When the warmer months come around I get so excited because that means I can find fresh corn on the cob at the store and farmers’ market. Corn on the cob is one of my favorite things and I’m always looking for delicious ways to add it to our meals.

Whipping up this grilled corn salad is so simple and I can use leftover grilled corn and make it ahead of time when preparing for a summer gathering. It really doesn’t get any easier and I know you’ll just love that amazing taste too!

What is grilled corn salad?

A grilled corn salad is a type of salad that features grilled corn as a main ingredient. This salad can be made with a variety of other ingredients, such as tomatoes, onions, peppers, and sometimes even cheese. It is typically dressed with a vinaigrette or other light dressing.

Can this be made with canned corn?

Yes – you can make this recipe using canned corn. You can either just drain it and add it to the mixing bowl (but it won’t actually be grilled when doing this) OR you can add that canned corn to a skillet and saute it until it gets a golden crisp on the edges to give it that grilled look before tossing it with the other ingredients.

Can this be made with frozen corn?

So – much like the canned corn – you can use frozen corn the same way. You will, of course, want to cook it first before adding it to the mixture. You can either boil it or cook it in a skillet – but it should be thawed and cooked prior to mixing it with the other ingredients.

How long does Grilled Corn Salad last?

This salad will last in the fridge for 3-4 days. Just be sure to keep it in an airtight container and not let it sit out at room temperature for too long when serving.

Yes, this salad can be made ahead of time. Simply chop up all of the ingredients and store them in a covered container in the fridge. When you’re ready to serve, just add the dressing and give the salad a stir.

How to remove the bite from onions?

So – onions are a tricky thing. A lot of people love them for their bite and others avoid them for the very same reason. If you are serving this to a large group of people and you want it to be more on the mild side to appease a larger portion of the crowd, there is a way to lessen the bite of the onions.

One way to remove the bite from onions is to soak them in cold water for 10 minutes. This will help to take away some of the sharpness. You can also try cooking the onions on low heat for a short period of time before adding them to the mixture, which will help to mellow out their flavor.

How to Make Grilled Corn Salad

  1. Preheat the grill to medium heat and lightly oil the grill grates.
  2. Brush the olive oil on the corn and season with salt and pepper.
  3. Cook on the grill, turning occasionally until corn is tender and the char marks are visible.
  4. Remove the corn from the grill and set it aside while you cut the other ingredients.
  5. Slice the kernels from the corn cob and add the corn to a large bowl.
  6. Add the cut bell pepper, tomatoes, and red onion.
  7. Toss together.
  8. Gently stir together with the cut herbs.
  9. Mix the dressing ingredients (lime juice, olive oil, salt, and pepper) and pour over the salad mixture.

  • 6 ears fresh sweet corn
  • ¼ cup olive oil

Honestly – Forget take-out! This air fryer orange chicken is better than anything you can get from a restaurant. It’s easy to make, and the orange flavor is delicious.

When we moved out of the city – getting takeout became far more difficult. So we went back to the days when we made all of our favorites ourselves. I think we forgot just how easy it is to make these tried and true favorites – especially now that we can do it in the air fryer instead of on the stovetop.

To store leftover orange chicken, let it cool completely before transferring it to an airtight container. You can keep leftovers in the fridge for up to 3 days, or you can freeze them for up to 1 month. When ready to enjoy your orange chicken again, simply reheat it in the air fryer for a few minutes. Enjoy!

Can this be made ahead of time?

Yes – you can make this dinner ahead of time. But keep in mind that the coating on the chicken will not be as crispy once you reheat it.

How Air Frying Works

While air fryers are relatively new to the market, the technology isn’t really a new concept. They basically work like tiny convection ovens that you can use on your countertop.

Similar to a convection oven, it circulates the hot air within the cooking area using a high-powered fan. This helps evenly distribute the heat around the food which not only creates more evenly cooked food but also reduced cooking times.

By circulating the hot air, which contains the fine oil droplets from adding a light mist layer before cooking, and allows you to remove the need for submerging our foods in heavy oils to create the deliciously crunchy foods we all love.

Should I use chicken breasts or chicken tenders for this recipe?

Honestly – either will work just fine. You will still end up with a fantastic dish even if you cube the chicken tenders or boneless skinless chicken breasts. I just prefer the breast over the thighs for this.

What is orange chicken?

Orange chicken is a popular Chinese dish that consists of chicken breast meat that has been battered and fried, then coated in a sweet and sour orange sauce. In some cases, the recipe calls for additional components such as pineapple or green bell peppers.

Where was orange chicken created?

The recipe’s origins are in China. However, the large Panda Express chain claims to be the real inventor of “Orange Chicken” as a substitute for General Tso’s chicken or sweet and sour chicken. There’s no way to know whether it’s true or not – but it’s certainly delicious.

What are the benefits of air frying?

Healthier

It’s no secret that fried foods are more fattening – but did you know that there are 9 calories in every gram of fat? With air frying, we can reduce the fat by removing most of the oils usually needed to create crunchy foods. This helps to drastically reduce fat intake and calories.

Convenience

I love being able to cook with my air fryer and eliminate the need for large baking sheets and lots of pots and pans. Most of my air fryer recipes can be made with just a mixing bowl or two or a small saucepan in addition to my air fryer.

Energy Efficient

Someone said to me once, “why make this in the air fryer if you can do it the conventional way in the same amount of time?” Well, air frying helps eliminate the need for a conventional oven.

Not only can you keep your home cooler in the summer by not using the oven, but you are saving money with reduced energy consumption costs as well.

Time Saver

I don’t know about you, but if I can avoid turning on the oven and having to wait 20 minutes for it to preheat, I’m happy about that. Most air fryer recipes either don’t require that you preheat the fryer – or the preheat time is 5 minutes or less. That is a huge time saver over using the oven.

Take it on the go

I love that the air fryer is compact and easy to take along on trips. We pack ours in our RV and find that air fryer cooking while camping is so much easier than trying to deep fry foods on a small RV stove or camping burner.

Can this recipe be baked?

Yes – if you want to bake this chicken instead, just prepare as directed and then bake in a 400-degree oven for 20-25 minutes or until cooked through.

Can this be made without orange juice?

Well- it wouldn’t be orange chicken anymore, but if you want to change it up you can use pineapple juice instead. This will make it really similar to my pineapple chicken recipe – which is a real crowd-pleaser.

Chicken

  • chicken breasts – cut into 1” cubes
  • egg – beaten with a splash of water
  • cornstarch

Orange Sauce

  • orange juice
  • soy sauce
  • rice vinegar
  • orange zest
  • grated ginger
  • grated garlic
  • cornstarch
  • red pepper flakes to taste

Is orange chicken spicy?

No, not really. There is a little bit of a bite with the addition of the crushed red pepper flakes in the sauce. But if you only like the sauce to be sweet you can leave out the crushed red pepper.

What if all my chicken won’t fit in the air fryer?

No worries – you can work in batches. If you have trouble getting it all to fit – please don’t crowd the chicken in the basket. It needs airflow to cook properly. Just make all of the chicken in the cornstarch and then cook what will fit. Then remove and cook the remaining chicken. Then toss it all in the sauce together.

How to Make Air Fryer Orange Chicken

Chicken

  1. Spray the air fryer basket with olive oil spray and set it aside.
  2. Place the beaten egg in a large bowl and the cornstarch in another large bowl.
  3. Dip the chicken, a few pieces at a time, into the egg to coat, then dredge in the cornstarch.
  4. Then, place the coated chicken in the prepared air fryer and cook at 375 for 12-14 minutes, or until the chicken is golden brown on the outside and registers 165F internal temp on an instant-read thermometer.
  5. Allow the chicken to cool for 5 minutes before saucing– this will help prevent it from getting soggy.

Orange Sauce (while the chicken cooks)

  1. Combine all of the ingredients in a small saucepan over medium heat.
  2. Bring the mixture to a boil and reduce the heat to low.
  3. Allow the sauce to thicken until it can coat the back of a spoon — about 2 minutes of simmering.
  4. Set aside to cool for at least five minutes before adding to the chicken.
  5. Once the chicken and sauce have cooled slightly, add them both to a large bowl and toss to combine.
  6. Garnish with green onion, parsley, and/or sesame seeds. Enjoy immediately.

Can I make Orange Chicken on the stovetop?

You bet – I do have a recipe for making traditional orange chicken. But you will basically follow the steps here with coating the chicken. But instead of air frying it, you will fry it in a large pot of oil. Once done you can coat it with the sauce.

Air Frying Doneness Tip

Every air fryer is a bit different and they all cook at different rates – so in general, all cooking times are approximate based on the pan and temperature.

You can always cook the recipe longer if needed and reduce the heat a bit. If needed, you can tent the top if it is browning too much.

How to prevent sticking in the air fryer

Sticking can often happen when using an air fryer. I understand that most would think to add non-stick spray to the basket to prevent this. I strongly encourage you to not do that.

Non-stick spray leaves a coating that won’t come off, even when washed. Over time – this will build up and cause smoking when you use our air fryer.

I also do not recommend putting down a sheet of foil. The idea behind air frying is to allow the air to circulate around the food.

This is why the basket or tray has holes in it. If you put foil down – this prevents the air from reaching all of the areas it needs to in order for it to cook properly.

Instead – I recommend spraying the basket with olive oil using this spray bottle. You can line the air fryer with perforated parchment paper.

Or you can use one of these really great silicone liners that still allow for airflow but are reusable and easily cleanable.

Notes

I don’t usually have a problem with sticking in my air fryer, but if you do— line the air fryer basket with parchment paper liner MADE FOR AIR FRYERS WITH PERFORATIONS before you add the chicken.

Can I use all-purpose flour instead of corn starch?

Yes! Flour is a wonderful substitute for corn starch as it has starch in it already. Keep in mind that the flour won’t crisp as nicely as the cornstarch – so you might have to cook a bit longer to get the desired crispiness.

What do you serve with orange chicken?

Orange chicken can be served with white rice and steamed vegetables for a complete meal. Other possible sides include noodles, salads, or stir-fried vegetables. Here are a few other recipes we like to serve with this chicken.

