Peppermint Shortbread Bars

So- I’m sure by now you have noticed that I am on a Peppermint kick right now. I can’t seem to help myself. It’s that time of year & it’s so YUMMY. I love trying it with all my usual holiday cookie recipes. This time I decided to mix in those little peppermint bits into my favorite holiday shortbread cookie recipe to create something a little extra special.

Peppermint Shortbread Bars

Ingredients

  • 1 cup 2 sticks butter - room temperature
  • 3/4 cup confectioners sugar- sifted
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour- spooned- not scooped
  • 1/2 tsp coarse sea salt
  • 1/2 cup Andes peppermint crunch bits

Instructions

  • Preheat oven to 325 degrees.
  • Spray 8x8 glass baking dish with cooking spray- set aside
  • In mixer bowl- combine butter, confectioners sugar, vanilla, flour & salt. Beat until well combined. Should look moist but not creamy
  • Fold in peppermint bits.
  • Transfer to your prepared baking dish. Press down with fingers to flatten & spread out into dish.
  • Bake until firm & pale golden color. 35-40 minutes
  • Let cool on wire rack about 30 minutes before cutting & transferring to airtight container or serving.

Chocolate Mint Muffins

I think it’s safe to say that I’m sort of obsessed with mint this time of year. Especially when it comes to combining it with chocolate. Mmmmmmmm – yeah. I can’t get enough. So just be warned. I picked up some of those delectable Andes mints pieces & decided they would be great in muffins. Not just any muffins would do though. I needed to make the kids something for breakfast but these actually turned out more like a treat. That’s okay- they weren’t complaining about these.

Chocolate Mint Muffins

Ingredients

  • 1-3/4 cup all-purpose flour spooned in, not scooped
  • 1-1/4 cups brown sugar - packed
  • 2/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • 1 cup Andes mint pieces
  • 3/4 cup milk
  • 1 tbsp vinegar
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1-1/2 tsp coffee extract
  • 1 cup Andes mints for sprinkling on top

Instructions

  • Preheat oven to 350 degrees.
  • Line 16 muffin tins with parchment liners
  • Combine milk & vinegar in small cup & set aside
  • In large bowl - whisk together flour, brown sugar, cocoa powder, baking powder, baking soda & salt.
  • Add in mint chips & stir to incorporate
  • In separate bowl combine milk mixture & eggs- whisk
  • Add in oil & coffee extract - whisk to combine.
  • Pour into dry mixture & carefully fold in. Do not over mix.
  • Scoop by the spoonful into prepared baking tins until the papers are 3/4 full
  • Bake 23- 25 minutes or until toothpick test is clean.
  • Let cool in pan & then transfer to wire rack to finish cooling.
  • Store in airtight container.

One thing I absolutely love during the holidays is baking treats & food gifts for friends & neighbors. Because we were just moving in during the holidays last year it was our neighbors that brought us plates of goodness to welcome us to the neighborhood. But usually I like to prepare either a plate of a collection of goodies or I like to make something like a cake or loaf of breakfast bread to give to them to day before the holiday so that they have breakfast covered for the next morning. This way they don’t have to make anything for their guests while also trying to prepare for the feast or for the other festivities happening that day. This particular breakfast treat is my favorite to give the day before Thanksgiving.

Pumpkin Butter Coffee Cake

Ingredients

Cake

  • 1-1/4 cups all-purpose flour
  • 1/2 cup sugar
  • 2-1/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup milk
  • 4 tbsp Salted Land O' Lakes butter sticks
  • 1 egg - beaten
  • 1/4 cup Pumpkin Butter

Streusel

  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 4 tbsp Unsalted Land O' Lakes butter sticks

Instructions

  • Preheat oven to 400 degrees
  • Spray 8" round glass baking dish with cooking spray - set aside.
  • For cake - combine flour, sugar, baking powder, cinnamon & salt in mixer bowl.
  • Add in milk & egg - beat.
  • Add in Land O' Lakes butter - mix
  • Add in pumpkin butter - mix well.
  • Transfer to prepared dish
  • Make streusel -
  • In small bowl whisk together all streusel ingredients until you have a thick paste like consistency.
  • Drop on top of cake batter in small portions to cover most of the cake - do not mix
  • Bake 30-35 minutes or until toothpick test is mostly clean.
  • Cool on wire rack in pan completely before removing.
 

