Gingerbread & Eggnog Monkey Bread

Do you like monkey bread? My family LOVES it. I have been making the same recipe for so many years – long before the blog, all the way back to before we had high speed internet. Yeah- I told you- a long time. The hubs was begging for it & I finally told him that I would only do it if I could twist it up a bit for the holiday & make it better. So I came up with Gingerbread & Eggnog Monkey Bread that is soooooo yummy. It truly is the perfect Christmas breakfast.

Top it with a little butter while it’s hot. Then I like to make an extra batch of the icing so we can dunk each bite. It’s incredible! Ours never really lasts long enough to have leftovers the next day. I like to make it the night before. Sometimes I just let it rise all night & then bake in the morning so it’s fresh out of the oven. Or you can bake the night before & just zap in the microwave for about 20 seconds before serving. Either way – it’s delish!

Gingerbread & Eggnog Monkey Bread

Ingredients

Bread

1/4 cup warm water
1/4 cup granulated sugar + pinch for yeast
1 pkt rapid rise yeast
2 tbsp shortening
Cooking spray like Bakers Joy
3/4 cup milk- warmed
1 tsp salt
1 large egg
3-1/4 cups all-purpose flour

Coating

1 stick butter
1 cup brown sugar
2 tsp cinnamon
1/2 cup pecans - chopped
2 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp grated nutmeg

Glaze

1/4 cup eggnog
1 cup confectioners sugar
1 tsp nutmeg

Instructions

Combine warm water & pinch of sugar in small bowl
Sprinkle yeast over top - stir
Let yeast mixture sit approx 5-10 minutes - it should look frothy when done
Place shortening, warm milk, sugar, salt & egg in mixer bow with dough hook attachment - mix on medium
Add yeast mixture & mix well
Slowly add flour - kneading on medium for about 1-3 minutes
Place in a greased bowl - cover & let sit in a warm place to rest about 20 minutes
Spray your bundt pan with cooking spray
Now make the coating by melting the butter in one small bowl
In another small bowl combine remaining coating ingredients & mix with a fork
Sprinkle a small portion of this mixture in the bottom of the bundt pan
When dough is done resting - pinch off 1/2 -1 inch pieces & roll into balls
Dunk each ball of dough in melted butter & then roll in sugar & spice mixture & place in bundt pan
Continue until all the dough is coated
Cover with plastic wrap & let rise about 1 hour or until double in size
Preheat oven to 350 degrees
Bake monkey bread 30-35 minutes
Allow to cool in pan at least 30 minutes
Invert onto plate to remove
Make icing by combining all ingredients & whisking until smooth
Drizzle over the top of the bread or use as a dipping sauce

Slow Cooker Dinner Rolls

I love utilizing my slow cooker whenever I can. It frees up my oven for other things & makes life in the kitchen simpler. So a couple years ago I learned how to make bread in the slow cooker. It was definitely a game changer for me. I love fresh bread & being able to utilize my slow cooker to make it just puts a smile on my face. Since we are just 2 days away from Thanksgiving – I figured these Slow Cooker Dinner Rolls might be a recipe worth sharing. You can have these going while your oven is occupied with the turkey.

Do you love the smell of freshly baked bread. I have a slight obsession with it. I would make fresh bread every day if I could. I like this recipe because it’s just enough for one night for our family of 5. We don’t have leftovers so we can all enjoy it while it’s fresh & warm. Perfect way to eat bread if you ask me.

Slow Cooker Dinner Rolls

Ingredients

1 cup warm milk 95-115 degrees
1/4 cup butter - melted
3/4 cup honey
2-1/2 to 3-1/2 cups all purpose flour
1 tbsp granulated sugar
1 tsp salt
1 tbsp rapid rise yeast
Melted butter for serving

Instructions

Line slow cooker with parchment & lightly spray with cooking spray.
Combine yeast, sugar & milk in mixer bowl. Wait 5 minutes & then mix.
Add salt & butter & 1/2 the four - combine using dough hook.
Let sit 2 minutes to rest.
Add remaining flour, & honey. Mix to combine.
Knead in mixer with dough hook 4-5 minutes (or 10 min by hand) until elastic - add more flour if needed until it becomes elastic - not sticky
Allow dough to rest 5 minutes.
Pull off pieces & shape into rolls & place in slow cooker. -It's okay to double the layers if your cooker is smaller.
Cover & cook on high 1-1/2 hours or until firm.
Remove lid & do not allow condensation to drip on bread.
Lay a paper towel over cooker top & recover. Wait 10 minutes.
Remove & enjoy.

