My friends – I know we are starting a new year and most people are getting on a diet plan. But I’m here to tell you that THIS RECIPE will be THE ONE that completely destroys your plans to diet.
I’m sorry – sort of. I created this recipe in my head about 5 years ago. Reworked it about a million times over before I actually decided to jump in and actually make it happen.
These are so good that I’m kicking myself for not making them sooner because I just KNOW you will love them as much as we do.
I wanted to kick up my one-hour dinner rolls and make them even better than ever. These are still made in just one hour – but I added ranch seasoning to the butter we brush on top.
Then -since everyone loves ranch with cheddar cheese and bacon – we added those on top too. HOLY MOLY – they are so packed with flavor, they just make your eyes roll to the back of your head and you ask yourself with each bite where they have been your whole life.
We decided to call them disappearing fat rolls because the whole batch – all 20 of them were literally gone in one dinner. Empty pan – nothing left. Everyone went back for more and they were asking me to make more before we were done with dinner.

Here are some commonly asked questions
What is the best way to store leftover cheesy dinner rolls?
I like to place them in a zip-top bag or cover the dish with foil or plastic wrap and keep them at room temperature until ready to enjoy again. To reheat, I like to just pop in the microwave for a couple of seconds to slightly soften again before serving.
That’s a lot of sugar- can I reduce the amount?
No. While it may seem like a lot, it does not make these rolls sweet in any way. The sugar helps the yeast to ferment & rise, so you have nice fluffy rolls.
That’s a lot of salt- can I reduce it?
Also no to this question. This really helps add to the flavor & helps while the dough is rising. If you would like less salt, use unsalted butter.

What is the best yeast?
You can use rapid rise, premium, or whatever you have on hand. I buy my yeast in the bulk section of my store, so it’s not brand-name or anything fancy & it works just great.

- granulated sugar
- yeast – I used rapid yeast
- warm water – ideal temp is between 115-125 degrees
- butter – softened
- table salt
- all-purpose flour
- melted butter
- ranch seasoning
- shredded cheddar cheese
- crumbled bacon pieces – not imitation bacon bits
- parsley or minced chives for garnish
- sea salt flakes for sprinkling on top

Why is the cooked dough so dense?
This dough should be light and fluffy as you see in the images here. If you find that your dough is not rising or it comes out more dense, please see the following suggestions below.
- Kneading. While the recipe here does not call for kneading as a separate step, the dough needs the kneading to form the gluten because that is what makes bread light and fluffy. This can be as easy as letting your mixer work the dough for a couple of extra minutes.
- Check that yeast. If your yeast doesn’t proof, it could either be expired or the temperature of the liquid wasn’t the right temperature and the yeast died. If the liquid is too cold and it will take much longer to proof, too hot or expired – and won’t grow at all.
- Too much flour. Too much flour will make the dough dense. I know the inclination is to add more when the dough is sticky – but mix in just enough to be able to form it into the rolls with wet or oily hands. If you live in a lower elevation, or higher humidity, you probably won’t need as much flour.
Can this recipe be doubled?
You can, and we do it often. But you will need the larger-sized mixer or be ready to knead it by hand. This makes a lot of dough. You will also need to bake them in two casserole dishes.

Can these rolls be frozen?
You can freeze them after they are baked. Just wrap them tightly in plastic wrap and mark them with the date. Use within 3 months. I have not tried freezing the dough for baking later, so I can’t give an accurate answer on that one.

How do I properly measure the flour?
The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.
However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.
How do I get 20 rolls out of this dough?
I have found that the best way is to quarter the original ball of dough. Then I roll each into a log & cut it into 5 even pieces.
Why are the rolls dry, not soft & fluffy when I pull them out of the oven?
This happens because ovens are hot & dry & suck the moisture out of everything. This is where the second coat of butter comes in.
Just brush a little bit of melted butter over the tops & let them cool a bit. This makes the rolls soft & squishy & everything you look for in a roll.

My dough didn’t rise, what happened?
Most of the time this means your water or milk (depending on which one you are using) was either too hot or too cold. If it is too hot it will kill the yeast, too cold & it just won’t rise. I find that using a thermometer helps & bringing the water to 115-125 degrees is best.
How to Make Disappearning Fat Rolls in One Hour
- Using your mixer bowl, dissolve the sugar and yeast in the warm water and let stand for five minutes, or until foamy. (if your bowl is chilled or your room is cool this could take longer)
- Add butter, salt & 3 cups of the flour, and mix until combined.
- Add additional flour, 1/4 cup at a time, until the dough pulls away from the sides of the bowl and is slightly sticky to the touch. (do not add too much flour!)
- Let the mixer knead for 3-5 minutes, until smooth.
- Cover with plastic, place in a warm spot and let rise 15-20 minutes. (If you have a space heater or a fireplace you can set it in front of – this is ideal)
- Preheat the oven to 400 degrees & spray a 9 x 13 casserole dish with cooking spray or a cooking oil spritzer.
- Punch down the dough & divide it into 20 equal-sized pieces.
- Roll each piece into a ball and space evenly in the prepared pan.
- Melt the butter in a small bowl and then whisk in the ranch seasoning.
- Brush the melted butter/ranch mixture over the top of the doughy rolls.
- Top with the shredded cheese and bacon crumbles then sprinkle with sea salt. Set aside in a warm place and let rise for an additional 15-20 minutes.
- Bake 13-15 minutes, or until golden brown. ( you can turn on the broiler for about 1-2 minutes at the end to get a more golden top – but don’t over-do it or you will burn the rolls, the bacon and the cheese)
- Remove and brush with more melted butter if desired.
- Let cool slightly before serving.

Can I use Gluten-Free flour?
I have not tried that yet. If you decide to give it a go, I would suggest using one that has a 1:1 ratio for the best possible results. Please let me know how it turns out. I’d love to share that with others.
What if I don’t have a mixer or can I use a hand mixer?
A mixmaster or hand mixer won’t be the right way to go. You want something with a dough hook, not beaters.
In this case, the mixture can be worked by hand with a large rubber spatula or wooden spoon & then, later on in the recipe, you would need to knead the dough by hand.
My son did it this way since he didn’t have a stand mixer when he moved out & he was able to get them to turn out the same on his first try.