You can pick up Land O’ Lakes butter sticks at Walmart & create this dish for your friends & neighbors too.

Simple Pine Cone Ornaments

I have been wanting to create a dream Christmas tree for a long time. I have always been drawn to the creams, browns & golds that you see with rustic Christmas tree decorations. Every year I say I am going to change things & make a beautiful tree but I lose track of time to get it done & we end up putting up the same ol’ random collection of ornaments that we have been using for years. NOT THIS YEAR. I am being proactive & starting now. Best part is that I am utilizing things I already have on hand & either re-purposing or up-cycling them to work for me this year. It won’t cost me much of anything but some paint & a dip into things I already have on hand- so that’s a good thing. Because when it comes to the hubs & my bright ideas- the only thing he wants to know is “how much is this going to cost us?” For this- nearly free & I get my beautiful tree. So one of the first things I knew I wanted was pine cones. I set the children outside to gather what they could in the yard- we will continue to collect & add to our ornaments as they fall off the trees. But to start we made these little beauties to bring the rustic of outside in here.

tie in a knot & then tie another knot at the ends to make your loop.

I added a little cream lace bow around the base too for more brightening once it’s on the tree.

Gingered Cider Hot Toddie

Does a warm Hot Toddie sound good right about now?? I know that when it gets chilly outside I like to have a warm beverage all day long. Most times it’s coffee, but sometimes I don’t want so much caffeine as it gets later in the day. So I switch to tea of some sort. I like to make a non alcoholic hot toddie to warm me up. I decided to see what sort of twist I could make on my usual tea & came up with something you will love to serve your guests this holiday season.

Making this with cider instead of water really gives it a wonderful rich flavor.

Gingered Cider Hot Toddie

Ingredients

Recipe is per mug

  • 2 cups apple cider- warmed
  • 1 bag of tea flavor of choice
  • 1 tbsp honey
  • 1/8 tsp ginger
  • 1 slice of lemon
  • 1 cinnamon stick
  • 1 shot Brandy Whiskey, Rum of Bourbon **Optional

Instructions

  • Warm your cider in your mug
  • Steep your tea bag in cider for 3-5 minutes
  • Add in honey & ginger & stir with your cinnamon stick
  • Leave cinnamon stick in mug
  • Add shot of desired spirits (optional)
  • Top with lemon slice

 

I love that I can have this at any time of day without the shot of spirits.  It’s also a great beverage to serve to guests during holiday entertaining.

Very festive & since the spirits are optional- everyone can enjoy it.

Dulce de Leche Pumpkin Muffins

I wasn’t going to do it. I really had not planned on making any recipes with pumpkin puree this season. But then I was sent some to try for another post & I couldn’t just let it sit there in the cabinet. So since I figured the kids were tired of having banana bread for breakfast everyday – I decided to take the pumpkin muffin recipe to the next level & make them something they will really enjoy in the mornings.

Dulce de Leche Pumpkin Muffins

Ingredients

Muffins

  • 3 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups pumpkin puree- not pie filling
  • 1-1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 tsp vanilla extract
  • 1 tsp molasses

Streusel

  • 6 tbsp flour
  • 4 tbsp brown sugar
  • 4 tbsp cold butter

Topping

  • 3/4 cup Dulce de Leche

Instructions

  • Preheat oven to 350 degrees
  • Line muffin tins with papers or spray with cooking spray. (recipe makes 24 muffins)
  • In mixer bowl combine pumpkin, sugar, oil, eggs, vanilla & molasses. Beat & blend until smooth.
  • Add in flour, cinnamon, ginger, pumpkin pie spice, baking soda & salt. Beat slowly until just combined.
  • Spoon batter into prepared muffin tins.
  • Make streusel by placing all streusel ingredients in small bowl & cut together with pastry cutter or by crossing 2 knives to cut the butter into the dry ingredients. Should be lumpy.
  • Sprinkle over the top of each muffin.
  • Bake muffins for 20-23 minutes or until toothpick test is clean.
  • Cool on wire rack & then drizzle with warmed Dulce de Leche before serving.

Boy do we have some fabulous Family Favorite Thanksgiving Recipes to share with you today. Looking for Easy Family Dinner Ideas? With the theme being Family Favorites I had to share with you the recipe I look forward to most when I think of Thanksgiving. It’s the one that comes the day AFTER Thanksgiving but it’s my favorite none the less.

