. We have so many people in our lives that we are thankful for and we like to show our appreciation for them with something homemade.

When it comes to goodies – I probably make these chocolate chip cookies more than anything else. They are the most requested by friends and family and for good reason.

This particular cookie recipe is super soft and chewy and the cookies stay that way for days after baking. They are also super easy to make because we use melted butter. That means no mixer is required, the dough creams together nicely with just a whisk and a rubber spatula. Gotta love that!

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter or eggs. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Do I really need to chill the dough?

Yes, Yes, Yes! Chilling the dough is important for a couple of reasons. First – while the dough is chilling the ingredients are coming together. It gives a better overall flavor to the cookie.

The second and probably even more important than the first – is that chilling helps the dough hold together during the baking process.

Because we are using melted butter, the dough is very soft when it is first blended together. If you were to try to bake the cookies when the dough is like this – the dough would sort of melt together into one big, flat cookie on the sheet pan. Please, please chill the dough for a minimum of 3 hours.

Why do my cookies go flat?

Cookies typically go flat when the dough isn’t the right temperature at the time of baking OR when they are missing the right ingredients that help them to rise- such as eggs, baking soda, and baking powder. Please make sure you are measuring those ingredients correctly and that they are at room temperature when you start the mixing.

Also – something to keep in mind- make sure you are placing the dough on a cool baking sheet. The cookies will bake differently if you are placing the dough on the hot baking sheet you just removed from the oven. Make sure you have a rotation of baking sheets so you can always place the unbaked dough on a cool tray.

Can the dough be frozen for later?

To bake – increase the baking time by 1 minute – no need to thaw the dough before baking.

I like to roll the dough between my hands to soften the outside of the dough before baking – this helps the cookies have the freshest texture once they are baked.

How to make the Best Chocolate Chip Cookies

Chocolate Chip Cookies Ingredients

Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips
butter – melted and slightly cooled
brown sugar – firmly packed
granulated sugar
egg – room temperature
egg YOLK – room temperature
pure vanilla extract
all-purpose flour – lightly fluffed and gently scooped and leveled
baking soda
cornstarch
table salt

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

Chocolate Chip Cookies How to Make

In a large mixing bowl, combine the melted butter with the brown sugar and granulated sugar and whisk to combine and no dry sugar remains.
Whisk in the egg, egg yolk and vanilla until just combined.
Add the flour, baking soda, cornstarch and salt and fold in with a rubber spatula.
Fold in the chocolate chips.
Cover and refrigerate overnight. (min 3 hours – up to 4 days)
Once the dough is chilled, preheat the oven to 325 degrees.
Line baking sheets with parchment – set aside.
Scoop the cold dough into 3 tablespoon-sized balls and roll between your hands to smooth. The dough will be firm and crumble a little but should pull together with the warmth of your hands. Make the dough lightly taller and oblong, rather than round.
Place the dough on the prepared baking sheets, making sure the dough is standing on end so they look tall. This will help the cookies to bake thick.
You can press more chocolate chips around the outside of the dough before baking.
Bake for 14-16 minutes for cookies with 3 tbsp of dough. If making a bit smaller with 2 tbsp of dough – bake 12-13 minutes. They will look underbaked.
Let the cookies cool on the baking sheet for about 10-12 minutes.
Transfer to a cooling rack to cool completely before transferring to an airtight container.

Why add cornstarch to the cookies?

I like to add cornstarch because it is the little secret ingredient that helps keep the cookies extra soft. I’m super picky about my cookies and often won’t eat homemade cookies beyond the first day because they dry out too much for my taste.

But the cornstarch in these cookies keeps them just as soft as the first day – even into day 4. (if they last that long in your house) You can leave it out if you don’t have it without changing anything else in the recipe. But I highly recommend it.

Can these cookies be made ahead of time?

You bet. This cookie dough can be made ahead of time and kept in the refrigerator for up to 4 days prior to baking. Make sure to cover tightly with plastic wrap so it doesn’t dry out. You do not need to let it sit out at room temperature before rolling and baking. Just proceed with the recipe as written when you are ready to bake.

Can these baked cookies be frozen?

Yes – the baked cookies will keep when frozen for up to 3 months. Wrap each cookie individually with plastic wrap and then place them all in an airtight container before freezing.

This time of year I love to make something super cute and this year it was these Grinch cookies. I invited a friend over who is great at cookie decorating and we had a little holiday fun making these adorable little goodies.

My mom was always the one to make goodies like these. She was so patient with the process and made them turn out so adorable.

I love that these ones have eyelashes – just like my mom used to make on all her faces she would create when making fun decorated treats like this. The best part is that you can get as creative as you like with these cookies.

They make a great treat for an office party, fun church potluck, kids class party, or leaving out for Santa. I know you’ll love them as much as we do.

You bet. This cookie dough can be made ahead of time and kept in the refrigerator for up to 4 days prior to baking. You may need to let it sit out at room temperature for about 10 minutes before rolling out and cutting into shapes.

You can also make the cookies up to 2 days prior to decorating them. Just make sure to cool them to room temperature before placing them in an airtight container.

This works great if you are hosting a cookie decorating party. Just make all the cookies a couple of days before the party and then they are ready to go when you have all those extra hands to get them all decorated.

PRO TIP – Dip your Grinch cookie cutter and stamp in flour between cutting out and stamping cookies to make sure the dough doesn’t stick to the cutter or stamp.

meringue powder
warm water

How to Make Grinch Cookies

Combine the butter and sugar in the mixing bowl and beat until light and fluffy, using a stand mixer with the paddle attachment.
Add the egg and vanilla and beat until combined.
Add the flour and salt and beat until it forms a smooth dough.
On a lightly floured surface, roll out the dough to a thickness ¼-in (1 cm).
Cover with plastic and refrigerate for at least 30 minutes.
Preheat the oven to 350 F (175).
Line 1 large or 2 small baking sheets with parchment paper.
Cut out the Grinch shapes and stamp then using the Grinch cookie cutter set (the link below or use one similar).
Transfer to the prepared baking sheet.
Bake for 10-12 minutes or until the edges are just golden brown.
Allow cookies to cool completely before decorating or enjoy plain!