Pumpkin Pecan Bread {w/ cream cheese glaze}

Oh well – it’s time for some serious pumpkin recipes. Pumpkin is so packed with nutrients that I figure if I use it in enough recipes – we may get some of the benefits from it. Even if a lot of what we are making is goodies. It still has a little health benefit??!! No?? Well that’s okay – Pumpkin Pecan Bread w/ cream cheese glaze is so amazing, it doesn’t matter. The whole family loved having this for breakfast. It doesn’t get any more fall than a good ol’ pumpkin bread recipe.

You will just love how easy this is to make. Throw it all in the mixer & then bake. Nothing complicated – which is great for these busy days as we get closer to the holidays. Imagine enjoying this on maybe….Thanksgiving morning. I like to have several loaves for guests & then take some out to the neighbors the day before Thanksgiving so they can have breakfast already handled for the next morning.

Pumpkin Pecan Bread {w/ cream cheese glaze}

Ingredients

1 cup pumpkin puree not pie filling
2 eggs
1/2 cup vegetable oil
1/3 cup water
1-1/2 cup granulated sugar
1-3/4 cup all-purpose flour
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp pumpkin pie spice
1/8 tsp ground ginger
1/2 cup pecans

Icing

2 ounces cream cheese
1/2 cup confectioners sugar
1 tsp vanilla extract
milk

Instructions

Preheat oven to 350 conventional/ 325 convection
Mix together pumpkin, eggs, oil, water & sugar in mixer bowl until well blended
In separate bowl, combine flour, baking soda, salt, spices - then add to mixer bowl - beat well about 30 seconds
Add pecans
Spray loaf pans (this made 3 mini loaves) with Bakers Joy
Fill pans equally with batter
Bake in center of oven 50-60 minutes
Cool in pan on wire rack
Remove from pans
Place all glaze ingredients in small bowl & whisk until well blended.
Use just enough milk to bring it to the consistency you desire - I used about 2-3 tbsp.
Drizzle over the tops of the loaves
Store in refrigerator

Garlic & Herb Croutons

The other day we were making salad as a side dish. There is this joke in the house that I like to have a little salad added to my bowl of croutons. If you know me – then you know I’m not a huge fan of salad in general. But I will on occasion have a garden salad with the family – as long as I have plenty of croutons. But this particular day we didn’t have any. So I finally did what I have been saying I would do for a very long time. I made these Garlic & Herb Croutons & I can’t believe I have been paying for them for all these years. Really – it was so simple- they tasted fabulous & I didn’t have to worry about having bread go to waste. The best part is that I was able to have my bowl of croutons garnished with a little salad along with the family. Looking for Easy Family Dinner Ideas?

Okay – so I said it was easy. When I say easy, I mean crazy easy!!!

Cut, toss with your addins & bake. Done! Literally! There is no reason why you should be buying croutons – EVER!

I think I may now take them & crunch them up to use as topping for other things too. YUM!

Now I’m hungry as I type this. I may need to go find a snack. Just looking at these makes me want some!

Garlic & Herb Croutons

Easiest homemade crouton recipe!

Ingredients

½ loaf french bread 1-2 days old is perfect
¼ loaf pumpernickel bread
⅓ cup olive oil
2 tbsp granulated garlic
2 tbsp Mrs. Dash seasoning
1 tbsp parsley

Instructions

Preheat oven to 375 conventional/ 350 convection
Cut bread into cubes & place in large bowl
Slowly drizzle olive oil over bread - turning to coat
Add seasonings & continue to toss to be sure to distribute the seasonings & oil as evenly as possible
Place on large baking sheet & bake for 15-20 minutes
Allow to cool completely on baking sheet before transferring to airtight container
Will store well up to 2 weeks in pantry

Notes

These can be made in the air fryer - just cook at 350 degrees for 10-12 minutes, stirring after the first 5 minutes. You may need to reduce the recipe or work in batches depending on the size of your air fryer.