How can I make this recipe low carb?

Instead of corn starch, you can swap it out and use NOW Psyllium Husk Powder, Viva Coconut Flour, and Bob’s Red Mill Flaxseed Meal to coat the chicken. You’ll still get crispy chicken without the added carbs.

What air fryer do you use?

We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.

But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.

Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.

But I when I started working on my second air fryer book, I wanted to change things up. I picked up this LARGE air fryer that has been wonderful. It has Touch Screen Presets plus it is XL Family Size, which is great!

  • Combine all of the ingredients in a small saucepan over medium heat.
  • Bring the mixture to a boil and reduce the heat to low.
  • Allow the sauce to thicken until it can coat the back of a spoon — about 2 minutes of simmering.
  • Set aside to cool for at least five minutes before adding to the chicken.
  • Once the chicken and sauce have cooled slightly, add them both to a large bowl and toss to combine.
  • Garnish with green onion, parsley, and/or sesame seeds. Enjoy immediately.

I do not have unsweetened chocolate. Can I substitute with semi-sweet chocolate chips instead?

Contrary to what you would initially picture as a good flavoring for ice cream, adding unsweetened chocolate capitalizes on the natural bitterness of the chocolate without over-sweetening the mix. This is key for a black forest ice cream since the black cherries will also be on the tart side. You want these flavors to pair well, requiring you to carefully control just how much sugar you would like to add to the mix.

With this being said, you can absolutely add semi-sweet chocolate to the mix if you do not have unsweetened chocolate available. Just know that you may want to reduce the amount of sugar that you add to the mix in order to compensate for the additional sweetness.

Can I use imitation vanilla for this recipe?

You can use imitation vanilla instead of real vanilla extract in this recipe. Vanilla is in high demand and short supply as of late. This means that the price is going to go up, making imitation vanilla a more economical option.

To save on the cost of real vanilla extract, I make my own vanilla at home. To do this, soak three to five vanilla beans in vodka and store the mix in a mason jar in a cool, dry place. Once the alcohol turns a rich dark brown color, it has extracted much of the vanillin from the beans, adopting its flavor. Use it as you would use ordinary vanilla extract. It does not go bad but should remain in a cool, dry place for the duration of its lifetime.

Is it unsafe to eat the raw eggs used in this recipe?

It is generally unsafe to eat raw eggs due to the presence of salmonella. However, you can enjoy this recipe safely by using pasteurized eggs instead of the normal eggs you would pick up in the store. This reduces your risk of accidentally consuming harmful microorganisms.

Can I make this recipe with other mix-ins too?

Absolutely! When adding mix-ins to this recipe, you are only limited by your imagination. Traditionally, the chocolate base of this ice cream would go great with frozen or fresh raspberries, strawberries, blackberries, and blueberries.

Just be careful about the water content in the types of fruit you add to the mix. This could make your ice cream turn out icier than desired. Alternatively, you can also experiment by adding whole chocolate chips or brownie bits to the mix for a more decadent and rich flavor.

I do not have a double boiler to melt the chocolate. Can I still make this recipe?

It is no problem if you do not have a double boiler available in your kitchen arsenal. Keep in mind that the goal of using it would be to keep the chocolate from being exposed to the direct heat that would cause it to separate into its components.

Instead of using a double boiler, you can put some water in the bottom of a saucepan, then place a metal or glass mixing bowl over the top of the pan for you to mix the chocolate in. This would achieve what you are looking for as you melt the chocolate and mix your ingredients.

How long can I store my Black Forest Ice Cream in the freezer?

You can safely store your homemade ice cream in the freezer for up to one month before it is time for you to make a new batch.

Why do I have to refrigerate the mixture before I can freeze it in the ice cream maker?

The name of the game when making good homemade ice cream is freezing your mixture as fast as possible. The reason for this is that the faster you freeze your base, the smaller the ice crystal will be throughout the mix. This will give you a much creamier and more even mixture throughout. This is why many ice cream companies will super freeze their products with liquid nitrogen.

In our case, we do not have any fancy factory machinery or liquid nitrogen on hand. However, we can achieve that creamy texture by cooling our mixture to just above freezing before we place it in the ice cream maker. You will find that though this takes some additional time, the result is well worth it!

How to Make Black Forest Ice Cream

  1. In a double boiler, melt the chocolate over hot water until smooth.
  2. Slowly add the milk, and whisk to combine.
  3. Remove from heat and cool to room temperature.
  4. Beat the eggs with an electric mixer until light and foamy, about 1 minute. Slowly add the sugar and continue mixing until blended.
  5. Add the heavy cream, vanilla, and salt, blending until combined.
  6. Stir the chocolate mixture into the cream mixture.
  7. Refrigerate for 2 hours or overnight.
  8. Pour the chilled ice cream mix into the ice cream maker and churn according to the manufacturer’s instructions.
  9. Fold the frozen cherries into the ice cream.
  10. Place the hot fudge sauce into a zip-top freezer bag with the corner snipped.
  11. Transfer the soft-serve ice cream to a freezer-safe container, layering it with ribbons of hot fudge.
  12. Drag a knife through the fudge to swirl it throughout the ice cream taking care to not over-mix.
  13. Freeze the ice cream for 4 to 6 hours before serving.

Why did my ice cream become so icy rather than smooth?

If your ice cream became icy rather than creamy and smooth, this means that the mixture froze too slowly, allowing large ice crystals to form throughout. In the future, you may want to try pre-cooling your ice cream in the refrigerator before attempting to mix it in the ice cream maker.

What is in a Squash Casserole?

This low carb squash casserole recipe features yellow squash, zucchini, heavy cream, and cheese. You can easily customize it to your liking by adding in additional vegetables or herbs. For a more substantial casserole, you could also add cooked ground beef or sausage.

Can I use my Pyrex glass 9 x 13 baking dish for this recipe?

Aside from Corning Ware, Pyrex used to be known for being one of the only glass companies that make a product you can bake with. However, most people are unaware that Pyrex changed the formulation for their glassware some time ago, affecting how well it holds up under higher temperatures.

The blessing of tempered glass is that it is typically very resilient to temperature changes and other stressors. However, the curse is that it will not just shatter, but explode if the integrity is compromised. With new Pyrex products, this was the experience of many, including my readers, when cooking at high temperatures.

My recommendation is to not use a Pyrex baking dish at temperatures that exceed 350℉. Rather, be sure to use a ceramic dish or Corning Ware instead. These images here were taken using a very old dish that dates back far beyond when the change is thought to have happened.

How long can I store my casserole in the refrigerator?

Provided you did not allow your casserole to sit at room temperature when serving, you can store it in the refrigerator for up to 4 days before you would want to make another batch.

Allowing hot or cold foods to sit at room temperature increases the initial number of microbes in the food when you place it in the refrigerator. Though the cool temperature of the refrigerator slows the growth of microbes, they will continue to proliferate. Starting with more microbes means that their numbers can reach unsafe levels sooner, despite refrigeration. Thus, it is best to not leave food out for more than an hour.

Outside of the squash and zucchini, can I substitute fresh ingredients like the onion or garlic for dried or prepared ingredients?

For convenience, it is okay to substitute fresh ingredients for dried or prepared ingredients. However, it is best to avoid doing this with the onion just because the additional juices and flavor that come with a fresh onion cannot be replaced with dried alternatives. However, using minced garlic instead of granulated or fresh garlic is a perfectly acceptable substitute.

Can I substitute the parmesan in this recipe for other types of cheese?

You could substitute the parmesan cheese with another cheese of your choice when making this recipe. Know that you may find more success with hard cheeses like cheddar or provolone rather than soft cheeses like gouda and mozzarella.

This is because your vegetables will introduce a great deal of water to your recipe as they cook. Soft cheeses are more likely to capture this water and make the casserole soggy while hard cheeses will resist this effect.

Do I have to use both summer squash and zucchini for this recipe? Can I just use one or the other?

You do not need to use both summer squash and zucchini for this recipe. Often, people will only have one of these on hand at a time. Unless you intend to halve the recipe, be sure to double the amount of whichever vegetable you use.

My sauce became lumpy during the thickening process. What happened?

If your sauce became lumpy, this is because it lost too much water too fast during the reduction process causing the heavy cream and cheese to curdle.

To fix this, reduce the heat and allow the mixture to cool just a little. Then, add additional heavy cream in ½ cup increments and mix until the lumps are gone. This will make a little more sauce than you intended, but it will save the recipe and prevent you from having to waste all of your ingredients.

What goes well with this side dish?

I find that this recipe goes well with a wide variety of foods. However, I love to pair the sweetness of the vegetables and the flavor of the parmesan with my best Grilled Boneless Chicken Thighs or my favorite Garlic Butter Filet Mignon. This recipe goes a long way to creating a classy, delicious, and beautiful addition to your favorite main dishes.

Should I use salted or unsalted butter?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use unsalted butter.

I usually use whatever I have on hand because when I’m busy preparing for the holidays, I really don’t care about what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.

What does it mean to cook the vegetables until they are “crisp-tender?”

When cooking vegetables, you must be careful to strike a balance between softening the vegetables without leaving them limp and without form.

What this recipe means by cooking until the zucchini and squash are crisp-tender is that they should be soft enough for you to easily poke through them with a fork, but crisp enough to not droop when you pick them up.

This is important because you do not want to overcook your vegetables when you place them in the oven for the final step of this recipe.

Is it best to grill the corn with or without the husk?

It is all in the type of flavor you are looking for. If you would like your corn to be steamed and take on only a hint of the barbecue flavor, you may really enjoy this recipe unshucked.

However, those who grill their corn without the husks prefer to see the grill marks on their corn, less of a steamed texture, and more of the barbecue flavor. Feel free to experiment and see what you and your family like most! You may encounter new ways to enjoy backyard classics like this one.

What seasonings go well with grilled corn?

I find that a salt and pepper base is always a good start. However, you might enjoy adding a dash of paprika or garlic salt when the cobs are finished on the grill. You can even try adding your favorite steak or meat seasonings like Montreal seasoning to try new flavors.