Pilgrim Butty ~ Thanksgiving Leftover Sandwich

Ingredients

  • 1 french loaf - cut into sandwich size pieces
  • 1/4 stick butter - melted
  • Cream Cheese
  • Leftover turkey
  • Jellied Cranberry Cider
  • Olives
  • Frenches Fried Onions
  • Simple Turkey Gravy

Instructions

  • Brush your french loaf with your melted butter, sprinkle with some granulated garlic & salt & grill in pan or place in broiler for 3-5 minutes.
  • Remove from heat & allow to cool slightly.
  • Spread on cream cheese.
  • Add turkey, jellied cranberry cider, olives & fried onions.
  • Drizzle a little turkey gravy over the top before placing your top piece of bread on.
  • ENJOY!!!

A bit ago one of the guys at the station brought the hubs one giant summer squash & one giant zucchini from his garden. I was so thrilled when the hubs brought them home. They sat on the counter for a while just because I knew that prepping them would be a chore. I wasn’t really worried about them going bad because they were given to us so fresh. I knew that the ones you pick up at the store aren’t even close to being that fresh. So there they sat. Finally I was tired of looking at them & needed to make something for the kids for breakfast the next day. So while the hubs was traveling- the boy & I decided to get them off the counter & prep them for baking. Peeling- cutting & grating consumed a good hour of two or our day. I like to portion out what I need for recipes into individual packages for the freezer. I made sure to leave out some of the summer squash because I had a particular recipe in mind.

Summer Squash Chocolate Loaf

Ingredients

  • 4 cups grated summer squash
  • 3 eggs
  • 1 cup canola oil
  • 2 tsp vanilla extract
  • 1-1/2 cups granulated sugar
  • 3 cups all-purpose flour
  • 1/2 cup cocoa powder not Dutch processed
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Line 2 loaf pans with parchment & lightly spray cooking spray- set aside.
  • In large bowl- sift together sugar, flour, cocoa powder, cinnamon,baking soda & salt.
  • Whisk in eggs, oil & vanilla.
  • Mix in with large spatula. Mixture will be very dry & pasty until you add the squash
  • Fold in squash & then chocolate chips.
  • Transfer to your prepared pans & smooth out.
  • Bake for 55-60 minutes or when toothpick test comes out clean.

A couple weeks ago I shared with you all my Honey Pumpkin Spice Black Bread. It was great but I really wanted to see if I could do it in the slow cooker because sometimes I want to make bread & my main dish at the same time & I don’t have a double oven. Sooooo- I decided to create this recipe & it turned out great.

Slow Cooker Black Bread

Break out the slow cooker. This is an easy to make black bread, no oven needed.
Prep Time25 minutes
Cook Time1 hour 30 minutes
Total Time1 hour 55 minutes

Ingredients

  • 1 cup warm milk
  • 1 tbsp granulated sugar
  • 1 tbsp Rapid rise yeast - I like Red Star Platinum
  • 2½ cups all-purpose flour
  • ¼ cup butter - melted
  • 2 tsp molasses
  • 1 tsp salt
  • ¾ cup honey
  • 1 tbsp cocoa
  • 1 pkt Starbucks House Blend instant coffee
  • Oats to sprinkle

Instructions

  • Line slow cooker with parchment & lightly spray with cooking spray.
  • Combine milk, sugar & yeast in the mixer bowl. Wait 5 minutes to proof & then mix.
  • Add ½ of the flour, butter, molasses & salt - combine using dough hook.
  • Let sit 2 minutes to rest.
  • Add remaining flour, honey, cocoa & coffee. Mix to combine.
  • Knead in mixer with dough hook 4-5 minutes (or 10 min by hand) until elastic.
  • Allow the dough to rest 5 minutes.
  • Pull off pieces & shape into rolls & place in slow cooker. -It's okay to double the layers if your cooker is smaller.
  • Sprinkle with a little bit of oatmeal.
  • Cover & cook on high 1½ hours or until it sounds hollow when tapped with your fingernail.
  • Remove lid & do not allow condensation to drip on bread.
  • Lay a paper towel over cooker top & recover. Wait 10 minutes before removing.

Pine Cone Wreath ~ Project 52 Week 44

Good Morning!!!