Adapt seasonings as desired.

Easy Garlic Bruschetta

It’s so nice that the weather is warm & it’s so inviting to be outside. The week before last we were in the 50’s with rain. Then the sun made an appearance last week. I can’t complain – I’m loving that it’s not over 100 degrees outside. However, it’s still warm enough that I don’t want to eat heavy. When it’s hot I certainly don’t like heavy food. So I wanted to share with you all today my super simple recipe for Easy Garlic Bruschetta. It’s the perfect summer appetizer. Looking for Easy Family Dinner Ideas?

We LOVE garlic. We add large amounts to almost every dish. Do you like garlic?

After I added this to the toasted bread I decided to add a little bit of my Sweet Garlic Avocado Dip to the top. The blend of sweet with the garlic bruschetta was perfect.

I could snack on this all day long! Perfect summer appetizer.

Easy Garlic Bruschetta

Ingredients

2 medium tomatoes- diced
1 tbsp minced garlic
1 tbsp minced onions
1 tbsp granulated garlic
1/8 cup olive oil
2 tbsp chopped parsley
1/4 tsp salt
1/8 tsp black pepper
2 tbsp grated parmesan cheese
1 baguette loaf
4 tbsp melted butter

Instructions

In a medium bowl- combine all ingredients except the baguette & butter.
Toss to combine
Cover lightly & place in refrigerator for at least 1 hour.
While waiting - slice your baguette into 1" wide slices
Brush with melted butter & broil several minutes to toast & bring to a golden color
Remove & allow to come to room temperature
Top with 1 tbsp bruschetta
Add a little drizzle Sweet Garlic Avocado Dip- optional

Personal Patriotic Pepperoni Pizza for An All-American Lunch

Hey there!! Do you have little ones at home who like to help in the kitchen? Looking for Easy Family Dinner Ideas? I know that for us it was super important to get the kids comfortable in the kitchen early on. Now that they are teens – they help immensely in the kitchen. I love having them in there with me through the whole prep, cooking & clean up too. So I was super happy when the wonderful Carrie from Kenarry: Ideas for the Home decided to share this awesome recipe for Personal Patriotic Pepperoni Pizza for An All-American Lunch & showed the process with her kids.

Hi, I’m Carrie from Kenarry: Ideas for the Home sharing a fun lunch idea for you and your kids to try this summer. As you know, Memorial Day is just around the corner, kicking off the summer holiday season full of American flags, apple pie, fireworks and backyard barbecues. What could be more festive to add to your celebrations than Personal Patriotic Pepperoni Pizza? Red, white and blue foods are a wonderfully fun way to celebrate Memorial Day, Independence Day and Labor Day. Personal Patriotic Pepperoni Pizza is so easy to make, even a three year old can do it!

My sons and I love to get creative with our lunches. The boys are toddlers, so we usually only venture as far as using assorted cookie cutters on peanut, butter and jelly sandwiches. However, with all the summer flag holidays coming up, we decided it would be really fun to try making a red, white and blue lunch one day. We gave it some thought and came up with making our own pizzas into little American flags. With these simple instructions, your child will love making his or her own Personal Patriotic Pepperoni Pizza for lunch too!

How to Make Personal Patriotic Pepperoni Pizza

What you need:

Bread
1 small can of pizza sauce
Mozzarella string cheese
Pepperoni
Cream cheese
Blue food coloring

Instructions:

1. Preheat the oven to 375 degrees. Lightly grease a cookie sheet with cooking spray. 2. Put the bread in the toaster on a medium-low heat setting. You want the bread to just be lightly toasted to act as the crust for your Personal Patriotic Pepperoni Pizza. 3. Spread pizza sauce on 3/4 of each bread slice leaving the upper left quadrant empty.

4. Cut the string cheese in half. Tear each half into little strips, approximately 2 inches long. Place these shorter pieces horizontally on top of the pizza sauce on the upper right of the Personal Patriotic Pepperoni Pizza flag. Use full length strips of string cheese to be the longer white stripes at the bottom of the flag.