How to Make Royal Icing with Meringue Powder

In the bowl of a stand mixer (or with a hand mixer) slowly stir the sugar and meringue powder together until combined.
Add the water and beat on medium until stiff peaks form, about 5 minutes.
Separate the icing into 3 bowls.
Tint one portion of the icing with green food coloring gel (add a few drops of gel color and stir until the color is even and streak-free). I recommend adding in a drop or two at a time until you get a color you like.
Reserve 1/2 cup of white icing and tint the remaining icing with the red food coloring gel.

How to Decorate Grinch Cookies

Transfer the icing into piping bags with a # 1 or # 3 tips.
Decorate your Grinch cookies by first outlining the border and face features of Grinch face using green icing.
Then fill in the middle with the green icing, leaving the eyes.
Use a toothpick to fill in any gaps by spreading the icing around. Tap the cookie a few times to help the icing settle.
Fill eyes with the white icing. You can fill nose too if desired or draw it later.
Now, outline the border of the fur part of the Grinch hat with the white icing and fill in the middle.
Using red icing, outline and fill the hat.
Fill the pompom part of the hat with white icing.
Set aside to dry for about 15-20 minutes before moving onto the black. This is very important as you don’t want to pull the wet icing as you work and ruin the nice smooth icing you just created.
Place ⅛ – ¼ teaspoon of Wilton black food coloring gel on the plate.
Using a 1 mm brush, draw the face features and outline the Grinch hat. Be creative! It is fun to do it with kids.
Dry cookies at room temperature for 6-8 hours until the icing is completely firm.

I understand wanting to cut this recipe in half. Aside from trying to cut an egg in half – there is already a small amount of dough overall, cutting the recipe would make it more difficult to work with.

You would be better off making the recipe as written and then freezing half of the dough for a later time.

Ingredients

Cookies

½ cup unsalted butter room temperature (113 grams)
1 cup granulated sugar 200 grams
1 large egg room temperature
2 teaspoons vanilla extract
1 ¾ cups all-purpose flour
½ teaspoon salt

Royal Icing

2 ½ cups confectioner’s sugar sifted
2 tablespoons meringue powder 20 grams
½ cup warm water 120 ml
Red and green food coloring gel I used Wilton Christmas red and moss green food coloring gel that can be found at their store or on-line

Instructions

NOTE- You will need an additional 6-8 hours of drying time once the cookies are decorated – before they are ready to be stacked or stored in a container.

Cookies

Combine the butter and sugar in the mixing bowl and beat until light and fluffy, using a stand mixer with the paddle attachment.
Add the egg and vanilla and beat until combined.
Add the flour and salt and beat until it forms a smooth dough.
On a lightly floured surface, roll out the dough to a thickness ¼-in (1 cm).
Cover with plastic and refrigerate for at least 30 minutes.
Preheat the oven to 350 F (175).
Line 1 large or 2 small baking sheets with parchment paper.
Cut out the Grinch shapes and stamp then using the Grinch cookie cutter set (the link below or use one similar).
Transfer to the prepared baking sheet.
Bake for 10-12 minutes or until the edges are just golden brown.
Allow cookies to cool completely before decorating or enjoy plain!

Royal Icing Using Meringue Powder:

In the bowl of a stand mixer (or with a hand mixer) slowly stir the sugar and meringue powder together until combined.
Add the water and beat on medium until stiff peaks form, about 5 minutes.
Separate the icing into 3 bowls.
Tint one portion of the icing with green food coloring gel (add a few drops of gel color and stir until the color is even and streak-free). I recommend adding in a drop or two at a time until you get a color you like.
Reserve 1/2 cup of white icing and tint the remaining icing with the red food coloring gel.

Decorating

Transfer the icing into piping bags with a # 1 or # 3 tips.
Decorate your Grinch cookies by first outlining the border and face features of Grinch face using green icing.
Then fill in the middle with the green icing, leaving the eyes.
Use a toothpick to fill in any gaps by spreading the icing around. Tap the cookie a few times to help the icing settle.
Fill eyes with the white icing. You can fill nose too if desired or draw it later.
Now, outline the border of the fur part of the Grinch hat with the white icing and fill in the middle.
Using red icing, outline and fill the hat.
Fill the pompom part of the hat with white icing.
Set aside to dry for about 15-20 minutes before moving onto the black. This is very important as you don’t want to pull the wet icing as you work and ruin the nice smooth icing you just created.
Place ⅛ – ¼ teaspoon of Wilton black food coloring gel on the plate.
Using a 1 mm brush, draw the face features and outline the Grinch hat. Be creative! It is fun to do it with kids.
Dry cookies at room temperature for 6-8 hours until the icing is completely firm.

Air Fryer Crab Rangoon is a delicious twist on the original fried version! These are air fried, so they’re lighter and healthier, but just as tasty as the traditional recipe you know and love. Perfect appetizer for holidays and game day!

Crab Rangoon is a deep-fried crab and cream cheese appetizer that was popularized in American Chinese restaurants. It’s fairly easy to find crab rangoons in most Chinese takeout places and for good reason – people LOVE them!

I’m such a sucker for most things if they are deep-fried – but they aren’t that great to eat all the time. We would make this same recipe in the oven for decades – we love it so much. So when I learned I could make them in the air fryer – it was a game-changer. Check these out – I know you will love them as much as I do.

When I got my first air fryer the very first thing I experimented in making was some cream cheese-stuffed wontons. They were positively addictive with their super crispy shell and that delicious cream cheese inside.

So as we made them more and more the family was requesting that we stuff them full of other things too. This is when we decided to move on to making crab rangoons – which are one of the most requested things in our house. Making them in the air fryer instead of baking just makes them so much better! Absolutely incredible!

Here are some commonly asked questions

What is a wonton?

A crab rangoon is a type of “wonton” (a Chinese dumpling), and the difference between crab rangoons and other wontons is that crab rangoons contain cream cheese.

Wontons can be round or square, boiled, simmered in broth, or deep-fried. Although crab rangoons are deep-fried in restaurants, the crab rangoon recipe below does not require deep frying because of our trusty air fryer.

Can these be baked instead of air fried?