What is the purpose of soaking the unshucked corn for so long before grilling?

Corn, like most veggies, will dehydrate very fast and burn when exposed to the direct heat of a barbecue. Covering it with foil or leaving the husks on helps with this issue, but it is not perfect. In the case of leaving the husks on, we soak them in water so they are hydrated enough to not burn while on the grill and to steam the corn inside. 

If you find that soaking the corn will be too time-consuming, wrapping the cobs in foil will achieve a comparable effect.

Can I make my own herb butter to use on my grilled corn?

Yes! Be sure to try my Italian Garlic Butter recipe to pair with your grilled corn. The good news about this recipe is that if you end up with extra, it makes a great pairing with some dinner rolls or your favorite filet mignon too.

  1. Preheat the grill to medium-high heat, 350-375 degrees F.
  2. Clean the corn by removing all husks and silks.

  4. Generously brush the corn with olive oil.

  6. Roll the corn in the foil.
  7. Place the wrapped corn on the grill.
  8. Cook for 15-20 minutes, turning frequently to prevent the corn from burning.

Can I make this recipe in the smoker?

Absolutely! To get more of a smoky flavor in your grilled corn, choose your favorite pellets or wood chips and set your smoker to 230℉.

You will want to leave the husks on the corn with this cooking method to ensure that the smoking process does not dehydrate your corn. Once you place the cobs on the grill, cook them for about 20-30 minutes, or until it reaches your desired doneness.

What goes well with grilled corn?

I find that some of the best recipes to pair with grilled corn on the cob include the buttery and rich meats complete with a tangy, spicy barbecue sauce. These include my famous Smoked Baby Back Ribs, saucy Pork Belly Burnt Ends, or tender Smoked Beef Brisket. The goal is to marry more savory flavors with the sweetness of the corn, complete with flavorful garlic butter.

How long can I store my grilled corn in the refrigerator?

Assuming you didn’t leave it out for an extended period of time after cooking, your grilled corn will be good to eat for 3 to 4 days before it is time to grill another batch.

Keep in mind that it is best to either consume or refrigerate hot or cold food within an hour of finishing the cooking process. This will limit the amount of time your food sits at the perfect temperature for microbes to proliferate.

How do I know when the corn is done grilling?

Unfortunately, how long you cook the corn and knowing when it is done depends on personal preference, the grill, and how you are cooking the corn. This means that practice will be key to cooking your corn just right. 

I find that the best way to tell if your corn is done is to poke a kernel with a toothpick or knife. The kernels should be firm but slightly tender. I personally prefer my corn to be a little more firm but feel free to go softer if you would like.

  3. Secure the husks back with twine, if desired.

We love strawberries in this house. A few years back I made this strawberry cake with a strawberry buttercream frosting. It was such a hit!

But I don’t always want or need to make a large, 2-layer cake. Sometimes I just want some cupcakes. So I whipped up these delicious little gems with some fresh strawberry chunks.

Then, because I already had a strawberry buttercream frosting, I decided to make these with a strawberry cream cheese frosting that was definitely a new favorite here. I know you’ll love these as much as we do.

Here are some commonly asked questions

How should I store the cupcakes?

You can store the unfrosted cupcakes in an airtight container at room temperature for up to 4 days. Once they are frosted, I recommend refrigeration because of the butter and dairy in the frosting.

Keep in mind that if you decide to add decorations such as sanding sugar or nonpareils – the colors will bleed when stored in a moist place like the fridge. Decorations such as jimmies should hold up fine to refrigeration.

Is food coloring unhealthy?

Not necessarily. Food coloring itself is not unhealthy. Some people have medical conditions and allergies that are agitated by food coloring. Additionally, some studies suggest that certain food dyes can lead to hyperactivity in children but the correlation between the two is somewhat murky.

Some people would rather not consume too much food coloring to reduce the number of dyes they ingest. There are many plant-based alternatives to artificial food dyes available for sale on the web. For example, some companies will use beet juice as a natural alternative to red dyes. Be sure to do your homework to find a product that best suits your interest. There are so many out there!

Should I use liquid, gel, or powdered food coloring in this recipe?

For this recipe, the type of food coloring you decide to use is interchangeable. Typically, liquid food coloring contains a bit of water and can make your batter runnier if used in excess. In situations where your recipe is moisture sensitive, powdered food coloring will be best.

You can also use gel food coloring – adjusting the amount to your desired shade. For this recipe, feel free to use what you are comfortable with.

Can I use frozen strawberries?

Yes, absolutely, that will work just fine. Just be sure to thaw them & pat them dry before using.

How do I store strawberry cream cheese frosting?

Cream cheese frosting can be stored in an airtight container in the fridge for up to 2 weeks. Simply let it come to room temperature before using it.

Can I freeze strawberry cream cheese frosting?

Yes, you can freeze this cream cheese frosting. Simply place it in an airtight container and store it in the freezer for up to 3 months. Thaw it overnight in the fridge before using it.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

My frosting is runny. How do I fix it?

Runny frosting can be a frustrating development when you are trying to complete your cake recipe. If you find that your frosting is runny, simply try adding more confectioner’s sugar to the mix. This will allow for the absorption of more oils and moisture throughout the mix, giving it a thicker consistency.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

Cupcakes

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Place the butter and sugar into a mixing bowl and beat together until creamy.
  3. Once the mixture is creamy, add in the eggs and extracts. Mix until well combined.
  4. Continue by adding the vegetable oil and milk.
  5. Once mixed, add in the baking powder and salt. Mix until fully incorporated.
  6. Slowly add the flour in ½ cup increments until all the flour is fully incorporated into the batter.
  7. Fold the chopped strawberries into the batter.
  8. In a muffin pan lined with cupcake liners, fill each liner 2/3 of the way full of batter.
  9. Place the pan in the oven and allow to bake for 18-20 minutes or until a toothpick comes out clean.
  10. Once fully baked, remove from the oven and allow to cool.
  11. While the cupcakes are cooling, prepare the frosting.

How to Make Strawberry Cream Cheese Frosting

  1. In a mixing bowl, combine the cream cheese and butter. Beat until smooth and creamy.
  2. Add in the extracts and mix.
  3. Next, add in the confectioner’s sugar in ½ cup increments until all of it is fully incorporated.
  4. If you wish to add food coloring, place in the desired amount, and mix until the frosting is streak-free.

Decorate

  1. Place the frosting into a piping bag prepared with your desired tip.
  2. Pipe the frosting onto each cupcake.
  3. Top each cupcake with a fresh strawberry half and serve.

NOTES

  • It is very important that all the butter and cream cheese is at room temperature, I would recommend setting it out 3-4 hours before starting the recipe.
  • Store in an air-tight container in the refrigerator for up to 5 days.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Does it matter if I use salted instead of unsalted butter in this recipe?

This is really a personal preference. If you are happy with just a little salt to cut the sweetness, then use unsalted butter.

I usually use whatever I have on hand because when I’m busy preparing for the holidays, I really don’t care about what butter I have. But I typically keep salted butter on hand & I love that little bit of extra salt with the sweet in this recipe.

Can I use imitation vanilla for this recipe?

You can use imitation vanilla instead of real vanilla extract in this recipe. Vanilla is in high demand and short supply as of late. This means that the price is going to go up, making imitation vanilla a more economical option.

To save on the cost of real vanilla extract, I make my own vanilla at home. To do this, soak three to five vanilla beans in vodka and store the mix in a mason jar in a cool, dry place.

Once the alcohol turns a rich dark brown color, it has extracted much of the vanillin from the beans, adopting their flavor. Use it as you would use ordinary vanilla extract. It does not go bad but should remain in a cool, dry place for the duration of its lifetime.

What does it mean to cream the butter and sugar together?

Creaming butter and sugar together is key to getting giving structure to your dough so that a cookie is light and fluffy. This is because you are incorporating air into the mix when you beat the butter.

When creaming your butter and sugar together, it is important to make sure that you start with soft butter. Add the butter and sugar to the mixing bowl and mix on medium speed for 2-3 minutes. You want to make sure that you stop when you get firm peaks. Be careful not to overmix because you will end up with an oily mix that fails to incorporate the air you need to make this recipe.

Why should I be careful to not overmix wet and dry ingredients together?

Note that at this phase of the recipe, we have already creamed our butter and sugar together and we are now adding the remainder of our dry ingredients. We want to be careful not to overmix because we just incorporated those valuable microscopic air bubbles into our butter to get that light, fluffy mix. If we were to overmix, we would get a more oily mixture that loses all of those air bubbles we worked so hard for. This will lead to flat, dense cookies.

  1. Preheat the oven to 350 degrees F.
  2. Line baking sheets with parchment paper or a silicone mat. Set aside.

Why do I need to pack my brown sugar when measuring?

Packing your brown sugar is crucial for making consistent measurements. If you do not pack your brown sugar, you are leaving little air pockets in your measuring cup that will reduce the true amount of brown sugar you are adding to the recipe.

These pockets are never uniform, meaning that scooping without packing will add a different quantity each time. Thus, one should always pack their brown sugar when measuring – even if the recipe does not call for it.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work in this recipe.

These chocolate chip cookies can be stored in an airtight container at room temperature for up to 1 week. Marinating the asparagus will allow the flavor of the olive oil and the garlic to marry with the asparagus. Bear in mind that asparagus has very high water content, making it difficult for these flavors to integrate into the fibers by other methods like brushing on the oil and garlic.

You will find that taking the additional 30 minutes to marinate your asparagus will make all the difference in getting the most flavor and retaining the most moisture when grilling.

Can I add seasonings to my asparagus marinade?

Adding seasonings to your asparagus marinade is key to making this recipe your own. Dry ingredients will do best for this recipe. Try adding spices like seasoned salt, Montreal seasoning, or your favorite rub to the mix for a unique flavor.

How do I know when my grilled asparagus is done cooking?

You are going for doneness where the asparagus spears are fork-tender. This means that when you push a fork through one of the spears, it should go through with only some resistance. This means that they are not limp and falling apart as you poke them with the fork. Rather, they hold together and do not disintegrate when you pick them up by one end.