5. Combine 2-3 tablespoons of cream cheese with drops of blue food coloring in a small bowl. We used 7 drops of blue food coloring for our Personal Patriotic Pepperoni Pizzas. You could use more if you’d like a darker or more vibrant blue. Next time, I might try adding just a touch of red food coloring to create a darker blue that’s more like an actual American flag.

Carefully spread the cream cheese on the upper left quadrant of the bread. Try not to run your knife through the pizza sauce, like my son did!

6. Cut the pepperoni into long thin strips using a sharp knife or kitchen shears. Place them horizontally between the white string cheese pieces to act as the red stripes on the flag. If you’re a vegetarian, you can leave the pepperoni off completely and have the pizza sauce be the red stripes. You could also replace the pepperoni with long strips of red pepper.

7. Tear any string cheese remaining from step 4 into small dots. Place them on top of the blue cream cheese corner to be the stars on your Personal Patriotic Pepperoni Pizza flag.

8. Bake the pizzas at 375 degrees for 10 minutes or until the cheese is melted. While the pizzas were baking, we created a little red, white and blue side dish by combining dried cranberries, dried blueberries and yogurt covered raisins in small cups.

The dried fruit cups looked great alongside the Personal Patriotic Pepperoni Pizza, though I wish you could differentiate better between the cranberries and the blueberries.

Your children will enjoy making this lunch for the 4th of July, Memorial Day or Labor Day. I know my three year old son loved making his own Personal Patriotic Pepperoni Pizza for lunch. I’m not sure how pleased Betsy Ross would be with his American flag, but he certainly was!

Enjoy this festive lunch — and have a wonderful Memorial Day remembering the men and women who’ve fought so hard to preserve the American flag and our freedom!

Irish Soda Rolls

Are you looking for a SUPER easy Irish recipe for St. Patrick’s Day? One thing I always make is Irish Soda Bread. However sometimes I want a little more than just a slice. We like to have some with our Corned Beef & Cabbage – it’s the perfect compliment for a truly Irish meal. I decided that this time I would make rolls- so everyone gets a little more than just a slice. They turned out so soft & wonderful. I like to have leftover rolls with jam in the morning. So good!

I ended up with 8 in this batch – however they are good size.

You could probably get closer to 10-12 if you portion your dough out smaller.

Irish Soda Rolls

Ingredients

5-1/2 cups all-purpose flour
1-1/2 tsp salt
1-1/2 tsp baking soda
2-1/2 cups buttermilk

Instructions

Preheat oven to 425 degrees
Lay a sheet of parchment paper over baking sheet. Set aside.
Mix flour, salt & baking soda together in mixer bowl.
Make a well in the center- pour in your buttermilk.
Mix with the paddle attachment of your mixer or you can kneed in by hand until the dough is soft. Should be fairly wet but not sticky.
Turn dough on lightly floured surface & kneed 3-4 times to smooth.
Portion out & shape into 8-12 flat circles
Place on prepared parchment lined sheet & cut a cross from edge to edge on top.
Bake 25-30 minutes or until golden. When it sounds hollow when tapped- it's ready.

Irish Bannock

Do you like making bread? I soooooo love making bread. I would do it everyday if I had the time. The whole process of kneading & the smell. Oh my- swoon. So since I was just itching for an excuse to make some bread- I decided to bake some Irish Bannock for the all of us to enjoy. The fact that it’s March really did give me the perfect excuse to bust out my Irish recipes & create a few for all to enjoy!

This is a dense bread – a lot like soda bread. The raisins really make it great for breakfast.

I have such a fondness for making bread- of all kinds.

Makes the house smell amazing!!