We had some fun this past week.  We set out one day to enjoy some fall colors.  Not only did we find some incredibly beautiful colors but we had the chance to gather leaves & pine cones & bring them home.  If you have been with me for a while then you know that last year at this time I didn’t have any fall where we were & I had to have some of my dear blogging friends mail me boxes of leaves & fall colors.  I certainly don’t have to do that now & I couldn’t be more thrilled about it.  The hubs kept asking me what on earth I was going to do with it all once I brought it home.  Well- make a wreath of course.

I just grabbed my leaves & pine cones, some ribbon & my hot glue gun & got to gluing on an unused grapevine wreath I had.

The hardest part was integrating the leaves with out crunching them.  I love the pops of color they add.

I just love that I was able to take things that are abundantly around me here in North Idaho & create this.

I needed a wreath to adorn my door for Thanksgiving.

Give Thanks Painted Signs

Earlier in the week I shared with you a teaser for a Blessed Painted Sign that I created for Marti over at SEWlicious Home Decor. When I was working on that project I had the idea to create this one too. It really helped spruce up the other areas of the house & bring a more “fall like” feel throughout.

For this I just chose my pieces – these because of the shape. I put several base coats of paint & then dry brushed some other colors on top to give it a more worn & rustic look. Then I stenciled on the pattern. Then I created my letters in Photoshop – suppose this could also be done in Word. Once I got the font & size the way I wanted I printed & cut the paper to size. Then I placed it on the block & drew over it with a ball point pen to indent the wood. Removed the paper & painted in the lines. Once it was dry I added the twine to hold the two pieces together. The whole thing was done & dry with in a couple hours. Not too bad.

Concord Grape Spread

One day we stopped by to see Joe- our farmer friend down the road. We wandered the farm looking at the last of his bounty for the season. It was a glorious day that I enjoyed so much.

Before we left with our bushel of apples we bought from him, he handed me a few handfuls of fresh concord grapes he picked the day before. The smell was absolutely HEAVENLY & the taste was even better.

We could have very easily eaten them all while we drove around that day & that would have been it for those grapes. But I held everyone off & saved them until we got home. I wanted to make something with them that would allow us to enjoy those fresh concord grapes for many days.

Concord Grape Spread

Ingredients

  • 2 cups washed grapes
  • 3 cups water
  • 1-1/2 cups granulated sugar

Instructions

  • Place all ingredients in medium-large stockpot
  • Place 2 spoons in the freezer to chill.
  • Bring pot to a boil & keep boiling about 40-45 minutes - keep stirring through this time.
  • You will see the grapes break down, the seeds floating around & the mixture thickening up.
  • Once you reach the 40 minute mark take one of your spoons from the freezer & dip it in your spread- return to the freezer for 3 minutes. Continue to boil mixture while you are waiting for the spoon.
  • Remove spoon & tip to see if it runs- if it doesn't- your spread is ready.
  • If it does run- continue to boil additional 5 minutes at a time & repeat the spoon test until it doesn't run.
  • Once it's ready - remove from heat. Place a mesh colander over a small bowl & pour your spread in carefully. Press through with your spatula to get as much of the spread into your bowl while straining those seeds & remaining skins out.
  • Once you have strained completely- toss the seeds & skins & transfer your spread to your jars.
  • Allow to cool overnight before using.
  • Store in refrigerator or in freezer for long term.

 You will LOVE having this on your morning toast or muffin.

Well if you are not- I have another last minute simple Halloween Snack for you. If you are ready but your mind is already thinking about what you will do with all that candy in the house- you can use this recipe for that too. 🙂

Heath Bar Popcorn Balls

Ingredients

  • 2 cups granulated sugar
  • 1-1/3 cups water
  • 1/2 cup light corn syrup
  • 1 tsp white vinegar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 18 cups approx 1-1/2 bags popped Popcorn
  • 1 cup chocolate chips
  • 3/4 cup Heath Toffee Bits
  • or you can take all those Heath Bar fun size bars & chop those up

Instructions

  • Prepare popcorn & set aside in an extra large bowl
  • In medium saucepan, combine sugar, water, corn syrup, vinegar & salt. Cook over high heat until it reaches 255 degrees (hard-ball stage)
  • Be patient- this can take a while - watch it closely & stir often.
  • Once it reaches 255 degrees, remove from heat & carefully stir in vanilla extract.
  • Carefully pour over popcorn & toss in your chocolate chips & Heath Toffee Bits
  • Stir, Stir, Stir until well incorporated - this will become more difficult as it starts to cool.
  • Once mixture is just cool enough that you can handle holding it for a short period of time- get your hands in there & start forming balls like you would with snow balls. It's going to get messy- it's okay. Work quickly- if it cools too much - it won't stick together to form the balls.
  • Place on cookie sheet lined with parchment to finish cooling.
  • Once cooled & hardened they are ready to serve.