What type of main dish does this recipe go with the best?

Grilled asparagus is a very diverse side dish, finding a place in both your humble backyard barbecue with friends and neighbors and a more upscale meal for date night.

I personally prefer to serve this recipe alongside a delicious Smoked Tri-Tip Roast or our favorite Grilled Pork Chops.

However, this recipe will also go well with your best wild-caught salmon or my Easy BBQ Beef Brisket. Don’t be afraid to experiment and see what combination works best for you.

This recipe calls for water-soaked skewers, can I just use my stainless steel ones?

Absolutely! Metal skewers will make it much easier for you to grill your asparagus without worrying about the wood catching fire in the process. Though the wooden skewers will likely give you a smoky flavor, will also burn your asparagus and ruin the recipe if they catch fire.

Is there a way I can grill asparagus so that they are less likely to char?

If you prefer to cook your asparagus with no charring, you can wrap them in a foil packet after they are finished marinating and place them on the grill in that one package. This will not only deflect any flames from directly contacting the outside of the spears but give them more of a steamed texture.

How to Make Grilled Asparagus

  1. Trim the asparagus spears
  2. Take wooden skewers that have been soaked in water and pierce them through the sides of the spears – lining several of them along the skewer. This will keep them from falling through the grates of the grill. (see photos)
  3. Place the prepared spears along with the olive oil and minced garlic in a zip-top bag. Close and shake to coat the spears evenly.
  4. Refrigerate for 30 minutes (or longer if desired) to let the flavors marinate the spears.

Gas Grill

  1. Preheat the BBQ to 400 degrees. Turn off one side of the BBQ – we will be cooking these on the no-flame side for indirect heat. If using a pellet grill/ smoker – you can just leave it at the 400-degree setting.
  2. Place spears across the grill grates so they don’t fall through and cook until slightly soft, turning occasionally. Remember to use the side without flame if using a gas grill.
  3. Sprinkle with sea salt prior to serving if desired.

Charcoal Grill

  1. Prepare a two-zone fire by lighting a full chimney of charcoal, or build up a stack of approximately 100 briquets and prepare a two-zone fire. The heat should be medium-high, meaning you can comfortably hold your hand above the coals for five to six seconds. Place the grill grate back on.
  2. Set your asparagus on the hot side of the grill, perpendicular to the grates, so they don’t fall through (use soaked wooden skewers or a grilling basket if desired).
  3. Grill 4 to 5 minutes, turning frequently, until fork tender and slightly charred. Thinner spears cook in 2 to 3 minutes. If the asparagus becomes too black, simply transfer them to the cool side of the grill and continue to cook until they are done.

Notes

Alternate method – wrap the oiled and seasoned spears in foil and place the foil packets directly on the grill. This will give them more of a steamed texture – still quite delicious.

Why must you grill asparagus over indirect heat?

Like most plants with high water content, asparagus will begin to wilt and char very quickly when placed directly over a flame. We are trying to go for tender doneness that has limited charring on the outside of the spears.

Cooking over indirect heat allows you to more easily strike the balance between getting that barbecued flavor without burning or drying your asparagus.

For a charcoal grill, what is a two-zone fire?

A two-zone fire is when you organize your charcoal for there to be a hot zone and a cool zone in your grill. This is important for controlling the amount of direct heat your food will get during the grilling process.

To set up a two-zone fire, prepare your charcoal and organize it so that it covers one-half to two-thirds of one side of the bottom of the grill. The remaining space will stay empty. This will allow you to have a fire on one side of the grill and another space where you can move your food to cook over indirect heat as needed.

Equipment

Ingredients

  • 1 lb fresh asparagus
  • 3 tbsp minced garlic or granulated garlic
  • 6 tbsp olive oil
  • flaked sea salt

Instructions

  • Trim the asparagus spears
  • Take wooden skewers that have been soaked in water and pierce them through the sides of the spears – lining several of them along the skewer. This will keep them from falling through the grates of the grill. (see photos)
  • Place the prepared spears along with the olive oil and minced garlic in a zip-top bag. Close and shake to coat the spears evenly.
  • Refrigerate for 30 minutes (or longer if desired) to let the flavors marinate the spears.

Gas Grill

  • Preheat the BBQ to 400 degrees. Turn off one side of the BBQ – we will be cooking these on the no-flame side for indirect heat. If using a pellet grill/ smoker – you can just leave it at the 400-degree setting.
  • Place spears across the grill grates so they don’t fall through and cook until slightly soft, turning occasionally. Remember to use the side without flame if using a gas grill.
  • Sprinkle with sea salt prior to serving if desired.

Charcoal Grill

  • Prepare a two-zone fire by lighting a full chimney of charcoal, or build up a stack of approximately 100 briquets and prepare a two-zone fire. The heat should be medium-high, meaning you can comfortably hold your hand above the coals for five to six seconds. Place the grill grate back on.
  • Set your asparagus on the hot side of the grill, perpendicular to the grates, so they don’t fall through (use soaked wooden skewers or a grilling basket if desired).
  • Grill 4 to 5 minutes, turning frequently, until fork tender and slightly charred. Thinner spears cook in 2 to 3 minutes. If the asparagus becomes too black, simply transfer them to the cool side of the grill and continue to cook until they are done.

Notes

Alternate method – wrap the oiled and seasoned spears in foil and place the foil packets directly on the grill. This will give them more of a steamed texture – still quite delicious.

How should I store the cupcakes?

You can store the unfrosted cupcakes in an airtight container at room temperature for up to 4 days. Once they are frosted, I recommend refrigeration because of the butter and dairy in the frosting.

Keep in mind that if you are using sanding sugar or nonpareils for your sprinkles – the colors will bleed when stored in a moist place like the fridge. The jimmies and star sprinkles should hold up fine to refrigeration.

Why does this recipe call for sour cream?

Though it seems kind of weird to put sour cream in a cake recipe, there are a couple of benefits that make it completely worth it! One reason one would want to use sour cream in their cake recipe is that the fat and whey content encourages moisture retention in the batter during the baking process. This leaves you with that moist cake that everyone strives for when making good cupcakes.

An additional reason is that the sour cream reacts well with the baking soda in the batter. This allows the batter to rise faster, giving you a lighter, fluffier final product.

What is the point of adding egg whites rather than the whole egg?

Adding egg whites rather than the whole egg is key to getting a white cake instead of a yellow cake. Though the yolk would add a richer flavor to your cake, the whites are the part that contains the fats and emulsifiers that allow for evenly blending ingredients in the batter and a softer final product.

Is food coloring unhealthy?

Not necessarily. Food coloring itself is not unhealthy. Some people have medical conditions and allergies that are agitated by food coloring. Additionally, some studies suggest that certain food dyes can lead to hyperactivity in children but the correlation between the two is somewhat murky.

Some people would rather not consume too much food coloring to reduce the number of dyes they ingest. There are many plant-based alternatives to artificial food dyes available for sale on the web. For example, some companies will use beet juice as a natural alternative to red dyes. Be sure to do your homework to find a product that best suits your interest. There are so many out there!

To save some time, just use store-bought frosting. You can use 3 whole eggs rather than the 4 egg whites, but the cake won’t be as white.

Can I freeze buttercream frosting?

Yes, you can freeze buttercream frosting. Simply place it in an airtight container and store it in the freezer for up to 3 months. Thaw it overnight in the fridge before using it.

How to Make Fourth of July Cupcakes

Cupcakes

  1. Preheat the oven to 350°F.
  2. Place 12 cupcake liners into cupcake tins. Set aside.
  3. In the bowl of a stand or hand mixer, combine the cake mix, sour cream, oil, water, egg whites, and vanilla extract. Mix on low speed for 30 seconds, then scrape the edges of the bowl. Beat on medium speed for 2 minutes longer, scraping the edges when necessary, until well combined.
  4. Divide the batter into 3 medium bowls (about 1 cup each).
  5. Add red food coloring to one bowl, mixing well after each drop or two, until the batter is your desired shade of red (we did about 8-9 drops total). Repeat with another bowl and the blue coloring (we did about 6 drops total). Do not put any food coloring into the third bowl of batter.
  6. If you want cupcakes with blue on top, start by spooning 1 tablespoon of red batter into the bottom of the cupcake liners; spread evenly. Next, spoon 1 tablespoon of white batter on top of the red; spread evenly so that no red batter can be seen underneath. Lastly, spoon 1 tablespoon of blue batter; spread evenly so no white batter can be seen. The cupcake liners should be about ⅔ full. Do the opposite of this process if you want cupcakes with red on top.
  7. Bake the cupcakes for 18-20 minutes or until an inserted toothpick comes out clean. Before adding frosting, make sure that the cupcakes are completely cooled.

Frosting

  1. Whip the butter using an electric mixer until it is lighter in color and the consistency is slightly fluffy (about 1-2 minutes).
  2. Add the confectioner’s sugar and salt. Beat for 1 minute until well combined and scrape the sides of the bowl halfway through mixing.
  3. Add the vanilla and 3 tablespoons of the cream and beat for 1 minute. Slowly add more cream, if needed, to achieve the desired consistency. Whip for another minute or so until light and fluffy.

Decorating

  1. Spread or pipe the frosting onto the cupcakes. Sprinkle tops with the sanding sugar and serve.

I do not have a mixer. Can I still make this frosting?

You can! Just know that this will take considerably more time and effort to get it to the right consistency.

To make this frosting by hand, a large bowl and wooden spoon will do the trick. Be sure that your butter is extra soft to cut back on the amount of work you must put into adequately blending your ingredients.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to make the recipe for the butter to soften but not get too soft.

Should I use liquid or powdered food coloring in this recipe?

For this recipe, the type of food coloring you decide to use is interchangeable. Typically, liquid food coloring contains a bit of water and can make your batter runnier if used in excess. In situations where your recipe is moisture sensitive, powdered food coloring will be best.

You can also use gel food coloring – adjusting the amount to your desired shade. For this recipe, feel free to use what you are comfortable with.