Isn’t it gorgeous??!!! Sigh……I really do love bread. 🙂

Irish Bannock

Ingredients

2 cups all-purpose flour
2 tbsp granulated sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
3/4 cup raisins

Instructions

Preheat oven to 375 degrees
Line baking sheet with parchment & spritz lightly with cooking spray
Combine sugar, flour, baking powder, baking soda & salt in mixer bowl with dough hook.
Combine on low while slowly pouring in your buttermilk until dough is soft
Add raisins
Turn dough on slightly floured surface & knead for approx 5 minutes or until smooth
Form dough into a 6-7 inch round & place on prepared baking sheet
Using kitchen scissors or a large knife - cut a deep cross into top
Bake approx 40 minutes or until it is golden brown & sounds hollow when tapped.

That’s it! So simple – just the way I like it.

Garlic & Cheddar Pipeline Porter Beer Bread

Don’t you just love the smell of bread baking in the oven? I love it!!! I don’t always have time to make bread from scratch though. So I often pull out my beer bread recipe & play with it to fit the dish we are having. I always love the ease of this particular recipe because it’s ready to go in the oven so quickly that it often takes longer for the oven to heat than it does to prepare it for baking. You really can’t beat that when it comes to fresh homemade bread. It’s the best side with dinner because you don’t have to plan hours ahead to have it with your meal. So much flavor too. I love having it fresh & hot out of the oven.

Garlic & Cheddar Pipeline Porter Beer Bread

This went so well with our soup the other night- OH MY!

I decided to use this great little IPA – Pipeline Porter from the Kona Brewing Company. The flavor it gives to the bread is great.

Garlic & Cheddar Pipeline Porter Beer Bread

Ingredients

3 cups self rising flour
3 tbsp granulated sugar
1 bottle Pipeline Porter beer
1/2 cup shredded sharp cheddar cheese
1/2 tbsp minded garlic
1 stick butter

Instructions

Preheat oven to 350 degrees
Spray large glass loaf pan with cooking spray
Mix flour, sugar & beer in mixer bowl with dough hook attachment until combined & dough like
Slowly mix in cheese & garlic
Transfer to prepared pan.
Bake 40 minutes
Melt butter in microwave.
After bread has baked 40 minutes- remove from oven & pour 2/3 of the melted butter over the top
Return to oven & bake another 20 minutes.
Remove & pour remaining butter over the top & allow to soak in & cool until it is able to be handled.
Slice gently & serve warm.

Easy Homemade Bruschetta

Kristyn from Lil’ Luna here. I’m so excited to be doing a guest post for Gina. She’s a new friend that I already adore and love. Her recipes are phenomenal and her pictures are gorgeous!! She’s pretty much AWESOME!!

Well, today I am going to be sharing with a super easy and quick appetizer idea. My family is huge on appetizers, and we are always looking for good ones. This Easy Bruschetta recipe happens to be one of those…

Not only is it DELICIOUS, but it is so simple to make. 🙂

Here is how you can make it too:

EASY HOMEMADE BRUSCHETTA:

INGREDIENTS:

– 1 – 32 oz. can Italian Diced Tomatoes

– 6 cloves Garlic

– 4 TB Olive Oil

– 3/4 cup basil

DIRECTIONS:

1. Put all ingredients in a bowl and mix right before serving.

For easy bread pieces to go with the bruschetta, I’ll show what we do…

1. Buy hogi sandwich rolls. Cut in slices and place on a cookie sheet.

2. Butter slices and sprinkle with Parmesan cheese. Broil on HIGH for 2-5 minutes (dependent on how fast and hot your oven is).

Serve the bread pieces with your bruschetta.

Talk about an easy, quick and yummy appetizer! I promise you’ll love this.

It is a family favorite that can be made so easily and tastes so good!

Summer Squash Chocolate Loaf

I’m sharing my recipe for Pumpkin CinnaChip Blondies over at The 36th Avenue today. I will be posting there monthly as a food contributor! I’m so excited to be working with Desiree. She is such a dear blogging friend. Head on over there & check it out.

A bit ago one of the guys at the station brought the hubs one giant summer squash & one giant zucchini from his garden. I was so thrilled when the hubs brought them home. They sat on the counter for a while just because I knew that prepping them would be a chore. I wasn’t really worried about them going bad because they were given to us so fresh. I knew that the ones you pick up at the store aren’t even close to being that fresh. So there they sat. Finally I was tired of looking at them & needed to make something for the kids for breakfast the next day. So while the hubs was traveling- the boy & I decided to get them off the counter & prep them for baking. Peeling- cutting & grating consumed a good hour of two or our day. I like to portion out what I need for recipes into individual packages for the freezer. I made sure to leave out some of the summer squash because I had a particular recipe in mind.