Yes – if you want to bake them instead of air frying – just prepare the rangoons as instructed and then bake at 400 for 10 minutes.

Tips for Making Crab Rangoons

Be sure to press out all of the air when you close in the edges. The excess air will create a balloon effect when the air inside heats up – which will cause the wonton to explode.
Don’t over-fill the wontons – this will also contribute to them exploding – you want to keep the insides inside – so you have less mess and a prettier presentation.
Make sure to seal the edges tightly with water.

Can Wontons Be Made Ahead of Time?

Yes – you can make the filling, fill the wontons and close them up. Place them on a baking sheet and keep refrigerated for up to one day ahead of when you plan on making them. Be sure to keep them properly spaced as the uncooked wontons will tend to stick together in the moist air of the refrigerator.

How Air Frying Works

While air fryers are relatively new to the market, the technology isn’t really a new concept. They basically work like tiny convection ovens that you can use on your countertop.

Similar to a convection oven, it circulates the hot air within the cooking area using a high-powered fan. This helps evenly distribute the heat around the food which not only creates more evenly cooked food but also reduced cooking times.

By circulating the hot air, which contains the fine oil droplets from adding a light mist layer before cooking, and allows you to remove the need for submerging our foods in heavy oils to create the deliciously crunchy foods we all love.

What are the benefits of air frying?

Healthier

It’s no secret that fried foods are more fattening – but did you know that there are 9 calories in every gram of fat? With air frying, we can reduce the fat by removing most of the oils usually needed to create crunchy foods. This helps to drastically reduce fat intake and calories.

Convenience

I love being able to cook with my air fryer and eliminate the need for large baking sheets and lots of pots and pans. Most of my air fryer recipes can be made with just a mixing bowl or two or a small saucepan in addition to my air fryer.

Energy Efficient

Someone said to me once, “why make this in the air fryer if you can do it the conventional way in the same amount of time?” Well, air frying helps eliminate the need for a conventional oven.

Not only can you keep your home cooler in the summer by not using the oven, but you are saving money with reduced energy consumption costs as well.

Time Saver

I don’t know about you, but if I can avoid turning on the oven and having to wait 20 minutes for it to preheat, I’m happy about that. Most air fryer recipes either don’t require that you preheat the fryer – or the preheat time is 5 minutes or less. That is a huge time saver over using the oven.

Take it on the go

I love that the air fryer is compact and easy to take along on trips. We pack ours in our RV and find that air fryer cooking while camping is so much easier than trying to deep fry foods on a small RV stove or camping burner.

How to Freeze Wontons

I’m all about freezing things when I have been a little too ambitious in the kitchen and made more than we can reasonably eat. This happens a lot now that I am often cooking for only 2-3 of us instead of feeding a family of 5. So the freezer saves the day often around here.

To freeze – make sure to do it before you fry them. Follow the instructions mentioned above for making ahead of time. But instead of placing them in the refrigerator – you will place them in the freezer. Once they are frozen solid, transfer them to a zip-top bag or airtight container.

To cook them from frozen – just place them straight from the freezer into the air fryer. Give them a spritz of oil and then add 2-3 minutes to the overall cooking time. Super easy!

I have a bake option and other special features on my air fryer, is that the setting? Or do you put it on “air fry” setting?

All of my recipes were created with an air fryer that had only a temperature & timer setting – since not all air fryers have all the additional settings.

You can use the bake setting when making recipes that you would traditionally bake – but if possible, please just set the temperature & time for this recipe.

How to Make Crab Rangoons

Combine the cream cheese, crab meat, green onion, worcestershire sauce, garlic powder, and lime juice in a small bowl.
Brush one side of a wonton wrapper with olive oil. Flip the wonton wrapper over so the olive oil side is facing down.
Add a tablespoon of crab filling in the center of the wonton wrapper.
Brush the edges of the wonton with water.
Pull two opposite corners of the wonton together, pressing them gently to steal. Then, pull the remaining two corners up to form a square. Steal the four lines together so the filling doesn’t burst when cooked.
Place the crab rangoons in the air fryer (make sure not to overcrowd the air fryer basket). Cook at 375F for 8-10 minutes, or until the wontons are crisp and golden brown.
Serve warm, with sweet chili sauce.

What type of crab do you use for crab rangons?

I’m a firm believer that if the ingredient is the star of the show – as in – these are crab stuffed wontons – then the crab should be the best possible quality you can find. While you can use imitation crab for these rangoons – I always recommend using lump crab meat if you can.

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

How to reheat wontons?

The key to a good wonton is keeping them crispy. So say no to the microwave when reheating the crab rangoons. Since you are already making them in the air fryer – you want to also reheat them in the air fryer. Just place them back in the basket or on the tray, give them a fresh spritz of oil and reheat at 375 degrees until hot again.

Can this recipe be doubled?

You can, and we do it often. Depending on the size of your air fryer – you might need to cook it in batches. But you can at least mix the crab stuffing altogether for a double batch and then work to stuff them all as you go. Fortunately, they don’t take very long to prep or cook – so you can make quite a few in a short period of time.

What air fryer do you use?

We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.

But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.

Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.

But I when I started working on my second air fryer book, I wanted to change things up. I picked up this Chefman 6.3 Quart Digital Air Fryer+ Rotisserie, Dehydrator, Convection Oven. It has 8 Touch Screen Presets (Fry, Roast, Dehydrate & Bake, BPA-Free, Auto Shutoff) & Accessories Included. It is XL Family Size, which is great!

Where Can I Buy Wonton Wrappers?

I have always found the wonton wrappers in the refrigerated area of the produce section in the grocery store. While all stores are a bit different – every store I have been to here I have found them consistently in that spot.

Now – when it comes to the wrappers themselves – not all brands are the same. I have used what seems like every brand out there. Some tear easily while others are nice and have the perfect thickness. You might have to see what is available and try different ones until you find one you like. Keep in mind – price isn’t always indicative of the quality – I have had more expensive brands not be so great and vice versa.

How to Store Duchess Potatoes

After the potatoes are cooled completely they should be stored in the refrigerator in an airtight container. They will be good for 4 days. Remove and reheat for 1 minute in the microwave.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Yukon gold potatoes

Do I have to use Yukon Gold potatoes?

