What Is A Cookie Croissant?
Stéphane Louvard of Maison Louvard bakery in Paris came up with a Crookie – a cookie croissant or “croissant pur beurre garnit d’une généreuse pâte à cookie mi-cuite” – pure butter croissant accompanied with generous half-baked cookie dough.
It is basically a flaky croissant cut in half horizontally and stuffed with buttery chocolate chip cookie dough and then topped with the same dough. The croissant is then baked and served warm.
This Parisian bakery on rue de Châteaudun had award-winning croissants even before they invented a croissant cookie! In 2022, they were #7 for the best croissant title.
I’ve heard rumors that Maison Louvard Boulangerie is closed now (however the website is still operating) so you may only have the chance to try this viral recipe idea at home.

- Croissants. You can use plain or almond croissants from a bakery. Make sure to get fresh croissants or a maximum of a day-old croissant. Store-bought croissants from a grocery store are the easiest way to go, but if you want to flex your pastry skills, you can make them from scratch. The best croissants will be from that small bakery on the corner where a very passionate person who loves baking makes them every day from scratch at 4 am.
- Chocolate chip cookie dough balls (you’ll need 16 dough balls). You can use store-bought premade cookie dough or make it from scratch following your favorite cookie dough recipe (even without chocolate chips). Try my sugar cookie dough or gluten-free eggless cookie dough.

How To Make Cookie Croissants
1: Prep The Croissants
- Preheat the oven to 350F. Line a baking sheet with parchment paper.
- Slice the croissants in half lengthwise – stopping when they are cut approximately ¾ of the way through.
2: Add Cookie Dough To Croissants
- Take one ball of cookie dough and break it into smaller pieces.
- Stuff the smaller pieces of the cookie dough into the cut croissant like you are stuffing a sandwich.
- Break apart another cookie dough ball and spread more pieces of cookie dough on top of the croissant.
- Place the croissants on a prepared baking sheet.
- Repeat with the remaining cookie dough and croissants.
3: Bake Cookie Dough Croissants
- Bake for 10-12 minutes in the preheated oven or until the cookie dough is baked and lightly golden brown on top.
- Allow the croissants to cool slightly before serving.
- Serve warm with a dollop of your favorite ice cream and melted chocolate drizzle. A glass of cold milk or a cup of coffee is a must too, to do it the French way.
To Make Edible Chocolate Chip Cookie Dough From Scratch
- To make your own cookie dough, you will need: flour, baking soda, baking powder, salt, unsalted butter (melted butter), white sugar, brown sugar, egg, vanilla extract, and chocolate chips (dar, semisweet, or milk chocolate).
- For extra caramel flavors, you can use brown butter.
- You simply mix dry and wet ingredients separately, then combine them, and fold in chocolate chips. Mix by hand or use a stand mixer fitted with a paddle attachment.
- Then the cookie dough is ready to be loaded into croissants and baked.
Storage
Keep baked cookie croissants at room temperature in an airtight container for 2 days or in the fridge for up to 5 days. Reheat in a microwave or air fryer (1 minute).
You can freeze leftover cookie croissants for longer storage. Let them cool completely, wrap tightly each of the croissant cookies, and freeze in a freezer bag for up to 2 months. Thaw overnight before serving and warm up for a few seconds.
To make ahead: Assemble the cookie croissants ahead of time and store unbaked cookie croissants in the freezer until ready to bake.

- Costco croissants work just fine, but bakery croissants will be more buttery.