Summer Squash Chocolate Loaf

Summer Squash Chocolate Loaf

Ingredients

4 cups grated summer squash
3 eggs
1 cup canola oil
2 tsp vanilla extract
1-1/2 cups granulated sugar
3 cups all-purpose flour
1/2 cup cocoa powder not Dutch processed
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
3/4 cup chocolate chips

Instructions

Preheat oven to 350 degrees.
Line 2 loaf pans with parchment & lightly spray cooking spray- set aside.
In large bowl- sift together sugar, flour, cocoa powder, cinnamon,baking soda & salt.
Whisk in eggs, oil & vanilla.
Mix in with large spatula. Mixture will be very dry & pasty until you add the squash
Fold in squash & then chocolate chips.
Transfer to your prepared pans & smooth out.
Bake for 55-60 minutes or when toothpick test comes out clean.

Slow Cooker Black Bread

A couple weeks ago I shared with you all my Honey Pumpkin Spice Black Bread. It was great but I really wanted to see if I could do it in the slow cooker because sometimes I want to make bread & my main dish at the same time & I don’t have a double oven. Sooooo- I decided to create this recipe & it turned out great.

Oh they were the best dinner rolls with our BBQ chicken breast & a baked potato.

They were also great with the Concord Grape Spread I shared last week.

It’s such a simple recipe- I was so pleased with how well this turned out.

Slow Cooker Black Bread

Break out the slow cooker. This is an easy to make black bread, no oven needed.

Ingredients

1 cup warm milk
1 tbsp granulated sugar
1 tbsp Rapid rise yeast - I like Red Star Platinum
2½ cups all-purpose flour
¼ cup butter - melted
2 tsp molasses
1 tsp salt
¾ cup honey
1 tbsp cocoa
1 pkt Starbucks House Blend instant coffee
Oats to sprinkle

Instructions

Line slow cooker with parchment & lightly spray with cooking spray.
Combine milk, sugar & yeast in the mixer bowl. Wait 5 minutes to proof & then mix.
Add ½ of the flour, butter, molasses & salt - combine using dough hook.
Let sit 2 minutes to rest.
Add remaining flour, honey, cocoa & coffee. Mix to combine.
Knead in mixer with dough hook 4-5 minutes (or 10 min by hand) until elastic.
Allow the dough to rest 5 minutes.
Pull off pieces & shape into rolls & place in slow cooker. -It's okay to double the layers if your cooker is smaller.
Sprinkle with a little bit of oatmeal.
Cover & cook on high 1½ hours or until it sounds hollow when tapped with your fingernail.
Remove lid & do not allow condensation to drip on bread.
Lay a paper towel over cooker top & recover. Wait 10 minutes before removing.

So I have this thing for bread. I love it! I can’t get enough, especially when it comes to specialty breads. I love the little loaves they bring in the nice warm basket when we dine out at the steakhouse. I literally ration out what I have to when the family starts wanting some- but for the most part, I don’t like to share. Since it’s been a while since we have been able to dine out like that- I decided I would just make my own. I really love the smell of the dough rising, I love kneading it & then there is the smell of it baking. Oh my- my stomach is growling as I’m writing this. So – you get it, I like bread- a lot. I don’t need to say it anymore. At least for now.