Looking for last-minute ideas for Halloween Treats? We have been working on some simple & quick little Halloween snacks that can be thrown together easily & that kids will love.

I’m sort of obsessed with these Halloween double stuffed Oreos.

I tried eating a regular stuffed Oreo & I definitely missed all that extra filling. I think they should call the regular ones “diet” and double stuffed should be the normal amount of creamy filling going forward.

 The kids & I had the idea that it would be fun to get all the kids in the kitchen to whip up something tasty. We like to create some sort of goodie for them to enjoy while they pass out candy on Halloween.

These chocolate-covered Oreo cookies were incredibly simple to make. The kids love helping & it creates lots of fun family time in the kitchen.

What is the best way to store leftover chocolate-covered Oreo cookies?

Once the chocolate has hardened, these are fine to store at room temperature. Just make sure to place them in an airtight container or zip-top bag.

Can this recipe be doubled?

You bet – I highly recommend doubling this recipe if you are serving these at a party or gathering. They are delicious and go quickly.

HOW DO YOU MAKE Halloween Chocolate-Covered Oreo Cookies?

  1. Line a baking sheet with parchment & set aside.
  2. Insert the Popsicle sticks into the Oreos carefully so you don’t separate them.
  3. Place your candy melts in a microwave-safe bowl & heat at 50% for 1 minute at a time. Stirring in-between.
  4. After the first minute add food color if using white candy melts. Stir. Continue heating.
  5. Once the chocolate has melted, start dipping the cookies in the melted chocolate until adequately coated.
  6. Immediately sprinkle with desired decorations & set on the prepared baking sheet to cool and set.
  7. Once you have completed all the cookies you wish to make, place the baking sheet in the refrigerator for at least 2 hours to help set the chocolate.
  8. Once the chocolate has set the cookies can then be stored at room temperature.

Can these cookies be made ahead of time?

Sure – as long as they are stored in an airtight container, these should be fine if you wanted to make them 1-2 days ahead of your celebration.

Can I use chocolate chips instead of candy melts?

You can, but sometimes they don’t temper as well and the chocolate will seize – especially when working with white chocolate chips. You may need to add 1/2 to 1 tbsp of shortening or coconut oil to help the chocolate chips melt.

We had some fun this past weekend creating a super fun craft/Halloween Party Game & I just had to share it with you all.

As you know I have been planning all sorts of food lately for our little Halloween gathering but I had not really created anything for the kids “to do” while they visited & snacked.  So I was super excited when I was challenged by Cottonelle to create a fun Halloween Party Game using Cottonelle Triple Roll.  Once I was in the Cottonelle mindset – this idea of Mummy Bowling popped right up & I was super excited to get started.

I saved a bunch of plastic water bottles. Then I shopped at Target & picked up my Cottonelle Triple Roll.

Then I started just wrapping the tissue around the bottles to look like mummies.  I taped the ends to hold it on & glued on some googly eyes.

I originally was going to add a little water in each bottle to weigh them down.   But after playing with them while empty- we determined that it was plenty hard to knock them down due to the difficulty in aiming the roll of tissue we used as the ball.  It was so much fun trying to get them to knock down- we were laughing like crazy.

 It was great to create a fun game & have the kids help me through the whole process.  Can’t wait to play again on Halloween.

Honey Pumpkin Spice Black Bread

So I have this thing for bread. I love it! I can’t get enough, especially when it comes to specialty breads. I love the little loaves they bring in the nice warm basket when we dine out at the steakhouse. I literally ration out what I have to when the family starts wanting some- but for the most part, I don’t like to share. Since it’s been a while since we have been able to dine out like that- I decided I would just make my own. I really love the smell of the dough rising, I love kneading it & then there is the smell of it baking. Oh my- my stomach is growling as I’m writing this. So – you get it, I like bread- a lot. I don’t need to say it anymore. At least for now.