Can I use imitation vanilla for this recipe?

You can use imitation vanilla instead of real vanilla extract in this recipe. Vanilla is in high demand and short supply as of late. This means that the price is going to go up, making imitation vanilla a more economical option.

To save on the cost of real vanilla extract, I make my own vanilla at home. To do this, soak three to five vanilla beans in vodka in a mason jar and store the jar in a cool, dry, and dark place. Once the alcohol turns a rich dark brown color, it has extracted much of the vanillin from the beans, adopting its flavor. Use it as you would use ordinary vanilla extract. It does not go bad but should remain in a cool, dry place for the duration of its lifetime.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

Will using milk instead of heavy cream change the way that the frosting turns out?

Being that heavy cream has a much higher fat content than milk, you will notice that your frosting is less creamy and thick when making this substitution. However, the difference can be subtle. You should avoid trying to balance the difference in fat content by adding more butter since you will also be adding more oils to the mix, potentially making your frosting runny.

My frosting is runny. How do I fix it?

Runny frosting can be a frustrating development when you are trying to complete your cake recipe. If you find that your frosting is runny, simply try adding more confectioner’s sugar to the mix. This will allow for the absorption of more oils and moisture throughout the mix, giving it a thicker consistency.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

Can I make these cupcakes without cake mix?

You bet! I have a great homemade vanilla cupcake recipe that you can use as the base for these cupcakes. Once you have the batter mixed – then follow the steps below for separating and tinting to make the colors before baking. You can also try the multi-colored frosting method included in that recipe post.

Tips:

  • Use a toothpick to more easily spread the layers in the cupcake liners.
  • Do not overcook the cupcakes, as this can make the blue tops turn green.
  • Be sure to get all of the batter out of the bowl when dividing. All of the batter will be needed to create even layers.
  • The listed amount of food coloring is how much I used, but add as much as you want for your desired color.

What’s The Secret To Moist Cupcakes?

The key to moist, fluffy cupcakes is to create air bubbles in the batter that expand during baking. You’ll wind up with dense, heavy cupcakes if you overmix your batter. Always use a low speed when mixing and stop just before all of the components are combined.

  • 15.25 ounces white cake mix should be 1 box/package
  • ¾ cup sour cream
  • ½ cup vegetable oil
  • ½ cup water
  • 4 egg whites
  • 1 teaspoon clear vanilla extract optional
  • red and blue liquid food coloring 8-9 red drops, 6 blue drops OR gel

Frosting

  • ½ cup butter softened
  • 3 cups confectioner’s sugar
  • ⅛ teaspoon salt
  • 1 ½ teaspoons clear vanilla extract
  • 3-4 tablespoons heavy cream or milk

Decorating

  • red and blue sanding sugar for decorating

BBQ Ranch Pasta Salad is the perfect summer side dish! It’s quick and easy to make, and it’s always a hit at gatherings.

This salad is packed with flavor, thanks to the BBQ sauce and ranch dressing. The pasta provides a filling base, while the corn and Rotel add a fresh crunch. And who can resist the addition of chicken and bacon?

We absolutely love making this pasta salad because it has all the flavors everyone loves. Chicken, Bacon, Ranch, and, of course, BBQ sauce.

Not only is this super easy to make, but doubles and triples well if you are feeding a big crowd. We also like to make this ahead of time when we go camping so we can serve it alongside our other camping favorites for the whole trip.

What does it mean to cook your pasta “al dente.”

The literal translation of al dente means “to the tooth.” When a recipe calls for you to cook your pasta “al dente,” all it means is that you want to ensure that your pasta is soft but still chewy when you take a bite.

Often, people overcook their pasta, causing it to fall apart when they start mixing-in other ingredients. Instead, pasta that is cooked al dente will hold its shape when you mix it with other components of your dish. Pasta salad in particular has more “hefty” ingredients that will pulverize your pasta as you try to mix it all together.


To know when your pasta is cooked al dente, remove one piece from the pot with a spoon, then allow it to cool. When you eat the noodle, it should not be hard – indicating that it is not raw still – but it should be chewy.

If you can easily break up the noodle with your tongue, you have cooked your pasta too long. Be very careful with this process as the difference between fully cooked al dente noodles and overcooked noodles is only a minute or two.

Know that your pasta is still cooking in the pot when you are doing this test. Thus, they are ready to come off the stove and be drained if it seems like they are close.

Why are my bacon bits overpowering my dish?

There are two types of bacon bits in the world, those that are real and those that are imposters. If your dish is overpowered by the bacon flavor, but you did not use that many bacon bits, you probably are using imitation bacon bits.

The thing about using imitation bacon bits is that they are not meat at all. Really, they are made of pieces of soy that are flavored to taste like bacon. Companies often try too hard to make their imitation bacon taste like the real deal, and overdo the flavoring, ruining many dishes you add them to.

Your best bet is to always ensure you are using real bacon bits for your recipe. It is easy to make a mistake and purchase the wrong ones since they are both unrefrigerated and sit on the shelf at the store next to one another. Always be sure to confirm the type of bacon bits you have before going through the checkout.

How should you store BBQ Bowtie Pasta Salad?

You can store BBQ Chicken Salad in the refrigerator for up to five days before you should make another batch. Remember that hot foods need to stay hot and cold foods need to stay cold. Thus, you should never allow food to sit out long enough to reach room temperature.

This time window happens to be about one hour. This is because microbes grow best in environments that are slightly above room temperature. Depending on the organism, the population can be 8 times what it was only an hour before.

Do I have to use ranch dressing from the bottle or the packet?

Either one will work just fine. The bottle of ranch dressing can be more expensive than the packet and it could be harder to ensure that you have enough for a recipe. That is why I prefer to use the packet. I can just make what I need, then be done with it.

That being said – you can always make your own using my favorite homemade ranch recipe.

  • canned corn
  • shredded cheese cheddar blend

  • ranch dressing
  • bbq sauce

  • chopped bacon or bacon bits
  • minced onions

Can I use fresh ingredients instead of those from a can?

You sure can! This recipe would go nicely with freshly diced tomatoes, green chilies, and grilled corn. It may take a bit longer to prepare fresh ingredients for this dish, but the resulting flavor would be well worth it!

Why do you use rotisserie chicken?

I love to use rotisserie chicken for recipes like this because it is already cooked and seasoned saving so much time when I need to put something together quickly. It also has the added benefit of staying moister than most other pre-cooked meat I could use in my recipes.

The only real work with using rotisserie chicken is that you need to take the time to shred it, but you would have to do that anyway if you made chicken from scratch. It is a great way to spend less time in the kitchen and more time enjoying the meal!

How long does it take to make this recipe?

Assuming that your chicken is already shredded, this recipe can be completed in about 15 to 20 minutes. The longest part of the process is cooking the noodles.

Beyond that, all of the ingredients are canned and are added simply by dumping them into the bowl and mixing them together. It is super easy!

How to Make BBQ Ranch Pasta Salad

  1. Cook the pasta to al dente, drain and transfer to a large mixing bowl.
  2. Add in the cooked chicken, corn, cheese, Rotel, ranch dressing, bbq sauce, green chiles, bacon, and onions. Toss to combine.
  3. Chill until ready to serve.

Can I include a different type of chicken in this recipe?

Absolutely! Though I personally love to use a rotisserie chicken for this recipe, there are other quick and easy ways to prepare your chicken for this dish.

My favorite alternatives are to make my Grilled Boneless Chicken Thighs or use my Best Chicken Marinade. You can also try my Oven-Baked Chicken recipe if you prefer a more hands-off way to prepare dinner.

What goes best with BBQ Bowtie Pasta Salad?

  • 12 ounces bowtie pasta
  • 3 cups cooked chicken- shredded rotisserie leftovers or cooked & shredded
  • 15 ounces canned corn
  • 2½ cups shredded cheese cheddar blend
  • 10 ounces Rotel
  • 1 cup ranch dressing
  • ¾ cup bbq sauce
  • 7 ounces diced green chiles
  • ½ cup chopped bacon or bacon bits

Instructions

  • Cook the pasta to al dente, drain and transfer to a large mixing bowl.

The recipe calls for frozen peaches. Can I use fresh peaches instead?

Frozen peaches make for the most convenient way to prepare this recipe. However, nothing beats the summer flavors that come with fresh peaches, making them a terrific addition to this recipe. Just make sure you budget extra time for cutting and peeling them, as this can be a very long process.

What type of barbecue sauce should I use?

This recipe will turn out great if you use your favorite barbecue sauce. However, if you feel like mixing it up a little, you may find that sweet sauces will do best for marrying the flavor of the peaches.

These sauces typically have a brown sugar base and caramelize when cooked. You can try this recipe with my Texas BBQ Sauce, which has that sweet brown sugar base but still has a little kick.

How best can I store and reheat Slow Cooker Barbecue Ribs?

These ribs can be stored in the refrigerator for up to four days. Be sure that you promptly refrigerate any leftovers to minimize the number of microbes that grow rapidly at room temperature. Typically, you only have about an hour before the population of microbes on your food could start to become unsafe or reduce the amount of time it can be stored in the refrigerator before it spoils.

Reheating Slow Cooker Barbecue Ribs can vary by the type of meat you used. However, both spare ribs and baby back ribs will dry out when you put them in the microwave. Be sure to add a little extra barbecue sauce before trying to reheat to avoid this issue.

Why are my slow-cooker spareribs tough?

There are a few reasons why your slow-cooker spareribs might be tough. One possibility is that you did not remove the membrane from the back of the ribs before cooking them. The membrane can make the ribs tough, so be sure to remove it before cooking.

Another possibility is that you under or overcooked the ribs. Slow-cooker ribs should be cooked on low for 6-8 hours, or on high for 3-4 hours. Any longer than that and they will start to dry out and become tough. If your ribs are tough, try cooking them for a shorter amount of time next time. With this recipe, they should be very tender when they are ready to serve.

What type of ribs go best with this recipe? Should I use spare ribs or baby back ribs?