Honey Pumpkin Spice Black Bread

Honey Pumpkin Spice Black Bread

Ingredients

1-1/2 c warm water
2 tbsp butter - softened
1/4 cup honey
2 cups all-purpose flour or bread flour if you have it
1-2/3 cups whole wheat flour
1 tbsp cocoa
1 tbsp granulated sugar
1 pkt Starbucks Pumpkin Spice instant coffee
1-1/2 tsp salt
3 tsp instant yeast - I like Red Star Platinum or 3 tsp quick rise yeast - proofed
Oats to sprinkle

Instructions

In mixer bowl- combine all ingredients.
Stir together until dough begins to pull away from sides of bowl.
Knead dough - I found by hand is easier - about 10 minutes until it becomes smooth.
Place in lightly oiled bowl - turning to coat all sides. Cover & allow to rise until doubled in size- about 60 minutes
Divide your dough into 6-8 pieces. Shape into desired loaves or ball shapes
Dough will be fairly soft & sticky- use some flour on hands & work surface.
Like baking sheet with parchment & lightly coat with cooking spray.
Place loaves on prepared sheet & cover. Allow to rise another hour until lightly puffy. Not doubled in size
Bake in preheated oven at 350 degrees 20-30 minutes- until darker brown. Will sound hollow when tapped.
Cool on wire rack or serve warm with butter.

Enjoy!!! These are great as a side to just about anything.

Caramel Apple Spice Bread

So what do you do when you have 40 pounds of apples on hand?? Well you start by making lots & lots of Apple Pie Filling. Then you start using that filling in all sorts of recipes. Or at least that’s what I have been doing since we picked up our apples from the orchard down the street. I couldn’t be happier with the smell of cinnamon & spice filling my house each day. Apples & cinnamon are a top favorite of the hubs & my son- so they are in absolute heaven here at the moment.

I needed to whip up something quick for the kids for breakfast the other day so I decided to make this…

Caramel Apple Spice Bread

This has all the apple, spiced, cinnamon, fall flavor you are after this time of year.
Moist & perfect with your morning coffee.

Caramel Apple Spice Bread

Ingredients

3 eggs
1 cup canola or vegetable oil
2 cups granulated sugar
2 cups apple pie filling I used my Caramelized Pear Pie Filling only substituted the pears for apples
1 tsp vanilla extract
1 tsp salt
3-1/2 cups flour
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
Cinnamon/sugar mix to sprinkle on top

Instructions

Preheat oven to 325 degrees.
Grease 2 loaf pans- set aside.
Combine all ingredients (except the cinnamon/sugar mix) in mixer bowl & beat well until completely combined into a thick batter.
Spoon batter into your prepared pans
Sprinkle with cinnamon/sugar mixture
Bake 70-80 minutes or until toothpick test is clean
Cool in pan on wire rack
Remove from pan & store wrapped in foil at room temp.

Last week when I shared with you my Gluten Free Chocolate Strawberry Gooey Bars I mentioned that I would be sharing more easy recipes made with Pillsbury’s gluten-free line of products.

I was sent all the varieties to try out & so this time I decided to work with the pizza dough. The kicker here is that we have been in the low to mid 90’s & there was NO WAY I was going to turn on my oven when we don’t have AC.

Butternut Squash Bread {Recipe}

As most of you know we have been getting weekly produce baskets from our local co-op. It’s really cool because we have received things we wouldn’t normally seek out & purchase at the store. This has had me brainstorming & stepping way out of my comfort zone when it comes to cooking & baking. I think it’s fairly obvious that I have a sweet tooth & I don’t venture out when it comes to my veggies. I definitely have an aversion to most vegetables. I’m trying to work on it. That is part of why I love the co-op so much.

So one of the things we had in our basket was butternut squash. I thought about it, searched for recipes & wasn’t really coming up with anything that made my mouth water. So I pulled out my old recipe box that I have stuffed full of old tried & true things that my late mother-in-law passed on to me when I first came into the family. I found her zucchini bread recipe & figured I could try it out with the squash & see how it turned out. I was very happily surprised & it’s a great way for us all to get more of these veggies that we wouldn’t normally eat.

It really did come out wonderful. I am so happy I had the chance to try it out.

Butternut Squash Bread {Recipe}

Ingredients

3 eggs
1 cup canola oil
2 cups granulated sugar
2 cups grated butternut squash
1 tsp vanilla extract
1 tsp salt
3-1/2 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
3 tsp cinnamon

Instructions

Preheat oven to 325 degrees.
Spray 2 loaf pans with cooking spray- set aside.
Combine all ingredients in given order to mixer & beat until combined well.
Transfer to prepared pans.
Bake for 65-75 minutes.
*makes 2 loaves- freezes well.