Honey Pumpkin Spice Black Bread

Ingredients

  • 1-1/2 c warm water
  • 2 tbsp butter - softened
  • 1/4 cup honey
  • 2 cups all-purpose flour or bread flour if you have it
  • 1-2/3 cups whole wheat flour
  • 1 tbsp cocoa
  • 1 tbsp granulated sugar
  • 1 pkt Starbucks Pumpkin Spice instant coffee
  • 1-1/2 tsp salt
  • 3 tsp instant yeast - I like Red Star Platinum or 3 tsp quick rise yeast - proofed
  • Oats to sprinkle

Instructions

  • In mixer bowl- combine all ingredients.
  • Stir together until dough begins to pull away from sides of bowl.
  • Knead dough - I found by hand is easier - about 10 minutes until it becomes smooth.
  • Place in lightly oiled bowl - turning to coat all sides. Cover & allow to rise until doubled in size- about 60 minutes
  • Divide your dough into 6-8 pieces. Shape into desired loaves or ball shapes
  • Dough will be fairly soft & sticky- use some flour on hands & work surface.
  • Like baking sheet with parchment & lightly coat with cooking spray.
  • Place loaves on prepared sheet & cover. Allow to rise another hour until lightly puffy. Not doubled in size
  • Bake in preheated oven at 350 degrees 20-30 minutes- until darker brown. Will sound hollow when tapped.
  • Cool on wire rack or serve warm with butter.

Enjoy!!!  These are great as a side to just about anything.

Pumpkin Spice Rocky Road Brownies

So I had a little fun at the store the other day. I found the Pumpkin Spice Marshmallows that are out for the season. YAY!!! I have been seeing them around & knew I wanted to try them. I have a serious marshmallow obsession. I grabbed a bag & did a little happy dance there in the isle. It was all I could do to NOT buy all the other flavors they had available there too. I knew exactly what I was going to do with these though. You guessed it…. I love Yummy Bar Recipes!

Pumpkin Spice Rocky Road Brownies

Ingredients

  • 1 batch of your favorite brownies
  • 1 bag pumpkin spice marshmallows
  • 1 cup chocolate chunks I bought mine in large bulk & just chipped off pieces
  • 1/2 cup slivered almonds

Instructions

  • Bake your brownies according to package directions in 10x10 square pan
  • When you remove baked brownies from oven turn on your broiler
  • While your broiler is getting hot, arrange all of the marshmallows on top of the brownies
  • Sprinkle chocolate chunks & almonds on top
  • Broil about 3-5 minutes or until marshmallows begin to brown - watch close, don't let them get too toasty
  • Remove & allow to cool a bit before serving.

Today I wanted to share with you a super simple Halloween treat that everyone goes crazy for.

I had originally shared this over at Reasons to Skip the Housework but I wanted to be sure to share here too in case you missed it.

I adapted this from my White Chocolate M&M Popcorn I made back in July.  The family has been begging me to make it again with the festive fall candies but I wanted something a little different.  I  used the super fun Halloween Oreo’s instead.  I love the pop of the dark cookie against the orange filling with the popcorn.  The kids love it & it’s so YUMMY!

Halloween Oreo Cookie Butter Popcorn

Ingredients

  • 1 bag microvave popcorn popped - 3-3.5 ounce bag
  • 1-2/3 cup white chocolate chips
  • 1/3 cup Chocolate Chip Cookie Butter
  • 1 tbsp shortening
  • 12 Halloween Oreos - roughly chopped

Instructions

  • Pop your popcorn & pour into large bowl- set aside
  • In double boiler- combine white chocolate chips, cookie butter & shortening
  • Heat & stir until completely melted, combined & liquefied.
  • Remove from heat & carefully pour over popcorn - toss quickly to coat & combine
  • Add in Oreos- continue to toss to coat & incorporate.
  • Store in airtight container at room temperature for 24-48 hours.

I created this hairstyle using Conair Curl Secret for my daughters.

Do you love the messy beach wave look?  Being a So Cal native- it’s my “go-to” style.  But you know- it’s not easy to achieve especially for my girls who want to wear their hair the same as I do when we go places.   They have waist length hair & they like it wavy/curly for anything special, when I say special- that means any time they are leaving the house.   Do you know how time consuming it is for me to curl hair for both of them??  By the time I’m done with them I barely have time to style my own hair.  But really- I love their hair when it has those soft messy beach waves.  We tried the Conair Curl Secret on them both & found safe & easy way for them to create that beautiful style on their own.

It’s about the size of a flatiron & about the same weight as a blow dryer. So easy for the girls to use.