It is all about what type of experience you are going for. Spare ribs tend to hold together well and carry a much richer flavor. But baby back ribs usually deliver that fall-off-the-bone tenderness that people typically associate with a good rib.

I personally prefer to use baby back ribs when I make this recipe because you get more of a buttery, tender flavor with that variety.

Should I use light or dark brown sugar?

Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown will work with this recipe. 
You can also make your own brown sugar with my Homemade Brown Sugar recipe.

How do you remove the membrane from the back of the ribs?

The easiest way to remove the membrane from the back of the ribs is to use a sharp knife. First, make a small incision in the membrane and then peel it away from the ribs. If you have trouble getting started, you can also use a paper towel to get a grip on the membrane. Once you have removed the membrane, your ribs will be ready to cook!

I don’t like spicy food. Can I remove some of the chili powder and cayenne?

You do not have to make these ribs spicy if you don’t want to. Many of the dry ingredients in this recipe can be substituted for others so you can change the flavor as you see fit. You can try adding some dried onions or a little rosemary to complement the tanginess of the barbecue sauce and the sweetness of the peaches.

What makes a good side dish for these Slow Cooker Barbecue Ribs?

When I have these ribs, I like to incorporate the flavors of summer with some of my fresh Sea Salt Garlic Corn, Grilled Corn Pasta Salad, or my best Macaroni Salad. These dishes are easy to prepare while you are waiting for the ribs to finish in the slow cooker and they compliment the sweetness of the peaches. How to Make Slow Cooker Barbecue Ribs

  1. Prepare the slow cooker with nonstick cooking spray or spritz with oil.
  2. Mix the chili powder, brown sugar, cumin, paprika, salt, and cayenne pepper together in a small bowl.
  3. Rub the ribs with the combined rub seasoning on all sides.
  4. Place the ribs into the slow cooker in layers with the barbecue sauce and peaches in between each layer.
  5. Place the over on the slow cooker and cook on low for 6 to 8 hours.
  6. Carefully remove the ribs and stir the sauce and peaches together.
  7. Serve the ribs with the sauce.

What slow cooker do you use?

We actually have several slow cookers that we have acquired over the years from doing this job. I have a smaller one that is great for half recipes.

But the one I use the most is this standard, no-frills slow cooker that is perfect for this particular recipe.

How can I add a smokier flavor to these ribs?

If you would like to add a little more of a smoky flavor to your ribs, you can put them on the barbecue after they have been cooked thoroughly in the slow cooker. However, this does require you to plan ahead and cut your ribs into smaller sets so that they don’t fall apart as easily when you transfer them to the barbecue.

I find that my Traeger is perfect for adding that signature smoked flavor to this recipe. If you don’t have a Traeger, you can ignite some hickory, mesquite, or applewood chips in a foil packet with small holes poked in the top for airflow. This restricts the amount of oxygen that can get to the flame, causing the wood to smolder and smoke.

Another way to add a smokier flavor would be to add a couple of drops of liquid smoke to the slow cooker before cooking. This gives a great “from the bbq” flavor that will be just what you are looking for.

Yes, they can! To make them in the air fryer – Place the filled pies in the air fryer basket and at 375F until golden brown– about 5 minutes. Repeat with the remaining hand pies that didn’t fit in the basket the first round.

What are some other fillings for hand pies?

In addition to blueberries, other popular fruit fillings for hand pies include apples, cherries, and peaches. For savory hand pies, common fillings include meat, cheese, and vegetables.

Can these be made with canned pie filling?

Yes – but because it already has a lit of liquid as the base, you might want to reduce the amount of filling you add before baking. If you over-fill them with a filling like that, they are likely to bake out and make a huge mess.

You can also use my homemade blueberry pie filling if you wish.

Can these hand pies be frozen?

For unbaked hand pies, Prepare them up to the point of needing to bake them. Freeze them on a baking sheet until solid. Transfer to an airtight container or freezer bag for storage. You don’t need to thaw them before baking, but you will have to add a few minutes to the bake time.

For baked hand pies, Allow them to cool, then transfer them to an airtight container or freezer bag. Allow them to thaw at room temperature for an hour or two before eating. If you like, you may warm them in the oven or microwave. The texture of a freshly baked pie may be different than that of one that has been frozen and defrosted.

Nope, not at all. I used the refrigerated crust just to show how easy it is to whip these together with just a handful of ingredients. But most of the time I make my famous never fail homemade pie crust and they turn out AMAZING!

  1. Preheat the oven to 400F.
  2. Line a baking sheet with parchment paper. Set aside.
  3. Lightly flour a smooth, flat work surface and unroll the crusts. Or make your dough and roll it out.
  4. Using a lightly floured 2” round cookie cutter, cut out as many circles as possible (usually 8 per crust).
  5. In a small bowl, stir together the blueberries, sugar, lemon juice, cornstarch, and lemon zest.
  6. Fill the center of half of the cutout dough with the blueberry mixture, making sure to leave a ¼” border around the edges.
  7. In a small bowl, whisk together the egg and milk until well combined.
  8. Brush the edges of the filled circles with the egg wash and place the second (unfilled) dough rounds on top.
  9. Crimp the edges of all the pies with a fork and cut a few slits in the middle of each pie.
  10. Brush the top of the pies with the egg wash.
  11. Place the pies on the prepared baking sheet and then bake the pies until golden brown– about 15-18 minutes.
  12. Enjoy while warm!
  13. Store any leftover pies in an airtight container in the fridge for up to one week.

Growing up, we didn’t dine out very often. So when we did, I wanted something special to drink. At that time there were only two drinks I would get when we would dine out. Shirley Temple and the Roy Rogers.

Both of those drinks contain grenadine – which I absolutely love, even to this day. I’m a giant child when it comes to my favorite flavors and so these drinks are still my top choice when we head out.

Who is Roy Rogers?

Roy Rogers was an American cowboy actor and singer who was extremely popular in the 1940s and 1950s. He starred in many Western films and television shows, and his songs were hits on the radio. Today, he is best known for his work in The Roy Rogers Show. He was also the namesake of the popular drink, the Roy Rogers.

Rogers was born Leonard Franklin Slye in Cincinnati, Ohio, in 1911. He moved to California with his family as a child and began appearing in western films in the 1930s. His career took off in 1938 when he starred in Under Western Stars. He went on to make over 100 movies and TV shows during his career.

In 1951, Rogers appeared on The Roy Rogers Show, which ran for six seasons. The show was extremely popular and made him a household name. He continued to appear in movies and TV shows throughout the 1950s and 1960s.

Rogers retired from acting in 1968, but he continued to make occasional public appearances until his death in 1998. He was inducted into the Country Music Hall of Fame in 1980 and the Western Performers Hall of Fame at the National Cowboy & Western Heritage Museum in Oklahoma City in 1988.

Slow Cooker Corn on the Cob is a perfect side dish for your summer BBQs with just 5 minutes of prep. An easy, no-fuss, and delicious recipe.

The easiest way to cook corn on the cob is in the slow cooker. With just a few minutes of prep and only a few hours of cooking time, you’ll have succulent, juicy, flavorful corn.

This recipe makes making corn on the cob so incredibly easy and effortless. You can toss it all in there and let it cook while you enjoy time out by the pool, taking a walk, or spending time with family. No need to mind it as you would on the stove – it is so simple.

We made this corn recipe during one camping trip to the beach. It was really great to pop it all in the cooker and go down to the water to explore a bit while part of our dinner was cooking. When we are home I usually pop it in the Instant Pot, but this was perfect for camping and the more I think of it – I’ll probably do this more at home as well.

What I really love about cooking it this way – especially when camping is that it eliminates the need for simmering a huge pot of water on the tiny little stove in the camper. Making it in the crockpot was practically effortless. We love to serve this alongside Ambrosia Salad too!

How to store leftover corn on the cob

This corn keeps well for leftovers. Just place any extras in an airtight container and keep refrigerated until ready to serve. To reheat, either microwave until hot or pop it back in the slow cooker with a little bit of water and let it cook until hot again.

Foil or no foil. 

I have heard that people do wrap the corn individually in foil along with any seasonings before placing it in the cooker. I personally don’t see the need for this other than it speeding up the cooking time by mayby 30-40 minutes.

How about the husk?

I have heard that some people will just pop the corn in there without shucking it first. Personally, I don’t like the flavor of the corn when cooking it this way. I recommend shucking the corn prior to cooking. Plus you can see if you have any portions that aren’t worth cooking beforehand.

Can You Prepare Corn On The Cob In Advance?

Yes – since this corn takes a few hours to cook anyway – you can prepare it in advance. I will sometimes get it all ready and just leave it until I’m ready to get it going. OR I’ll just cook it as directed and then switch it to the warm setting so it will stay at the perfect temperature until it is ready to serve. Be sure to drain out the excess liquid if you are going to let it sit for more than about an hour beyond the cooking time.

How Do You Keep Corn Warm For A Party?

This method here – making the corn in the slow cooker is the PERFECT way to keep the corn warm during a party. Just cook as directed and then switch the cooker to the warm setting. No-fuss – super easy. You might want to drain the liquid out of the crock so the corn isn’t getting soggy sitting in the water or milk.

  • table salt

Can I cut the corn in half?

You bet! If your cooker will fit the corn in there better if the corn is cut in half – then, by all means, you can do that. We didn’t have that many to warrant doing that when they all fit in our cooker at full size. But it is definitely an option.

You bet! If you have some frozen corn instead of fresh – you can just increase the cooking time by about 60-90 minutes. That’s it – still super simple. Just make sure to account for the added time.

These Chocolate Chip Cookies without Brown Sugar are a super easy, no-chill cookie recipe. They are super soft and chewy, with buttery edges.

Last summer we were moving – which means that we were living in a sea of boxes and most of our things were packed. But the kids wanted to make cookies and I couldn’t find some of my ingredients, including my brown sugar.

Normally I would just make more of my own homemade brown sugar, but I also couldn’t find my molasses either. So, we improvised by whipping up these super soft Chocolate Chip Cookies made without brown sugar and using a variety of chocolate chips.