No, they are the best for mashed potatoes though. They have a great creamy consistency. Russet potatoes also work well, they are fluffier.

How to Make Duchess Potatoes

Preheat the oven to 425°F.
Prepare baking sheets with parchment paper and then lightly spray with cooking oil. Set aside.
Peel the potatoes and then cut them evenly so they’re all roughly the same size, but not too small.
Add the chopped potatoes to a large pot with cold water covering 2” above the potatoes.
Add the salt to the water and bring to a boil over medium heat. Reduce the heat to a rolling boil and cook for about 15-20 minutes, until the potatoes are tender.
Using a slotted spoon transfer the potatoes to the prepared baking sheet and place them in the oven for 10 minutes.
Once baked, transfer the potatoes to a large mixing bowl and mash with a potato masher.
Add 5 tablespoons of the butter, 1 cup of the parmesan, the black pepper and garlic powder. Use a stand mixer with the wire whip, whip the potatoes and other ingredients on a medium speed for about 5 minutes. Scrape down the sides intermittently.
Add the egg yolks, one at a time while the whip is moving on low speed. Once they’re completely mixed turn off the mixer.
Transfer a portion of the potatoes to a piping bag with a large star (or 4B) tip. You can use a glass to hold the bag while you fill it to help avoid any mess.
Pipe the potato mixture into nice spiral mounds, about 3” wide and 2” tall on a clean, parchment-lined baking sheet.
Place the baking sheet, uncovered, into the freezer for about 15-20 minutes.
Melt the remaining 3 tablespoons of butter.
Remove the baking sheet from the freezer. Brush the melted butter lightly over the potato swirls.
Sprinkle the remaining parmesan cheese over the tops.
Bake in the preheated oven for about 15-20 minutes, depending on your oven. Watch the potatoes close, you can remove them once they start to brown on the edges.
Serve immediately.

This recipe calls for a stand mixer. Can I also make this recipe by hand?

Because this recipe requires whipping the potatoes at a high speed to create the right texture, this will require some sort of mixer to achieve the final end product of this recipe. However, you don’t need to use a stand mixer, these can be made using a hand mixer too.

Can you freeze these Duchess Potatoes?

Definitely, they freeze well. Keep them in a freezer-safe container and freeze for up to 6 months.

Do I have to use the garlic powder?

Not at all. A hint of garlic is a popular way to serve mashed potatoes, but it’s not absolutely necessary.

Why did my Duchess Potatoes not hold their shape and melt?

There could be many reasons. Perhaps they needed longer freezing. The potatoes were cut too small and made them watery. When making Duchess Potatoes you’ll want the mashed potatoes to be firm, not too creamy.

Why do you put the boiled potatoes into the oven for 10 minutes?

This step will help the potatoes lose some of the water and dry them somewhat. It’ll help keep your mashed potatoes from being too soft and soggy. You need them to be firm so they hold their shape when piping.

Can I pipe these potatoes without a piping bag and tip?

Yes, you can use a resealable bag with the tip cut off. It won’t be quite as pretty but it will work.

Duchess Potatoes

Duchess potatoes are a side dish often served during the holiday season. Similar to mashed potatoes, piped into shapes using a pastry bag. They make for a very pretty side dish.

Ingredients

5 lb Yukon gold potatoes
½ cup butter salted, room temperature
½ cup heavy whipping cream room temperature
1 cup parmesan cheese – shredded + 3 tablespoons
1½ teaspoons coarse sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
4 egg yolks

Instructions

Preheat the oven to 425°F.
Prepare baking sheets with parchment paper and then lightly spray with cooking oil. Set aside.
Peel the potatoes and then cut them evenly so they’re all roughly the same size, but not too small.
Add the chopped potatoes to a large pot with cold water covering 2” above the potatoes.
Add the salt to the water and bring to a boil over medium heat. Reduce the heat to a rolling boil and cook for about 15-20 minutes, until the potatoes are tender.
Using a slotted spoon transfer the potatoes to the prepared baking sheet and place them in the oven for 10 minutes.
Once baked, transfer the potatoes to a large mixing bowl and mash with a potato masher.
Add 5 tablespoons of the butter, 1 cup of the parmesan, the black pepper and garlic powder. Use a stand mixer with the wire whip, whip the potatoes and other ingredients on a medium speed for about 5 minutes. Scrape down the sides intermittently.
Add the egg yolks, one at a time while the whip is moving on low speed. Once they’re completely mixed turn off the mixer.
Transfer a portion of the potatoes to a piping bag with a large star (or 4B) tip. You can use a glass to hold the bag while you fill it to help avoid any mess.
Pipe the potato mixture into nice spiral mounds, about 3” wide and 2” tall on a clean, parchment-lined baking sheet.
Place the baking sheet, uncovered, into the freezer for about 15-20 minutes.
Melt the remaining 3 tablespoons of butter.
Remove the baking sheet from the freezer. Brush the melted butter lightly over the potato swirls.
Sprinkle the remaining parmesan cheese over the tops.
Bake in the preheated oven for about 15-20 minutes, depending on your oven. Watch the potatoes close, you can remove them once they start to brown on the edges.
Serve immediately.

Candy canes are synonymous with the holiday season. This is why these candy cane cookies are an absolute must to make.

Not only are these super adorable – making them perfect for cookie exchanges, neighbor gifts, potlucks, and leaving out for Santa – but they are super delicious too. Soft and chewy with a slight hint of peppermint flavor – YUM! Don’t forget the hot chocolate to go with these too!

My favorite thing about these cookies is their whimsical shape. Those red and white twists just make me smile. But then you add how quick and easy they are to make and they rise to the top of my list when making treats to give away.

I’m all about homemade gifts because they are so much more personal. So this time of year I almost always make cookies – because I’m already baking anyway and they come from the heart.

This recipe calls for a stand mixer. Can I also make this recipe by hand?

Because this recipe requires whipping the butter and then the dough at a high speed to create the right texture, this will require some sort of mixer to achieve the final end product of this cookie. However, you don’t need to use a stand mixer, these can be made using a hand mixer too.

Do I Need to Chill the Dough?

