- Preheat the oven to 350 degrees. 
- Spray the bottoms only of 3 mini loaf pans with baking spray - set aside. 
- In a small saucepan, combine bittersweet chocolate and the water. 
- Heat over low, stirring occasionally until the chocolate is melted. 
- Remove from the heat and set aside to cool to room temperature. 
- In a large bowl, combine the brown sugar, butter, eggs, and vanilla. 
- Whisk well, until creamy. 
- Add in the melted chocolate mixture and the sour cream. Whisk again until smooth. 
- Next, beat in the red food color, followed by the flour, baking soda, and salt.  
- Fold in the mini chocolate chips. 
- Spoon the batter into the prepared loaf pans. 
- Bake for 35-40 minutes or until the toothpick test is clean. 
- Cool the loaves in the pans on a cooling rack. 
- Once cool, remove and prepare the icing.