My friends – what I really love about this frosting is that it tastes just like the cookie itself. Not just buttercream frosting with cookies mixed in.

By adding the whole cookie crushed into the frosting, instead of just the cookie portion (reserving the filling), it gives the base of the frosting that flavor of the filling itself. IT IS INCREDIBLE!

Here are some commonly asked questions

How much frosting does this make?

This frosting recipe should make enough to decorate 12-15 cupcakes, depending on how much you pipe on. If you are spreading it on, you could probably decorate up to 24 cupcakes.

If you want to make this recipe for a cake, this should be enough to fill an 8-9″ 3-layer cake. You will need to make at least 1-3 more batches for a crumb coat, frosting layer, and any piped decorations.

What is the best way to store leftover Oreo frosting?

Simply keep it refrigerated in an airtight container for up to 7 days. This should keep well when chilled – make sure it isn’t left out at room temperature for too long.

You can also freeze it for up to 3 months. Just make sure to thaw in the refrigerator for 24 hours prior to using again.

Can this frosting be made ahead of time?

You bet! Often when I am working on a cake, it happens in batches. I will bake the layers one day and make the frosting while they are baking.

Then the layers go in the freezer and the frosting gets refrigerated for up to 1-3 days before I even get around to decorating the cake.

Sometimes I also like to half assemble – getting to the crumb coat and then I freeze again until I am ready to add the final layer of frosting the day I plan on serving it.

What are Oreo cookies?

Oreo cookies are a classic cookie that most people have grown up with. They are chocolate cookies with a creamy filling in the middle. The cookies are then crushed and used as a topping or filling for various desserts.

Oreo Cookie History

Even though the Oreo cookie is one of the most popular cookies around, the idea of a chocolate sandwich cookie with a cream filling was actually originally created by the Sunshine Biscuits company in 1908. They called it the Hydrox – which is still around to this day.

Nabisco saw the popularity and quickly came up with their own version, with a richer chocolate flavor. It wasn’t long before its sales surpassed the Hydrox and Oreo became synonymous with the phrase “cookies and cream”.

Are Oreos the same as cookies and cream?

Basically, Oreo is the most popular brand of cookies and cream cookies.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

How to Make Oreo Frosting

  1. Place the Oreo cookies in a zip-top bag. Close the bag and use a rolling pin to crush the cookies into small pieces if you plan on piping the frosting onto a cupcake. If you plan on spreading it onto your dessert- you can leave the pieces a bit larger.
  2. Place the butter in a mixing bowl and beat well until creamy.
  3. Slowly mix in half of the confectioner’s sugar and the vanilla.
  4. Once mixed – then stir in the remaining confectioner’s sugar and the milk until well blended.
  5. Fold in the crushed cookies until completely mixed throughout.
  6. Transfer the frosting into a pastry piping bag and swirl it onto the tops of the cupcakes.
  7. Top with an Oreo cookie for decoration.

What should I do if my Oreo buttercream frosting is too thick or too thin?

Having your frosting turn out too thick or too thin can happen for a few reasons. This can be attributed to the temperature of your room, how soft the butter is, how you measured the dry ingredients, and even how long you worked the ingredients together.

Fortunately, this is a simple fix. If your frosting is too thin, just add a bit more confectioner’s sugar – little bits at a time. Use no more than 1/4 cup with each addition and try folding it in with a rubber spatula instead of a beater.

To thin the frosting – make sure it is at room temperature and then mix in 1-2 tablespoons of milk. This should be enough to thin it out – but you can add another splash or two until you achieve the desired consistency.

Can I use Oreo frosting on other desserts?

Absolutely! Oreo frosting is delicious on a variety of desserts. Try it on cookies, cake, waffles, pancakes, or even just eat it with a spoon. I won’t judge, but I might join you.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

What are Jell-O shots?

Jell-O shots are a type of alcoholic drink that is made by mixing Jell-O with alcohol.

How much alcohol should I use?

The amount of alcohol you use will depend on how strong you want your shots to be. A good rule of thumb is to start with 1/2 cup of whatever alcohol you choose and adjust from there.

We are using a full cup of combined alcohol for this recipe – but be sure to not increase beyond that as the jello won’t set if the ratios are off.

Can I make jello shots without alcohol?

Yes! If you want to make non-alcoholic jello shots, simply substitute the alcohol for water or juice.

Can I make these ahead of time?

Yes, you can make Jell-O shots up to 24 hours in advance. Simply prepare the shots as directed and store them in the fridge until you’re ready to serve.

Can jello shots be frozen?

Gelatin is the most important component of jello. Gelatin doesn’t freeze well and, if you put solid jello shots in the freezer, the gelatin may expand and destroy its form and texture. The chemical structure of gelatin is disrupted when it is frozen, causing it to crystallize and grow.

What to do if jello shots don’t set

If you use too much alcohol and not enough water, the jello shots won’t solidify correctly.

To fix – heat the liquid. The blooming of gelatin crystals will be enhanced by the heating process. You may also thicken the jello that isn’t setting by reheating it. If required, you can also add more bloomed gelatin while heating it up.

Is it possible to get intoxicated off jello shots?

You can become inebriated eventually, depending on how tolerant you are to alcohol and how many you have. The truth is that while each shot has a distinct flavor, it isn’t very strong. 1 drink is equal to approximately 4 jello shots.

How can I celebrate the 4th of July?

There are many ways to celebrate the 4th of July. Some people choose to attend patriotic parades or events, while others may enjoy a barbecue with family and friends. How to store leftover tri-tip roast

We love to have leftovers for sandwiches, salads and dinner the next night. Place them in an airtight container and keep them refrigerated for up to 4 days.

Can this recipe be doubled?

You bet! I don’t recommend trying to double this on the small camper Traeger as it really can only hold one of these. But we can fit up to 4 of them on our pro-grill Traeger making doubling, tripling, or quadrupling this recipe so easy.

Watch For The Stall

So – if you are using a thermometer throughout the smoking process, (instead of just poking and checking occasionally) you will notice something called the stall.

When the collagen in meat breaks down, the temperature will stop rising for a period of time. It’s aggravating, but every time-consuming cut of meat will have this. Brisket and pork shoulders are notorious for it.

What is Tri-Tip?

A tri-tip is a cut of beef that comes from the bottom sirloin. This particular cut is known for its rich flavor, and when smoked, it takes on a delicious smoky taste that will have your mouth watering.

Because it is a leaner cut of meat, it is important not to overcook it, as it can become tough. When cooked correctly, however, tri-tip is an incredibly flavorful and juicy piece of meat.

DON’T LIFT THE LID

Your smoker is just like your oven – if you open the lid or open the door repeatedly then you are letting the heat out. Each time you do that you add cold air in and the smoker just has to work that much harder to get back up to temp so it can continue to cook at the proper temp.

This just makes the meat cook that much slower. So just leave the lid closed, rely on your thermometer, and be patient!

What Wood Is Best For Smoked Tri-Tip?

Feel free to use any flavor pellets you like. We prefer hickory, applewood, pecan, or cherry wood.

Beef Roast on the Smoker

Should I wrap the meat?

We aren’t wrapping for this recipe until we get to the middle part of this recipe. I don’t recommend going without the wrap for the entirety of the cooking process for this roast.

Basically wrapping helps to get through the stall faster. Wrapping is sometimes referred to in BBQ circles as the “Texas crutch,” since it helps you get over the stall hump.

So if you forgot to get things going earlier in the day or just have a bit less time to be patient – wrapping is the way to go.

The meat can take longer to cook without being wrapped, as well as lose moisture over time. The moisture in the meat is trapped when it’s wrapped.

Do I need to spritz?

There’s no need to spritz the meat while it’s smoking, but you may if you want to. Spraying the beef with apple juice or apple cider vinegar every 45 minutes to an hour will keep it moist and allow for a little more smoke to stick.

Simply fill a clean spray bottle with apple juice or apple cider vinegar and spray the meat every 45 minutes. You can also use bourbon for added flavor.

You can also just place a small heat-safe bowl filled with your liquid of choice inside the smoker while the meat is cooking.

What Traeger model is needed for this recipe?

I would say that most standing Traeger models can handle a whole lot of meat. We have the Pro 34 in blue & we take out the swinging rack from the lid when we make large things like a turkey – but I don’t think that is necessary for this beef roast. We have even made this recipe on our portable Ranger model that we use for camping and it had enough space.

How to Make Smoked Tri-Tip Roast

  1. Preheat the smoker to 250 degrees with the lid closed. Prepare the meat while the smoker is heating.
  2. Place a heat-safe bowl of bourbon or apple cider vinegar inside the smoker – off to the side so it is out of the way.
  3. If your butcher hasn’t already – begin by trimming any excess fat and silver skin from the roast. Place on a tray lined with foil for seasoning.
  4. Rub the butter or tallow all over the outside of the roast.
  5. In a small bowl, combine the rub ingredients – coffee grounds, granulated garlic, coarse salt, onion powder, black pepper, and chili powder. Stir.
  6. Liberally add the rub to the roast, patting it down onto the butter.
  7. Place the roast on the preheated smoker. If you just lift it by the foil and set it along with the foil on the smoker – this is the easiest way. Be sure to leave the foil open for now – do not wrap.
  8. Close the lid and let it smoke until it reaches 165 degrees internal temperature. You should have a beautiful bark that has formed on the outside. This should take about 3-4 hours.
  9. Once the roast has reached 165 degrees inside, pull the sides of the foil around the roast to cover it. You may need to add another piece on top to completely cover it. You don’t want any steam or heat escaping at this point. Do this carefully as it will be quite hot. Leave the temperature probe sticking out of the foil.
  10. Cook until the temperature reaches 205 degrees – approximately another 2 hours.
  11. Remove from the smother and unwrap the roast. Gently tent it with foil and let it rest for another 30 minutes before slicing and serving.

Do you flip tri-tip when smoking it?

It is not necessary to flip tri-tip when smoking it, as the meat will cook evenly all the way around.

When we lived in the city we would pick up donuts almost every Saturday morning. Then when Uber eats became a thing – there was never a weekend when we didn’t have donuts on hand for breakfast.

