Oven Beef Tenderloin

There are special occasions that call for specific dishes — turkey on Thanksgiving is an obvious one, and ham on Easter is pretty prevalent. When it comes to the Christmas holiday season, in our household an oven beef tenderloin is a must.

That said, we don’t reserve this tasty roast for just holidays either. It’s great for any gathering and I make it for dinner on weeknights, occasionally, too.

This dish works so well because it’s such a flavorful beef cut that very little has to be done to it before roasting. Then, the time that it takes to roast allows me the opportunity to make all of the side dishes I want to go along with it.

How to Make Air-Fried Cheeseburger Egg Rolls

  1. Add the ground beef to a medium-sized skillet set over medium-high heat. Cook, stirring often until the meat is browned– about 5 minutes.
  2. Drain the grease and then add the garlic powder, paprika, and salt to the beef.
  3. Stir to combine and then set the browned beef aside until it is cool enough to handle (you don’t want it to melt the cheese)– about 10 minutes.
  4. Add the cooled beef to a large bowl along with the cheese, green onion, and pickles. Stir to combine.
  5. Add about ¼ cup of filling to the center of one egg roll wrapper.
  6. Beat the egg in a small bowl with a splash of water to create an egg wash. Brush the egg wash around the edges of the egg roll wrapper to create a seal.

  1. Roll the wrapper into an egg roll (the same way you could roll a burrito) by folding the bottom point over the filling, then folding the left and right points into the center, and finally by rolling it upward to seal.

  • Garlic powder, paprika, and salt help season the meat so it really tastes like a grilled cheeseburger! Feel free to swap 1 tablespoon of your favorite burger seasoning if you prefer.
  • Cheddar cheese is my classic go-to cheese for burgers so that’s what I’m using here. Feel free to use any cheese you like.
  • Green onions add a subtle, onion flavor. If you prefer sweet or red onions, feel free to use those instead!
  • Dill pickles add a bit of acidity and saltiness to help balance out the fat of the egg rolls. Feel free to leave them out or substitute sweet or spicy pickles.
  • Egg roll wrappers are a thin, wonton-like sheet of dough that you can find near the tofu in most grocery stores! You could also use wonton wrappers for mini egg rolls.
  • The egg helps seal the egg rolls and creates a crisp golden brown exterior.
  • You can use relish in place of the chopped pickles.

What air fryer do you use?

Small

We actually have 3 air fryers. I have a smaller one from Phillips that we started with. I have since given that to my son since he’s only cooking for 1.

Medium

But the more I used the air fryer I realized I really wanted a digital screen. It wasn’t any more expensive, in fact- our XL air fryer from GoWISE was less expensive than the Phillips and I love its ease & extra functions.

Plus it comes with a lot of the extra accessories I like to use when cooking with my fryer.

Large

But I when I started working on my second air fryer book, I wanted to change things up. I picked up this LARGE air fryer that has been wonderful. It has Touch Screen Presets plus it is XL Family Size, which is great!

How to keep guacamole from turning brown?

I have found that if you have a sliced avocado, you can wet it with water and then place the plastic wrap directly on top of it and store it in the refrigerator. This has worked quite well for us.

I have not tried it with guacamole because the texture isn’t smooth. The idea is that the water creates a layer that keeps air from getting to the avocado – which is what turns it brown. I would imagine if you tried to add a layer of water to the top of a bowl of guacamole, it would dilute and ruin it.

You could try just spraying the top of it with a mist of water and then placing the plastic wrap directly on top. If you give this a try – please let me know how it worked.

My dough didn’t rise, what happened?

Most of the time this means your water was either too hot or too cold. If it is too hot it will kill the yeast, too cold & it just won’t rise. I find that using a thermometer helps & bringing the water to 115-125 degrees is best.

What is the best yeast?

You can use rapid rise, premium, or whatever you have on hand. I buy my yeast in the bulk section of my store, so it’s not brand-name or anything fancy & it works just great.

  1. Working in a warm room, combine the warm water, and 2 tablespoons of melted butter, sugar, and salt in a mixing bowl. Stir to combine.
  2. Add the yeast and stir until dissolved.

  • Please don’t reduce the sugar. The yeast needs the sugar to help it grow – that’s what makes the dough rise.
  • Make sure you are properly measuring the flour. Don’t scoop packed flour from the bag. This will result in dense, overly dry rolls. Spoon and level the flour and then add more (a little at a time) if needed. You can always add more, you can’t take it away once it is added.
  • Try using salted butter for more added flavor.

  • Make sure you let the dough rise in a warm place. Because we live in north Idaho, I will often set the bowl near the woodstove, or wrap it with an electric blanket to keep the dough nice and warm. I have seen warming mats for making bread rolls on places like Amazon. I have found that the electric blanket works quite well and is a fraction of the cost.
  • These can be made ahead and baked the next day.
  • It is not necessary to line the baking pan with parchment paper prior to baking.

For the Best Results

  • Try to make the dough balls uniform in size so that they are equal pieces and all bake evenly.
  • I have not tried this with bread flour, so please let me know if you give that a try.
  • This can be made in a large bowl – no stand mixer is required.