Actually- with this cookie recipe, no chilling is required – which is why I love it so much. You need the dough to be soft and pliable so you can roll it into the ropes and then twist it into the candy cane shape. So these cookies are not only delicious but quick to make too.

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

How to Make Candy Cane Cookies

In a medium bowl, whisk together the flour, baking powder and salt.
In a bowl of a stand mixer or a large bowl, beat together the sugar and butter until light and fluffy.
Beat in the milk and extracts until well combined.
Add the egg and beat well.
Gradually add the flour mixture until well blended.
Divide the dough in half.
Place half of the dough in a separate bowl and color with food coloring.
Cover both bowls with plastic wrap and then place them in the refrigerator to chill for at least 4 hours.
Remove from the refrigerator and preheat the oven to 375 degrees F.
Line the baking sheets with parchment paper or a silicone mat.
For each candy cane, scoop 1 rounded tablespoon of each color of dough and then roll each into a 6 inch rope.
Place a white rope next to a red rope, pressing together slightly and then lightly twist by holding each end and turning.
Place on the prepared cookie sheet and then curve the top to form the cane.
Bake 8-10 minutes or until the cookies are set and lightly browned.
Remove from the oven and cool on a wire rack.
Store in an airtight container.

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

How to soften the butter to room temperature?

However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Why do my cookies go flat?

Make sure you are measuring those ingredients correctly, and that those ingredients are fresh. Things like baking powder can be less effective within just a few months after purchasing.

But just make sure the butter is at room temperature when you start the mixing. If the cookies are flat- your room could just be too warm, making the butter too soft. If that is the case, you might need to chill the dough for a few minutes.

What is the best way to store candy cane cookies?

Once the cookies have completely cooled, you can place them in an airtight container and keep them at room temperature. These tasty little cookies will keep in an airtight container for up to five days.

Does your family love the story of The Grinch? I grew up with the original version and we love watching the un-animated version that came out many years ago.

So we decided to whip up some cute little Grinch-Inspired chocolate-covered pretzel rods. I love the neon green paired with the single red heart. Not only are these super simple to make, but the kiddos love them too.

What’s even more fun is that they are so easy to make – you could even let the little hands help out. I know our kids loved to be in the kitchen helping me with goodies every chance they got.

When your chocolate wafers become chunky rather than creamy, it is said that the chocolate seized. This is typically due to overheating or contact with water or steam.

Be sure to refer to the package directions when melting chocolate to prevent this from happening.

How to Store Grinch Chocolate Covered Pretzel Rods

Because pretzels tend to get soggy when exposed to moist air (as you find in a refrigerator or freezer) I don’t recommend trying to refrigerate or freeze these pretzel rods. Just place them in an airtight container and keep them at room temperature.

Do keep in mind that depending on the age of the candy melts and your climate – the chocolate may bloom (look like it has a white film on it) after a period of time.

While it is unappealing – there is actually nothing wrong with the chocolate and it is still fine and safe to eat.

If you want to add contrasting chocolate drizzle-

Melt a contrasting chocolate color the same way you did the original chocolate.
Once melted, transfer to a cake decorating squeeze bottle with a small tip and drizzle over the pretzels.
The pretzels can be served immediately after the chocolate hardens.

If cake pops, chocolate truffles, or other chocolate-dipped treats intimidate you, don’t fret! These chocolate-covered pretzels are SO much quicker and easier and you can customize them a million ways. These Grinch-inspired pretzels take very little time to make start to finish and are perfect for packaging up in Christmas treat bags for the little ones!

What is the best chocolate for dipping pretzel rods?

While you can use white chocolate chips and then tint the chocolate to make these pretzels, I have found that it often requires a bit more coconut oil or shortening to get the chocolate to melt to the right consistency.

The candy melts come in a multitude of colors, varieties, and flavors so the sky is the limit on what you can do with them when it comes to making these pretzels.

Tips for Making the Best Chocolate Dipped Pretzel Rods

If you shake the pretzel rod when pulling it out of the glass, it actually makes it uneven and no longer pretty. It’s common to shake off the excess chocolate when dipping, but not this time.
I just used a regular, inexpensive, tall glass from Walmart. Don’t get a tall, wide one, but a narrower one is best. You want the chocolate to sit up taller so you can dip it as deep as you like, but still have room to fit your pretzel into the top.
Don’t put the lines of chocolate on the pretzels until the first layer has hardened. The chocolate, when still wet, will just mold into itself, not making the lines as prominent.
Pretzel rods are rarely perfectly straight. Because of this, you’ll want to let it lay however it naturally wants to lay when you place them on the baking sheet. This will make your work much easier throughout the process.
Don’t press the heart into the chocolate very hard, or it makes a little mess. Just laying it on the pretzel while the second layer of chocolate is still wet will allow it to stick perfectly.

I haven’t tried using sugar-free chocolate. But I think that will work just fine. If you give it a try, please let me know how it turned out.

My friends – this time of year our house basically turns into cookie central. We have so many cookies being made around here – but the one recipe that is most requested is the one for these Christmas Pinwheel Cookies.

These cookies are soft and chewy and say fresh for UP TO A WEEK if kept in an airtight container. That’s what makes them great for parties, mailing to family out of town and leaving them out for Santa to enjoy on Christmas Eve.

The family thinks I’m crazy because I typically don’t like cookies beyond the first 24 hours. But that is with most other cookies. These are unlike any other cookie – they are just as good on day 4 as they are on day 1 – which is HUGE for me.

These cookies stay so soft and chewy and you just can’t beat that adorable, whimsical swirl in those fun Christmas colors. These are definitely at the TOP of my favorites list when it comes to treats. I know you’ll love them too.

I see a lot of people using colored sanding sugar that is labeled as sprinkles.