 How to curl hair.   Choose your setting- for either waves or tighter curls.

This is the munchkin.  As you can see- she has naturally stick straight hair.

Curls fall out usually before we leave the house- so I was looking forward to seeing just how long this would last on her.

1 – Be sure to brush out the hair well so there are no tangles.  Hair needs to be clean & dry.

2- Since her hair is so long, we pulled the top half up to work on the bottom section first.

3 – Separate out  a 1/2″ – 1″ section of hair that you will be curling.

4 – Place your section of hair into the hair guide starting at the point where you want the curl to start.

For long hair like the munchkin here- I recommend you start several inches from the scalp.

5- Close the handle together – the hair will automatically be drawn into the curl chamber.

6- There will be 2 sets of slow beeps.  Wait for the 3rd rapid beep that tells you it’s time to release.

7- Release the handle & allow the curl to fall out of the curl chamber.

This is what we had after the first curl.

8- Repeat through the bottom section.

9 – Release the top section of hair & repeat the steps though all of it as well.

This is what we had when we had finished all of her hair.

10 – Shake out & use a pick lightly though the hair to loosen the curl & give that wave.

11- Add a little texturizer to keep those curls separated & beachy.

It turned out so pretty & I love that it was easy enough for even this 10 year old to do on her own.

Now they can do their own waves whenever they want to.

We then tried it on my older daughter’s much thicker hair- turned out GORGEOUS.

Loved that the waves stayed in until the next day – which typically doesn’t happen for the munchkin.

JELL-O® JIGGLERS Pumpkins ~ Halloween Party Snacks

There are some things in this world that bring instant happiness in my world. One of those things is JELL-O®.  I will never forget the first time my youngest tried JELL-O®.  She looked at me & said “WOW mom – this sure is bouncy!”  That cracked me up & made me really take notice of just how fun JELL-O® is for all ages.

As you have seen, I have been planning a little Halloween Party of sorts here for the kids & their friends before the trick-or-treating starts.  I have been testing out all sorts of recipes to serve.  I decided that since JELL-O® is so much fun & so versatile- I would get a little creative with the JELL-O® JIGGLERS for some really great Halloween Party Snacks.

I was inspired to twist things up a little bit & make these Pumpkins.

 

JELL-O JIGGLERS PumpkinsI also made some regular JELL-O® in Grape & Lime & layered it in these jars with some Whipped Cream & Gummy Worms.

I then topped them with some Pumpkin shaped regular JELL-O® JIGGLERS I cut with a cookie cutter.

Frosted Apple Pie Breakfast Cake

As we are coming to the end of the fresh produce season here, I am spending lots of time visiting the farm down the road picking up apples 40 pounds at a time.  I’m canning as many jars of applesauce, apple pie filling & apple butter as I can to see just how long it will take me through the cold months here.   At the same time I am using some of those things in my baking for the kids & their breakfast.  This time I decided to use some of that apple pie filling & make them a frosted breakfast cake.  Rarely do I add  the frosting for them but this one just seemed like the right recipe to do just that.

This has the perfect blend of cinnamon & apple.  You know my son & his obsession with all things cinnamon was loving this.

Frosted Apple Pie Breakfast Cake

Ingredients

  • 1/2 cup 1 stick butter -softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 2 large eggs
  • 1 tsp baking soda
  • 1-1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 cup homemade cinnamon brown sugar applesauce
  • 2 cups apple pie filling

Glaze

  • 1 cup confectioners sugar
  • 1-2 tbsp milk

Instructions

  • Preheat oven to 350 degrees
  • Spray 9x13 pan with cooking spray - set aside
  • Beat butter & sugars together until creamy. Add eggs & vanilla- beat.
  • Add in baking soda, flour - slowly beat into mixture
  • Stir in applesauce & apple pie filling until well combined.
  • Pour into prepared pan.
  • Bake 50-55 minutes or until toothpick test is clean.
  • Cool 20 minutes on wire rack in pan.
  • Whisk together glaze ingredients in small bowl & pour over cake.
  • Allow glaze to harden before serving.
  • Store in airtight container in refrigerator for up to 3 days.
  • Microwave 30 seconds before serving.

 

It’s a great fall recipe that your family will love to have in those cool crisp mornings.