  • I like to use Instant Yeast to make the dough extra springy.
  • The warm water can be replaced with warm milk but please make sure it is still at optimal temperature. Anything above 125 degrees will kill the yeast and the dough will not rise. Please don’t use hot water. I recommend an instant-read thermometer for accuracy.
  • Cool these easy yeast rolls on a cooling rack in the pan. Then transfer them to a bread basket for serving this easy dinner rolls recipe at your holiday table.

  • To make sure these soft dinner rolls stay soft, store them in a freezer bag.
  • If you end up with shaggy dough or sticky dough, add additional flour a little at a time.
  • Don’t skip the rise time.

Because ovens are hot & dry & suck the moisture out of everything. This is where the second coat of butter comes in.

Variations and Add-ins

  • Ice cubes – Try freezing fruit juice into cubes and using it to keep the drink cool if sipping outside. On hot days it will help to keep the cocktail cool while retaining that fruity flavor. 
  • Coconut rum – Make this cocktail even more tropical by replacing some or all of the light rum with coconut rum.

  • 2 ounces pineapple juice
  • 1.25 ounce white rum

Instructions

  • Combine the pineapple juice, white rum, dark rum, orange juice, lime juice, and grenadine into a drink shaker.

  • To really impress guests, try making all juices from scratch. The flavor is ten times better.

We love to serve this cake at all our fall celebrations. I especially love it in place of the pie when we all gather for Thanksgiving.

Can I use a different glaze?

Absolutely!  The best part of bundt cakes is their versatility.  You can substitute the glaze in this recipe with your favorite flavor, homemade or otherwise.

If you want to swap out the bourbon with an extract flavor of your choosing, that will work too.

Can this be made in a regular cake pan?

This cake can be made in a 13×9 baking pan. Bake for 20-25 then do a toothpick test to check for doneness.

This cake can also be made into cupcakes. Fill each well 3/4 of the way full and bake for 15-20 then do the toothpick test to check for doneness.

Can I leave this cake out at room temperature?

Yes, this cake can be stored at room temperature. Just make sure to wrap it tightly with plastic wrap or place it in an airtight container.

I like to keep the cake in the refrigerator so it will last a bit longer. Then when serving, I microwave it for a few seconds so it is nice and warm.

How many can this serve?

Depending on the size of your slices, this cake will yield approximately 12-16 slices. That being said – in our house, it is “go BIG or go home”. So we usually split the cake between the 5 of us for 2 nights.

Cake

  • all-purpose flour
  • baking powder
  • kosher salt
  • ground nutmeg
  • unsalted butter – softened
  • granulated sugar
  • large eggs
  • sour cream
  • pumpkin spice bourbon

Pumpkin Spice Bourbon Glaze

  • unsalted butter
  • light brown sugar – packed
  • pumpkin spiced bourbon
  • confectioner’s sugar
  • pure vanilla extract
  • chopped pecans

How can I prevent the cake from getting stuck inside the pan?

You should make sure that you grease your pan really well with a flour and grease/cooking-spray mixture to keep the cake from sticking.  The ridges in the pan are most susceptible to this and they are the most delicate parts of the cake. 

Make sure that you really work your grease into these crevices for the best results. I recommend using Baker’s Release.

What is bakers release?

Bakers release is a combination of oil, flour, and shortening that makes releasing cakes and other baked goods almost effortless.

To make Bakers Release – it is as simple as 1,1 & 1. 

  • equal parts of all-purpose flour, shortening, and cooking oil – I like to do 1 cup of each.

Mix the ingredients together – whisking well. Store in an airtight container in the pantry or refrigerator. When ready to use, dip a pastry brush into the mixture and spread it over the cake pan.

Place this cake in an airtight container or wrap it with plastic wrap. It can be stored for up to 3 days at room temperature or up to a week in the refrigerator.

How to Make Bourbon Cake

Cake

  1. Preheat the oven to 350 degrees and spray a 9-in bundt pan with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
  3. Using a large bowl, beat together the butter, and sugar until light and fluffy.
  4. Beat in the eggs one at a time until combined.
  5. Mix in the sour cream and bourbon.
  6. Gradually beat in the dry ingredients until combined.
  7. Pour the batter into the bundt pan and bake for 60-70 minutes or until a toothpick comes out clean.
  8. Allow it to cool for 20 minutes before removing it from the pan and placing the cake onto a wire rack to cool completely.

Bourbon Glaze

  1. Using a medium saucepan, melt the butter over low heat.
  2. Whisk in the brown sugar and bourbon until combined and bring to a simmer. Cook for 1 minute.
  3. Whisk in the confectioner’s sugar, and vanilla until smooth.
  4. Pour the glaze over the bundt cake and sprinkle with the chopped pecans.

When the holidays come around we love to get in the kitchen and bake. Often times we stick to our classic cookie favorites and then add in a handful of new recipes.

Most of the time we find really good, classic recipes that have been forgotten about in the bottom of grandma’s old recipe tin. These Mexican Wedding Cookies are one of those that we are so happy to have found.