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

How to Make Christmas Pinwheel Cookies

Combine flour, salt & baking powder in a bowl, mix and set aside.
In another large mixer bowl, cream together the softened butter & sugar.
Once smooth, add the eggs & vanilla and beat well.
Add the flour mixture to the butter mixture a little at a time. Mix until the dough is smooth and flour is fully incorporated.
Separate your dough into three equal parts.
Set one of the portions aside – this will be your white/cream color.
Color one of the portions of dough red, and one green. Use the mixer to beat the color into the dough until you have reached the desired shade of each color. Be sure to rinse out the bowl and the beater inbetween the colors so that you don’t cross the colors and end up with something other than the desired color.
Once the dough is tinted to the desired color – form it into a ball, then flatten it into a patty and then reshape the edges to form a rectangle.
Wrap each flattened rectangle in plastic, and allow the dough to firm up in the refrigerator for about an hour or two.
Roll out each ball of dough to about ⅛ – ¼” thick, and stack them on top of the other (I did red on the bottom, then white, and then finally green).
Trim the edges with a pizza cutter so you have nice, straight edges.
If desired – Pour some sprinkles into your hand & brush the outside of the dough with a bit of water and then press the sprinkles into the outside of the dough log.
Roll the dough into a log, wrap in plastic wrap and chill in the refrigerator for at least 1 hour.
Preheat the oven to 350 degrees.
Cut the log of dough into ¼ – ½” thick cookies and place the rounds on a parchment lined baking sheet – approx 2 inches apart. The thinner the blade used to slice them, the better. A thick blade will tend to squish the dough.

This baked hot artichoke spinach dip is easy to make in about 30 minutes. It’s so cheesy and perfect for holiday and game day entertaining.

I’m all about the appetizers and snacks – no matter the time of year. I just can’t get enough! I would much rather snack and graze than sit down for a full meal. It’s so much easier if you ask me.

So, this artichoke spinach dip is one of my favorite dips to serve at holiday parties or any time of year. It’s so easy to make.

With just 5 minutes of prep before popping it in the oven, it makes it perfect for any type of gathering. Serve with tortilla chips, crackers, or veggies.

I have made plenty of hot-dip recipes in my time. I even have a Vegan Spinach Artichoke Dip that we make for game day or race day quite frequently.

But we found a new favorite steak house here close to home and they have literally the best hot spinach dip I have ever had. So – as I usually do, I set out to break the recipe so we could have it all the time here at home.

This recipe is pretty darn close – which makes it positively irresistible. I know you’ll love it!

What flavor variations can be made with this?

I love this recipe because of its versatility and how many different ways we can change it up. Try mixing in diced green chilies, jalapenos, hot sauce, rotisserie chicken, ground or smoked sausage, chili powder, paprika, diced bell or sweet peppers and so much more.

Can this dip be made ahead of time?

Yes, I do it often. I usually mix all of the ingredients, transfer them to the baking dish, and then refrigerate until closer to game time. Then I pop it in the oven when we are just about ready to serve everything else. This way it comes out hot and ready to enjoy immediately.

Can you freeze spinach dip?

Because of the dairy in the recipe, I don’t recommend freezing this dip. It can be made 1-2 days ahead of time and refrigerated until ready to use. Then just reheat in the microwave when you want to serve again.

artichoke hearts – drained and chopped
cream cheese – room temperature
frozen spinach – thawed and drained

Can this recipe be doubled?

You can, and we do it often. But be sure to distribute the mixture between 2 baking dishes instead of trying to get it all into one small one or into one larger one. That will change the baking time too much.

Can this recipe be made with another type of cheese?

Yes – this recipe is great when you use other types of cheese. Try using pepper jack, Colby-Jack, American, or even smoked gouda.

Can this be made with Greek yogurt instead of mayo?

You bet! If you want to lighten up the recipe – you can swap out the mayo with plain Greek yogurt. You can also use low-fat cream cheese – just keep in mind that the less fat you have in the recipe, the less creamy it will be. The fat is a large component of the texture of the end product.

How to Make Artichoke Spinach Dip

Preheat the oven to 350 degrees. Prepare a baking dish my spraying lightly with cooking oil.
In a mixing bowl, combine artichoke hearts, cream cheese, spinach, Italian cheese, mayonnaise, garlic and basil. Stir until well combined.
Spread the mixture into the bottom of the baking dish.
Top with the mozzarella cheese.
Bake for 25 minutes or until the cheese has melted.
Serve with tortilla chips, crackers, and/or toasted, sliced french bread.

What is the best way to store leftover Spinach Dip?

Take any leftovers and transfer it to an airtight container or cover the baking dish with plastic wrap or foil. Keep refrigerated until ready to enjoy again.

This time of year tradition is important. With most of our family gone, we like to try to bring back the things that remind us of those people we have lost.

I grew up with goodies like these ricotta cookies. They were always there at our holiday gatherings. So it just makes sense to make sure they continue to be a holiday favorite for years to come.

Ricotta cookies are soft with a moist crumble. While they contain lemon zest and ricotta cheese – you don’t really taste either of them prominently in the cookies.

The lemon flavor is light and gives a fresh taste, while the ricotta helps with the texture of the cookies making them positively irresistible.

What is the best way to store ricotta cookies?

Once the icing hardens, you can place the cookies in an airtight container and keep them at room temperature. These Ricotta Cookies will keep in an airtight container for up to five days.

Why do my cookies go flat?

Make sure you are measuring those ingredients correctly, and that those ingredients are fresh. Things like baking powder can be less effective within just a few months after purchasing.

This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in fact sprinkles. You want to make sure you are buying nonpareils.

I see a lot of people using colored sanding sugar that is labeled as sprinkles.

How to Make Ricotta Cookies

In a large bowl, whisk together flour, baking powder and salt. Set aside.
In a bowl of stand mixer or large bowl, beat the sugar, butter, and lemon zest until light and fluffy.
Mix in the ricotta and vanilla extract until well combined.
Add the eggs one and a time, beating after each addition.
Gradually add the flour mixture and mix well.
Cover the bowl with plastic wrap and place in the refrigerator to chill for at least 2 hours.
Remove from the refrigerator and preheat the oven to 350 degrees F.
Line baking sheets with parchment paper or a silicone mat.
Scoop the dough using a small cookie dough scoop, shape into balls and place on the prepared baking sheet.
Bake for 9-11 minutes or until the cookies are golden brown.
Cool on a wire rack.

Glaze

In a medium bowl, beat the butter, confectioner’s sugar, milk and vanilla until smooth.
Spread on the cookies or dip the tops in the glaze.
Immediately add the sprinkles.

