Do you like making homemade gifts for friends & neighbors? It’s one of my favorite things to do during the holiday season. I usually spend most of November testing recipes to narrow down just the perfect treats I want to make to give away. One recipe that I keep coming back to is one for these Chocolate Chip Red Velvet Mini Loaves. I sure love red velvet & then when it’s topped with a sweet glaze & cute snowflake sprinkles, it just makes the whole season a little bit happier. I think we all could use some extra doses of happiness in our days & this is just the recipe to do that.
Chocolate Chip Red Velvet Mini Loaves
Because quality is of the utmost importance to me when baking for those I care about, I use Bob’s Red Mill Organic Unbleached All Purpose Flour because I like that it’s not enriched with any additives. It produces well-textured loaves just as easy as it creates light & airy baked goods. Versatility is a must in my kitchen. (Be sure to grab this coupon to pick up your own Bob’s Red Mill!)
These are so incredibly easy to make. Just whisk all the ingredients together in a bowl, pour into your mini loaf pans & bake for about 35 minutes. Once they are cool you can remove & add the simple 2 ingredient glaze. I’m telling you, it’s so easy but no one will be the wiser because of how pretty they are.

Chocolate Chip Red Velvet Mini Loaves
Ingredients
- 2 ounces bittersweet baking chocolate 2 squares
- 1/2 cup water
- 1 cup firmly packed light brown sugar
- 1/2 cup 1 stick butter- softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 tbsp red food color
- 1-1/2 cups Bob's Red Mill Organic Unbleached All Purpose White Flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup mini chocolate chips
Icing
- 1 cup confectioners sugar
- 1-3 tbsp milk depending on desired thickness
- Snowflake sprinkles opt
Instructions
- Preheat oven to 350 degrees
- Spray bottoms only of 3 mini loaf pans with baking spray - set aside
- In a small saucepan, combine bittersweet chocolate & water
- Heat over low, stirring occasionally until chocolate is melted
- Remove from heat & set aside to cool to room temperature
- In a large bowl, combine brown sugar, butter, eggs & vanilla
- Whisk well, until creamy
- Add in chocolate mixture & sour cream & whisk again until smooth
- Next, beat in red food color, followed by flour, baking soda, salt & mini chocolate chips
- Spoon into prepared loaf pans
- Bake 35-40 minutes or until toothpick test is clean
- Cool in pans on a cooling rack
- Once cool remove & prepare your icing
- To make icing, place confectioners sugar in a bowl & whisk in 1 tbsp of milk at a time using a fork until you achieve the desired consistency
- Drizzle over loaves, sprinkle with snowflake sprinkles & enjoy or wrap & give away
I guarantee you will be greeted with huge smiles when you deliver these to those on your list!

If I can’t find the bittersweet chocolate can I use something else? Also can I use regular flour?

You should be able to find bittersweet chocolate in the same spot as the regular baking chocolate squares. I think you can substitute dark baking chocolate with at least 70% cocoa for the bittersweet – but I have not tried it so I can’t guarantee it’s outcome. As far as the flour- all-purpose should be fine.
