Who loves pancakes? We love them too and for good reason. I think most people grew up having pancakes for breakfast on special occasions.

This, of course, makes them seem all the more special. So it is no surprise that when this mini pancake cereal hit the internet, the world went crazy!

Who wouldn’t love these tiny little buttery pancakes? My kids were saying that it totally makes sense since one of their favorite parts about making pancakes are those tiny little drips that turn out just like this.

So why not make a whole bowl of them to eat like cereal? So simple, and so delicious. I know your kids will love them as much as mine.

Can these be made with pancake mix?

Sure! If you don’t want to mix your own batter in this recipe – just follow the steps starting at #5 here.

Can these mini pancakes be served in milk?

You can – but they are still pancakes, not actually baked cereal – so they will get soggy. You’d have to eat them pretty quickly if you add milk to them.

What should I serve with mini pancake cereal?

Since this pancake cereal isn’t actually cereal, it is best to serve it as you would regular pancakes. Here are some topping ideas to try and be sure to scroll closer to the bottom to catch some of my recipes for homemade syrup flavors.

HOW TO MAKE Mini Pancake Cereal?

Preheat the griddle and spray with non-stick cooking spray if necessary.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Add egg, milk, and oil.
Whisk together until smooth.
Transfer the mixture to a plastic squeeze bottle.
Squeeze a very small amount of pancake batter, about the size of a dime onto the heated griddle.
Cook for about 2-3 minutes or until golden brown, then flip and continue cooking on the other side for about 1-2 minutes or until golden brown.
Repeat with the remaining batter.
Remove and serve immediately with butter, syrup, or fruit.

Can these be made in a skillet instead of on a griddle?

Yes – a skillet will work fine. It might take longer depending on the size of the skillet you use.

Keep in mind that since a skillet will be used on the stove – you will want to wait to put it on the heat until AFTER you have mixed your batter. Otherwise, you might burn the pan and have a smoky kitchen.

What is the best way to store leftover pancake cereal?

Place any unused pancake cereal in an airtight container and keep refrigerated until ready to serve again. To reheat, vent the container by popping the lid and then microwave for 60-90 seconds or until hot.

Can mini pancake cereal be frozen?

Yes, like regular pancakes these mini pancakes can be frozen. However – they should be frozen individually so they don’t stick together.

The best way to do this is to lay them out on a lined baking sheet in a single layer, without any of them touching, and then freeze until firm. Once frozen, you can then scoop them up into a zip-top bag or another container for space-saving.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

Can I use a gluten-free flour?

I’m not sure just yet. I have been meaning to give this a try but haven’t had a chance. If you do try this, I would recommend using a 1:1 flour like this one as I don’t believe it would require additional ingredients that are typically called for when swapping flour. Please come back & tell me how they turned out.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make the batter too thick.

However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Yes. Vanilla essence does not provide quite the same flavor as regular vanilla extract. However, it is a good alternative.

Why do you add vanilla extract?

Vanilla extract is a common flavoring found in many baking and sweet recipes using flour. It adds a certain depth to the flavor of the recipe that extends beyond a more “bready” taste.

Why do you wait to flip the pancakes until there are bubbles on the top?

When you wait until there are bubbles in the top of the pancake that does not fill with loose batter, this indicates that you can flip it without it falling apart. This is because the pancake itself is stiff enough for the batter to not refill the holds made by the bubbles (i.e., it is not liquid anymore).

How do you make Gingerbread Pancakes?

In a mixing bowl, whisk the flour, sugar, baking powder, cinnamon, and ginger together.
Add the milk, eggs, and vanilla extract, then whisk together.
Heat a nonstick skillet or griddle to medium-low heat.
Pour ¼ cup of pancake batter onto the skillet for each pancake.
Flip the pancake when bubbles form on the top that does not immediately go away upon reaching the surface.
Once both sides are golden brown, remove from the heat and add a small amount of butter to the top.
Continue until all of the batter has been used.
Top with syrup, frosting, whipped cream, a scoop of ice cream, and/or sprinkles if desired.
Serve immediately.

Yes, I do it often. If you want to make these ahead of time to keep your holiday morning stress-free…let the pancakes cool to room temperature.

Stack the pancakes, placing a piece of parchment paper in-between each pancake. Then place the stacks of pancakes in an airtight container or zip-top bag and freeze for up to 4 months.

To reheat, just separate out the desired amount of pancakes and heat in the microwave until hot. (usually about 1 minute for 1-2 pancakes)

Do you love quick bread? We sure do! Quick bread is great because it isn’t like a traditional yeast loaf. It’s more like a loaf cake.

Of course, that makes it great for not only breakfast but is delicious as a dessert too. So moist with the perfect crumb that keeps you coming back for more.

I particularly love this one because it presents so beautifully. Just look at those gorgeous cranberries and that crusty sugar layer.

I whipped up a batch last year to add to our gifts for the neighbors. When I can make one recipe and gift it away 5-6 times – that is a win!

What is the best way to store leftover cranberry quick bread?

Wrap the bread in plastic wrap or cover the loaf pan with foil and keep at room temperature for up to 3 days. You can also refrigerate if you prefer.

Can I use frozen cranberries?

Yes, absolutely, that will work just fine. Just be sure to thaw them & pat them dry before using.

HOW DO YOU MAKE Cranberry Quick Bread?

Liberally grease 5-6 mini loaf pans. Set aside.
Preheat the oven to 350 degrees.
Combine the flour, sugar, baking powder, and salt in a large bowl. Whisk to combine and set aside.
Add the milk, eggs, and oil together in a large measuring cup, whisk to combine, and then pour it into the dry ingredient mixture.
Fold the wet and dry ingredients until just moistened.
Divide the batter between the prepared loaf pans, filling ¾ full.
Add fresh cranberries to the top and then sprinkle with about ¼ cup of the sugar (divided between all of the loaves)
Bake for approx 40 minutes or until the toothpick test comes out clean.
One done, remove and sprinkle with remaining sugar and allow to cool to room temperature before removing from the pan.

Yes, you can make this in 2 regular-size loaf pans. You can also cut this recipe in half and make just one regular-sized loaf. You will want to increase the baking time to 50-60 minutes or until the toothpick test is clean.

Can this be made into muffins?

Yes, this recipe is great for mini muffins. Fill a well-greased mini-muffin pan 2/3 full. Bake for about 12 minutes.

You can also portion it out into 2 regular muffin tins. Increase the baking time (instead of 12 minutes for mini muffins) to 24-30 minutes.

When working with traditional muffins, you can increase the heat to 400 degrees for 20-25 minutes or 375 degrees for 23-28 minutes.

I don’t recommend increasing the heat for mini muffins because they are so small and already bake quickly.

Add fresh cranberries to the top and then sprinkle with about ¼ cup of the sugar (divided between all of the loaves)
Bake for approx 40 minutes or until the toothpick test comes out clean.
One done, remove and sprinkle with remaining sugar and allow to cool to room temperature before removing from the pan.

Notes

*Since all ovens bake differently and altitude and humidity levels where you live can have an effect on baking times – the 40 minute suggested time is approximate.

*The number of loaves is between 5-6 since not all mini loaf pans are exactly the same size.