This recipe calls for a stand mixer. Can I also make this recipe by hand?

Because this recipe requires whipping the butter and then the dough at a high speed to create the whipped texture, this will require some sort of mixer to achieve the final end product of this cookie. However, you don’t need to use a stand mixer, these can be made using a hand mixer too.

Can this recipe be cut in half?

You bet – if you want to make fewer cookies – this recipe reduces well. However they make a great gift for friends and family – or you could take a goodie tray to the local fire or police department. I’m sure they would appreciate it.

Can you freeze ricotta cookies?

Yes, these can be frozen – but are best when frozen before decorating. To freeze, just roll the cookie dough into balls & then place the dough balls on a plate or cookie sheet & flash freeze them.

Once they’ve been flash-frozen, transfer them to a zip-top bag & freeze for up to 1 month. When you want to make the cookies, just thaw the dough for 20-30 minutes, place it on the baking sheet, add the decorations, and bake!

I don’t recommend trying to freeze with the decorations as the nonpareils will bleed when exposed to the moist air. This will result in a less than desirable look. Please add those just before serving.

Ricotta Cookies

Ricotta Cookies are the tastiest cookies! This classic Italian treat is perfect for Christmas but so good that they’ll be on your cookie tray year round!

Cookies

3 ½ cups all-purpose flour
2 ½ teaspoons baking powder
1 teaspoon salt
2 cups granulated sugar
1 cup unsalted butter softened (2 sticks)
1 teaspoon lemon zest
1 ¾ cups 15 oz fresh ricotta cheese
1 tablespoon vanilla extract
2 large eggs room temperature

Glaze

¼ cup unsalted butter, melted (½ stick)
2 cups sifted confectioner’s sugar
3 tablespoons milk or heavy whipping cream more if needed to desired consistency
1 teaspoon clear vanilla or almond extract **see notes

Decoration

Rainbow Nonpareils or red and green for the holidays

Instructions

Cookies

In a large bowl, whisk together flour, baking powder and salt. Set aside.
In a bowl of stand mixer or large bowl, beat the sugar, butter, and lemon zest until light and fluffy.
Mix in the ricotta and vanilla extract until well combined.
Add the eggs one and a time, beating after each addition.
Gradually add the flour mixture and mix well.
Cover the bowl with plastic wrap and place in the refrigerator to chill for at least 2 hours.
Remove from the refrigerator and preheat the oven to 350 degrees F.
Line baking sheets with parchment paper or a silicone mat.
Scoop the dough using a small cookie dough scoop, shape into balls and place on the prepared baking sheet.
Bake for 9-11 minutes or until the cookies are golden brown.
Cool on a wire rack.

Glaze

In a medium bowl, beat the butter, confectioner’s sugar, milk and vanilla until smooth.
Spread on the cookies or dip the tops in the glaze.
Immediately add the sprinkles.

Notes

Extract – using clear imitation vanilla extract will help to keep the glaze bright white.

Our family sure loves cheesecake. My New York-style recipe is nice and thick and oh so creamy. So I wanted to spin-off of that and make something for the holiday season

I paired down the recipe, used a chocolate mint Oreo crust, added a hint of peppermint flavor and, of course, holiday sprinkles to make it super festive. It is fun, cute, and oh so tasty!

While cookies are the traditional treat to leave out for Santa or to serve at a holiday gathering – I’m always wanting to change it up and offer something different. Also – Santa is often asking me to cheesecake and I’m happy to oblige.

Especially when the cheesecake whips up so easily as this one does. Plus it’s just so cute with all the holiday colors and candy. You can’t go wrong with this one.

Here are some commonly asked questions

Why is my filling lumpy?

The lumpy filling comes from the cream cheese being too cold. When you add the other dry and room-temperature ingredients to the cold cream cheese, it won’t blend and emulsify with the ingredients completely, leaving little lumps of cream cheese speckled throughout the filling.

Can I use another topping?

Oh yes, of course! You don’t have to add holiday candies to this cheesecake unless you want to. Adding other toppings like chocolate sauce, fresh fruit, plain caramel sauce, crushed cookies and so much more.

Where did cheesecake originate?

While many think it originated in New York, cheesecake actually originated from Greece about 4000 years ago. There they would pound cheese into a thick paste and sweeten it with honey before adding to a crust made with wheat.

It is similar to the cheesecakes we know today and I am so glad they thought to make something so delicious that we enjoy today.

Can graham cracker crumbs be used for the crust?

Of course. If you don’t want to use Oreo cookies, you can use about 9 full-sized graham crackers (the rectangle) instead. You can also substitute another cookie that has a firm crumble.

Can I use fat-free cream cheese?

Cheesecake isn’t really considered diet food. It is rich and creamy because of the full fat that is in the cream cheese.

Because of this, I don’t recommend using a low-fat or fat-free product to make this recipe.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Do I have to use a springform pan?

Well, yes and no. If you want a traditional round and tall cheesecake like you see here, then the answer is yes. Without being able to remove the sides of the pan as you do with a springform, you won’t be able to remove the cheesecake and keep it in slices.

However, if you want to make this in a 9×13 shallow pan, that would work too. When working with a more shallow pan and cutting into bars instead of slices, the cheesecake is easier to remove and serve.

How many slices will this recipe make?

Honestly, this really depends on how large or small you cut them. But I like to cut a decent-sized slice because when it comes to dessert, I don’t mess around.

You can reasonably get 16 slices out of this cake and not be skimpy.

Cheesecake Recipe for Christmas

How to Make Christmas Cheesecake

Preheat the oven to 300 degrees.

Crust

Using a food processor or blender, grind cookies into fine crumbs.
Stir in melted butter, pulse until crumbs are moist.
Press the mixture into the bottom of 9″ springform pan.
Place in freezer to set until you are ready to add in your filling.

Filling

Beat the cream cheese, sugar, peppermint and vanilla extracts in a large bowl until blended.
Add the eggs, 1 at a time, mixing on low speed after each just until blended.
Fold in the sprinkles.
Pour over the chilled crust.
Bake 1 hour 5 min or until center is almost set but still slightly jiggly.
Run knife around rim of pan to loosen the cheesecake and then cool completely before removing the rim.
Refrigerate for at least 4 hours. Preferably overnight so it is nice and firm.