While this recipe is a spin off of our super easy snowball cookies – with the end result being quite similar, this recipe is as classic as it gets.

How to Make Mexican Wedding Cookies

  1. In a small mixing bowl, combine the flour, and finely chopped pecans. Set aside.
  2. In a medium mixing bowl, cream the butter and the 1/3 cup confectioner’s sugar with an electric hand or stand mixer. Beat for 2 minutes; Add vanilla and mix well.
  3. Stir in by hand, the flour and nut mixture. Mix just until combined. Cover with plastic wrap and chill for 20 minutes in the refrigerator.
  4. Pre-heat the oven to 350 degrees F. Prepare the baking sheet with parchment paper.
  5. Using a cookie scoop, roll each scoop into a ball shape and place them on the prepared baking sheet. Bake for 10 minutes, or until lightly browned on the bottom. Do not over bake.
  6. When cookies are cool enough to handle, around 2 minutes out of the oven, gently roll them in the confectioner’s sugar and place them on a cooling rack to cool. After the cookies have cooled, roll the cookies a second time in the confectioner’s sugar.

Making the cookies ahead of time

Yes, you can make these cookies ahead of time. I recommend that you make the dough up until the chilling point. Then keep the rolled dough in the fridge until you are ready to make them.

Then bake and roll in the sugar. I do not recommend refrigerating the baked and sugar-coated cookies. The sugar does not do well in the cool and damp climate of the refrigerator.

What is the difference between Mexican wedding cookies and polvorones?

Polvorones are a type of Mexican wedding cookie that is made with flour, sugar, butter, and nuts. They are usually round or oval in shape and have a sandy texture.

  • These classic cookies can be frozen if you place them in a freezer-safe container or air-tight container.

  • Replace the vanilla extract with almond extract
  • These cookies are similar to shortbread cookies with their buttery flavor.

The dough needs to be chilled of 20 minutes – unlike some recipes that need to be chilled for several hours or even overnight. Chill the dough in the fridge, wash up the dishes and before you know it, it is ready to be baked.

More Tips & Tricks

  • If a cookie scoop is not available (#60 scoop), use a tablespoon for the scoop. It’s important for the cookies to be uniform in size for adequate baking uniformly.
  • Use a food processor or hand-held chopper to finely chop the walnuts.
  • You can use unsalted butter in place of salted, if desired; add 1/2 teaspoon salt.
  • Try using walnuts instead of pecans.
  • If the dough seems dry and does not hold together in the shape of a round ball in your hand, simply add water to the dough. Start with 1/2 tablespoon till you can roll the ball without it being crumbly.
  • Doing more or less of the chopped nuts and flour will affect the texture of the cookie.
  • Store in an airtight container, at room temperature, for up to one week.
  • Freeze the cookie dough for up to 3 months. Do it before the cookies are coated in the sugar. Thaw in the fridge and then proceed with the baking directions above.

Mexican Wedding Cookies

Mexican Wedding Cookies are a deliciously sweet cookie made with crushed pecans, coated in sugar, with a tender, buttery crumble.

Ingredients

  • 1¾ cups all-purpose flour
  • 1¼ cups pecan halves finely chopped
  • 1 cup salted butter (2 sticks), softened
  • ⅓ cup confectioner’s sugar
  • 2 teaspoons vanilla extract
  • 2 cups confectioner's sugar – for rolling

Instructions

  • In a small mixing bowl, combine the flour, and finely chopped pecans. Set aside.
  • In a medium mixing bowl, cream the butter and the 1/3 cup confectioner's sugar with an electric hand or stand mixer. Beat for 2 minutes; Add vanilla and mix well.
  • Stir in by hand, the flour and nut mixture. Mix just until the dough comes together and is combined. Cover with plastic wrap and chill for 20 minutes in the refrigerator.
  • Pre-heat the oven to 350 degrees F. Prepare the baking sheet with parchment paper.
  • Using a cookie scoop, roll each scoop into a ball shape and place them on the prepared baking sheet. Bake for 10 minutes, or until lightly browned on the bottom. Do not over bake.
  • When cookies are cool enough to handle, around 2 minutes out of the oven, gently roll them in the confectioner's sugar and place them on a cooling rack to cool. After the cookies have cooled, roll the cookies a second time in the confectioner's sugar.

Notes

  • If a cookie scoop is not available (#60 scoop), use a tablespoon for the scoop. It’s important for the cookies to be uniform in size for adequate baking uniformly.
  • Use a food processor or hand-held chopper to finely chop the walnuts.
  • You can use unsalted butter in place of salted, if desired; add 1/2 teaspoon salt.
  • Walnuts may be substituted for the pecans.
  • If the dough seems dry and does not hold together in the shape of a round ball in your hand, simply add water to the dough. Start with 1/2 tablespoon till you can roll the ball without it being crumbly.
  • Doing more or less of the chopped nuts and flour will affect the texture of the cookie.
  • Store in an airtight container, at room temperature, for up to one week.
  • These can be frozen for up to 3 months, but please freeze before the cookies are rolled in the sugar. Thaw in the fridge and then proceed with the baking directions above.