Chocolate Gingerbread Cookie Bars

Remember last week when I shared with you my Caramel Gingerbread Ice Cream Cake? Well I used my favorite recipe for Chocolate Gingerbread cookies to make that. I wanted to share that recipe with you all here today because I love you guys & I know you will really LOVE these cookie bars. Plus- you won’t believe just how simple they are. You know how I love simple- right?!

Chocolate Gingerbread Cookie Bars

Ingredients

Cookies

  • 2-1/2 cups All-Purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp ginger
  • 1-1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp pumpkin pie spice
  • 1/2 tsp coarse sea salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1-1/2 sticks salted butter 3/4 cup
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1/3 cup molasses
  • 1 tbsp chocolate jimmies

For Glaze

  • 1 cup confectioners sugar
  • 1-2 tbsp milk depending on how thick or thin you want it

Instructions

  • Preheat oven to 325 degrees
  • Whisk flour, cocoa, ginger, cinnamon, nutmeg, pumpkin pie spice, salt, baking soda & baking powder in bowl.
  • In mixer- beat butter & brown sugar with paddle attachment until well combined & fluffy.
  • Beat in eggs & molasses.
  • Reduce speed to low & add dry mixture
  • Beat until well combined & pulled away from sides of bowl
  • Gather & press flat onto cookie sheet- making a smooth layer. (you will have one large cookie rectangle)
  • Score cut marks into the dough with a butter knife.
  • Sprinkle with chocolate jimmies
  • Bake for 10 - 12 minutes
  • Remove & allow to cool in pan on wire rack.

Add Glaze

  • Whisk glaze ingredients in small bowl & pipe on with pasty bag & small fine tip.

Crock Pot Cinnamon & Brown Sugar Applesauce

I love applesauce.  Do you love applesauce?  I always come across these recipes that call for it but because I never want to open a huge fresh jar of it for just a 1/2 cup or so- I end up not making the recipe at all.  Sooooo- I was thrilled when we ended up with a large amount of apples & I could make my own applesauce.  I decided to use the crock pot method because it’s just so simple.  I also decided to store some of it in small jars for recipe use – single serve type.  Then I picked up some larger jars that I used for the rest – which can be for the kids with breakfast or lunch. Problem solved & now I can make all the applesauce recipes I want  🙂 Definitely one of my best slow cooker recipes too.

Crock Pot Cinnamon & Brown Sugar Applesauce

Ingredients

  • 14 large apples I used a Jo Mac - locally grown
  • 1/3 c Lemon Juice
  • 1 c Brown Sugar
  • 3 tbsp Cinnamon

Instructions

  • Peel, core & cut your apples into large chunks
  • Place prepared apples & all other ingredients in crock pot on high.
  • Cover & cook about 6 hours- stirring every hour or so.
  • After about 5 hours of cooking - Spoon out remaining large pieces into a blender & blend until smooth. (or use emulsion blender)
  • Pour blended apples back in crock pot, stir well & let cook the last 30-60 minutes.
  • When done- transfer to prepared jars.
  • I store mine in the freezer until the day before I need it. Thaw in refrigerator overnight.

This is a deeper flavor than traditional applesauce but oh so good.

Fall Spice Hand Soap and Printable

Good Morning- Hope you all had a lovely weekend. I did something that I have been wanting to do for a very long time. I finally made my own scented hand soap in a super easy way. You see for the longest time I would buy the Pumpkin/Fall Spice scented hand soap & lotion from Avon. I love the smell so much & I get so sad when it runs out. Well since we moved I have not really been buying Avon so I never picked some up for the season. In fact – I don’t even know if they still offer it. But now I don’t have to worry- I figured out how to make my own.

I decided to make some printable gift tags for you all to download.

This way if you make some & then want to give it as a gift (which I recommend) you have everything you need.

Doesn’t it look pretty in this little container??  I picked it up at Target or Walmart- I can’t remember.

 

For the soap– fill your soap dispenser with your favorite unscented soap. I used Milk & Honey because it’s somewhat moisturizing.  Then I added about 2 tsp of Pumpkin Spice Scented Fragrance Oil.  I picked mine up on ebay for around $3 including shipping but I think you can get it at the craft store in the soap making isle.  Swirl it around- and there you go.  Yes- that simple & I’m kicking myself for not doing it sooner.

I made several different color tags so you could choose your favorite or use them all for multiple gifts.

I also made them in 2 different sizes depending on the size of your dispenser- whether it be tall or short.