Decorate – Make the buttercream topping

In a mixing bowl, beat the butter until fluffy.
Carefully add in the confectioner’s sugar and vanilla. Mixing slowly and then increasing speed once mostly incorporated, beating well until well whipped. If the frosting is too thick add a splash of milk or coffee creamer.
Spread the frosting on the top of the cheesecake.
Pipe some of the frosting around the edge.
Decorate with candies and sprinkles.

What if I don’t have a stand mixer?

You don’t have to have a stand mixer to make this recipe. Using a handheld mixer & a very large mixing bowl will work just fine for the batter. Just make sure your ingredients are at room temperature & that you blend everything really well.

What is the best way to store leftover holiday cheesecake?

Just keep it refrigerated for up to 7 days. As long as you don’t let it sit out at room temperature for too long, this should keep well when chilled.

Make sure to cover the pan with plastic wrap or foil before refrigerating.

Keep in mind that when you add the colored candies and then refrigerate them – the moist air will cause the colors to bleed. It also tends to cause the peppermint candies to melt.

So this does make for an unappealing dessert. I recommend only adding them at the time of serving and consider removing them before refrigerating the remaining cake.

Can I make the crust thicker?

Yes, absolutely. If you are one that really loves a thick crust that comes up the sides of the cheesecake, just double the ingredients for the crust portion of this recipe & make sure that it is chilled & solid before adding your filling.

Keep in mind that doing this it will make the filling less likely to fit inside the 9″ pan – if you are doubling the crust – I do recommend moving up to the 10″ or 12″ pan.

Can this holiday cheesecake be frozen?

I recommend freezing the cheesecake before the candies are added. Leave the cheesecake in the pan, cover with plastic wrap and then foil. Freeze for up to 3 months.

When serving you can add the candies to the thawed cheesecake.

Can this recipe be halved?

Cutting this recipe in half would drastically change the baking time. For the best possible result, it would be better to make the recipe as it is written & then give away or freeze whatever portion you won’t use immediately.

That being said, this cake will keep for 4-5 days, so there is plenty of time to enjoy it all.

Can I use whipped topping instead of frosting on top?

Absolutely! You don’t have to add the buttercream frosting to the top of the cheesecake. You can add a layer of whipped topping instead.

Of course, the traditional New York-style cheesecakes have a layer of sour cream on top. But that doesn’t seem very festive to me – which is why I went with the frosting instead.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

How can I make this in the slow cooker?

Because this cheese sauce is more like a roux, it comes together quickly. I don’t recommend MAKING it in the slow cooker.

However, you can transfer the dip to the slow cooker and keep it on the warm setting so it remains the perfect dipping temperature while it is being served and enjoyed.

Be sure to give it a stir every 30-60 minutes to make sure it doesn’t burn, especially if your slow cooker tends to run on the hotter side.

What is the best way to store leftover dip?

After serving, place leftover dip in a shallow airtight container. Be sure to label with the date before refrigerating. This recipe should keep for up to 3 days.

As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth.

How many can this serve?

This will depend greatly on portion sizes & the appetites of your crowd. We were able to easily have 6 people snacking on this dip for an afternoon without running out.

We like to add this cheese dip to other recipes – like tacos or on top of a savory omelet, so any leftovers will go quickly.

Can this recipe be doubled?

Yes, absolutely! If you have a larger skillet, you can definitely double this recipe.

This time of year cookies are made in abundance in our house. Seems every single week I have several batches of various types of cookies being baked at any given time. No one around here is complaining about that.

One cookie that is a holiday classic, but is often overlooked are these whipped shortbread cookies. They are so simple to make.

These require only a small handful of ingredients, are egg-free and if you don’t add the additional dipped chocolate, they can be done and ready to enjoy in under 30 minutes. Pretty good if you ask me!

Now – I love these cookies because they can be decorated in so many ways – and they always look so pretty. This makes them perfect for just about any holiday.

The hubs, he loves these cookies with his coffee. I think it’s because they aren’t too sweet, with most of the sweetness coming from the decorations. These are more buttery and just sort of melt in your mouth.

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

Normally I would tell you to make sure you are measuring those ingredients correctly, but these particular cookies don’t call for those ingredients.

How do I properly measure the flour?

Because shortbread can get quite crumbly very easily with too much flour – please be sure to measure the flour for these cookies as described above.

Should I use salted or unsalted butter?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use salted butter.

I usually use whatever I have on hand & I really don’t pay too close attention to what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.

These days with groceries being more difficult to find – I basically get whatever the store has available at the time and make it work.

Do I need to chill the dough?

Nope – that is what I love about these cookies. No chill time is required – which makes them super fast when the cookie craving strikes.

Best Shortbread Recipe

How to Make Whipped Shortbread Cookies

Preheat the oven to 350 degrees. Line 2 baking sheets with parchment and set aside.
Whip the soft butter in the mixer using the paddle attachment.
Slowly stir in the flour, confectioner’s sugar, cornstarch and vanilla until the dough pulls together.
Use a 4 tsp cookie scoop to scoop the dough onto the prepared baking sheets.
Press a fork gently into the tops of the cookies.
Add sprinkles – if desired.
Bake for 14 minutes. Remove and allow to cool completely before decorating with chocolate.
To decorate, melt the chocolate in a microwave-safe bowl according to package directions.
Dip each cookie halfway into the chocolate, place back on the parchment lined sheet and immediately add sprinkles before the chocolate solidifies again.
Store in an airtight container at room temperature.

This recipe calls for a stand mixer. Can I also make this recipe by hand?

Because this recipe requires whipping the butter and then the dough at a high speed to create the whipped texture, this will require some sort of mixer to achieve the final end product of a whipped cookie. However, you don’t need to use a stand mixer, these can be made using a hand mixer too.

Can you freeze whipped shortbread cookies?

Yes, these can be frozen – but are best when frozen before decorating. To freeze, just roll the cookie dough into balls & then place the dough balls on a plate or cookie sheet & flash freeze them.