Now that we are out of the city, we don’t have a donut shop within 100 miles – so we are making our own. My daughter loves the old-fashioned variety, while I prefer cake and the hubs loves fritters.

Sour cream donuts are made with sour cream in the batter, which gives them a delicious tang. Regular donuts are usually made with milk or buttermilk.

Why is it called an old-fashioned donut?

Old fashioned sour cream donuts are called old fashioned because they’re made with sour cream instead of milk or buttermilk. This gives them a delicious tang that sets them apart from other types of donuts.

Plus, they’re the perfect size for a quick breakfast or snack.

Why do the ingredients need to be at room temperature?

Room temperature ingredients help to ensure that everything blends together perfectly. You don’t want any pockets of unblended butter. You want everything evenly disbursed for the perfect texture.

When your dairy products are at room temperature, they can create an emulsion. It’s essential to have an emulsion because air gets trapped, so the baked goods expand and get fluffy as it bakes.

How to Make Old Fashioned Sour Cream Donuts

  1. In a medium bowl, whisk together the cake flour, baking powder, salt and nutmeg.
  2. In a large mixing bowl or bowl of a stand mixer, cream together the butter and sugar until it becomes a sand-like consistency, about 1 minute.
  3. Add the egg yolks and beat until well combined, scrape down the sides of the bowl.
  4. Add the dry ingredients in 3 additions, mixing on low, just until combined, alternate with sour cream and scraping down the sides of the bowl in between additions.
  5. The dough should be smooth and slightly sticky. If it’s too sticky, mix in 1 more tablespoon of cake flour.
  6. Cover bowl with plastic wrap and chill in the refrigerator for at least 1 hour or until firm. This could vary depending on the temperature of your room while mixing the dough.
  7. On a floured surface, roll the dough out to ½ inch thick.
  8. Use a donut cutter with a hole in the center, dip it in flour before each cut to prevent sticking and cut out the donuts.
  9. Place the cut dough on a parchment-lined baking sheet and place it in the refrigerator while the oil is heating. The dough should be slightly cold before frying.
  10. To fry the donuts, add 2-3 inches of oil into a heavy-bottomed pan or large Dutch oven heated to 325 degrees F. (this is easiest when using a thermometer attached to the side of the pot)
  11. Fry the donuts a few at a time for 2-3 minutes on each side, depending on the size of your pan.
  12. Be sure to keep an eye on the thermometer and adjust the stove temperature if needed.
  13. Remove the donuts from the pan when they are golden brown and place them on a wire rack to drain.

Glaze

Do I have to use cake flour?

In short- yes. Light and delicate donuts similar to those from the bakery can be made with purchased cake flour.

Homemade cake flour replacements don’t really work, and all-purpose flour will not produce donuts with the same delicate texture as what you get with commercially-made cake flour.

When you use unbleached flour, the donuts won’t absorb as much moisture, resulting in crumbling cakes when fried.

Do I have to fry this recipe?

Yes – this dough must be fried. This recipe will not yield the proper results when baked. Some have tried it in an air fryer with success. I can’t attest to the texture of the air fried donuts nor can I tell you how much time you would need to cook them for. I have not tried it yet.

Also – be sure to use fresh oil. Don’t try to reuse oil from chicken or french fries or tortillas. That oil will have remnants of flavor from those other things you cooked in there. Plus – oil from cooking things like chicken should always be discarded after one use anyway.

Don’t forget to fry up those donut holes too!

Do I really have to chill the dough?

Yes – please don’t skip this part. Chilling the dough is essential to the dough being at the right temperature when it hits the oil – making the perfect texture when done cooking.

How to soften the butter to room temperature?

First

There are a couple of ways to do this. The first being that you can take the butter (& any other ingredients that need to be at room temperature) out, leave it on the counter for about 30 minutes while you prep for baking.

I usually start with all my chilled ingredients and pull everything I need out onto the counter before getting started – so I know for sure I have everything before I’m mid-way through I realize I’m out of something.

But sometimes it’s winter and that isn’t enough time to get the ingredients warmed up – OR – I’m just not that organized to plan ahead. It happens. So I have another couple of tricks.

Second

I place the butter in the microwave – wrapped in the paper. (don’t do this if it is wrapped in foil) Then I microwave for 2 seconds – flip – go another 2 seconds – flip again – and continue for 2 seconds on each side.

This is usually enough to get it perfect – sometimes stopping before if it feels soft enough. Take care when doing this method – overly softened butter from the microwave WILL ALTER the end result of the recipe. Don’t over-do it.

Third

My third method is to place the wrapped butter sticks in a zip-top bag and place it in a bowl of warm water. I do this with the eggs too. If the water isn’t too hot it can be THE PERFECT way to get “room-temperature” ingredients.

Poutine is a popular snack in Canada. It consists of french fries, gravy, and cheese curds and is often served with a side of meat, such as chicken or beef.

Have you ever had poutine before? Growing up in So Cal, it wasn’t on my radar. But then we moved up here to Northern Idaho and being that we are a stones-throw from Canada – it is everywhere up here.

Can this be made with pre-made french fries?

You bet! If you would like to use the pre-made frozen french fries for this – that will work just fine. Prepare them to the package directions and then add the gravy and cheese curds.

What cheese to use for poutine?

It’s all about the cheese curds with poutine. A “real” poutine is made with real cheese curds, which are what distinguish it from other dishes called “poutine.”

Cheese curds are solid chunks of curdled milk that can be eaten as a snack or added to fries and gravy to make poutine.

There are two kinds of curds: yellow and white. White cheese curds are the ones you’re looking for in poutine.

Poutine is pronounced, “poo-teen.” The word comes from the Quebec French slang for “mess” or “disorder.” Poutine is a delicious, indulgent snack made up of three simple ingredients: French fries, cheese curds, and gravy.

Homemade Poutine Ingredients

For the fries:

  • russet potatoes
  • kosher salt
  • Peanut oil for frying

For the gravy:

  • unsalted butter
  • all-purpose flour
  • garlic powder
  • onion powder
  • kosher salt
  • black pepper
  • low-sodium beef stock
  • unsalted chicken stock

For assembly:

  • cheese curds

How to Make Poutine

  1. Wash the potatoes and peel them if desired, I like to keep the skin on.
  2. Cut into ½ inch planks of potato. Cut them down into sticks, again at ½ inch.
  3. Place them into cold water until ready to fry.
  4. Add the peanut oil or your favorite cooking oil to a deep fryer or to a large dutch oven, the oil should go about 5 inches up the side of the pot. Heat to 325°F.
  5. Once at temperature, take the potatoes out of the water and pat them dry. It is very important the potatoes are dry so the oil won’t splatter. I like to place them on a sheet tray that is lined with a clean kitchen towel. I use another towel to dry them off on top.
  6. Place handfuls of the potatoes into the oil. This is the blanching step, we are looking to cook the potatoes but we are not expecting a lot of browning at this point.
  7. Cook for 10 minutes, gently stirring them every so often so they don’t stick together.
  8. Take the potatoes out and place them on a cooling rack that is sitting on a sheet try. Repeat with the remaining potatoes.

Gravy

  1. While you are cooking the potatoes, make the gravy. Place the unsalted butter into a small saucepot over medium heat.
  2. Once melted, add the flour, garlic powder, onion powder, salt, and pepper, and whisk it in so it is like a paste. Cook for 2 minutes, whisking constantly.
  3. Slowly stream in the beef stock followed by the chicken stock while whisking constantly so there are no lumps.
  4. Bring to a simmer and simmer for 20 minutes to thicken slightly. Whisk occasionally so it doesn’t burn on the bottom.
  5. To serve, raise the oil fryer temp to 375°F. Place handfuls of the fries back into the hot oil to crisp. 2-3 minutes is all it takes. Drain them back onto a wire rack that is sitting on a sheet tray.
  6. Immediately sprinkle a little of the kosher salt on top, and repeat with the remaining fries.

Serve

  1. Per serving, place the fries on a plate. Top with gravy. Add ½ cup of cheese curds on top. Serve immediately.

What is the best way to eat poutine?

There is no one correct answer to this question. Some people like to eat poutine with their hands, while others prefer to use a fork and knife. Poutine can also be eaten as a side dish or as a main meal.

Substitute for Cheese Curds in Poutine:

If you can’t find cheese curds – you can use a block of mozzarella cheese. Don’t get the shredded kind. Make sure it’s a block that you can chunk off pieces and then add them to the top of your fries like you would the cheese curds.

The cheese will get warm and soft from the hot fries and gravy – making this snack irresistible!

Notes

  • I love using white cheese curds for poutine.
  • If you can’t find cheese curds or don’t have them you can tear chunks off a block of mozzarella and use that.
  • You can use your favorite store-bought frozen fries for this recipe if you don’t want to make fresh fries. Also, packet brown gravy will also work in a pinch.
  • Even though this dish is so simple just consisting of fries, gravy, and cheese curds, it is so satisfying and the perfect appetizer, main dish, or snack!
  • You can even add shredded beef or chicken to the gravy for a meaty twist.
  • If you like your gravy thicker. Whisk together equal parts of cornstarch and water, so 1 tablespoon cornstarch and 1 tablespoon water in a small bowl. Stream it into the gravy while it is simmering, whisking nonstop. The gravy will thicken instantly.
  • I would only assemble poutine to serve. So, if you have any leftovers they can be stored separately in the fridge and then reassembled after heating. Reheat the fries in the oven, sir fryer, or deep fryer until just warmed through. Reheat the gravy in the microwave or in a small saucepot on the stove until simmering.
  • I do not suggest freezing.

Can I use a different type of gravy?

Yes – you can use a different gravy. This one here is what you will traditionally find when ordering poutine. But you can use a pre-packaged gravy mix where you just add water. Or you can make my super simple gravy recipe that can be made with any type of broth.

Can the fries be made in the air fryer?

You bet. I have a recipe for steak fries made in the air fryer that would be perfect for doing this. I highly recommend it! You can also try my baked steak fries which would work fine too.
