Easy Strawberry Shortcake Cookies are the perfect spring & summer dessert. Soft & chewy sugar cookies topped with delicious vanilla frosting & fresh strawberries. These taste just like your favorite old-fashioned strawberry shortcake.
Who loves strawberry shortcake? Growing up in Southern California, we had access to some of the freshest strawberries for a good portion of the year. One of my favorite things to make with those strawberries was, of course, strawberry shortcake. But over the holiday weekend, I decided that I wanted to take that nostalgic flavor & change it up a bit. I made these Easy Strawberry Shortcake Cookies that were AMAZING!
Everyone loved these! But honestly, who wouldn’t when you have cookies topped with creamy frosting & fresh strawberries? These cookies were the perfect addition to our celebration & they were so incredibly easy to make.
Strawberry Recipes
I started with my classic, soft & chewy sugar cookie recipe. Once they were cooled, I used new Pillsbury™ Filled Pastry Bags in vanilla to add the frosting to the top of each one. Then I added fresh strawberries. I also decided that some fresh blueberries would be pretty too. (especially given the holiday) That’s what I love about these cookies, they are not only delicious but versatile too. You can’t beat cookies topped with frosting & fresh fruit.
I picked up my Pillsbury Filled Pastry Bags in the frosting section at Walmart. I loved how it makes baking so much easier. No need for all the special tools. It’s all right in the box & ready to go. Plus it’s filled with our favorite Pillsbury frosting, which really helps when making treats quickly. No one wants to spend all day in the kitchen when the weather is so nice.
Berry Cookies
If you wanted to save some time, you could even pick up some sugar cookies from the bakery at Walmart while you are there & eliminate the baking altogether. That would make this recipe even faster for those times when you have guests showing up in a couple hours & have so much to do. You can also find Pillsbury Filled Pastry Bags available in Chocolate & Cream Cheese flavors too. Think of the flavor combinations you could create with those! DELISH!
Can we just talk about the flavor of these cookies for a moment? The combination of the soft & chewy sugar cookie & that rich & creamy frosting is enough to make my eyes roll to the back of my head. But add fresh berries on top & these really are showstoppers! They are perfect for any holiday or birthday celebration. You could even serve these at a wedding or baby shower too.
Easy Strawberry Shortcake Cookies
For this recipe you will need the following…
- Pillsbury Filled Pastry Bags – in vanilla
- All-Purpose Flour
- Baking Powder
- Granulated Sugar
- Eggs
- Butter
- Vanilla Extract
- Fresh Strawberries
You know what I really like about these? The Pillsbury Filled Pastry Bags make baking a breeze. My girls can take over the cookie decorating & I can just enjoy them. Not a bad gig if you ask me!

Fresh Strawberry Cookies
Easy Strawberry Shortcake Cookies
Ingredients
- 1 Pillsbury Filled Pastry Bags - Vanilla
- 3 1/2 cups Sifted All-Purpose Flour
- 2 tsp Baking Powder
- 1 1/2 cups Granulated Sugar
- 2 Eggs
- 2 sticks Butter (1 cup)
- 2 tsp Vanilla Extract
- 1/4 cup Granulated Sugar to coat
- 2-3 cups sliced fresh strawberries
Instructions
- In a bowl, stir together flour & baking powder. Set aside.
- In mixing bowl, beat together butter & sugar until fluffy.
- Beat in eggs & vanilla.
- Stir in flour mixture, a third at a time to make a stiff dough.
- Preheat oven to 350 degrees F
- Scoop a ball of dough, roll into a ball & roll in sugar to coat.
- Bake on non-stick cookie sheet for 8 minutes
- Cool completely on pan before transferring to a wire rack before decorating
- Once cooled, use Pillsbury Filled Pastry Bags to swirl on the frosting on top of each cookie
- Place several slices of strawberries on top of frosting - enjoy!
