Italian Lentil Soup
Living in two places that are 6 hours apart is taking its toll on my schedule. The hours are limited already & then add all the other running around while the hubs is away & I’m tapped out. Which is why I love dinners I can make in less than 30 minutes. You know how it is. You just get home, you’re exhausted & the last thing you want to do is cook & then clean. I hear you – I really do. Which is why I try to create simple dinners that are not only delectable but are easy to clean up too. My go-to recipe in these situations is usually a soup of some sort. As much as I love a good crockpot soup, on those super busy nights, I just want to throw it all in the pot & be done with it. This recipe literally is that easy & it’s done in less than a half hour. If you can toss & stir, you can do this.
I started with this bag of

So because every bag is packed with protein, I knew that adding it to my soup would make it filling & hearty. They offer three other varieties – Southwest Style, California Style & Asian Style. They are easy to prepare – just toss in the microwave & go, which makes cleanup a breeze.
This time of year I love to have something warm & comforting when I’m chilled from being outside. It’s so cold & all I want is a nice warm bowl of soup while I curl up by the fire with a blanket. This was certainly great for doing that.
Italian Lentil Soup
- 1- 28 oz can diced tomatoes- don't drain
- 2 cups water
- 4 cups vegetable broth
- 1 tbsp minced garlic
- 1 tbsp onion powder
- 2 tsp ground cumin
- Salt / pepper to taste
- 5 cups egg noodles
- 1 bag Birds Eye® Protein Blends Italian Style
- In a medium stockpot combine tomatoes, water, broth, garlic, onion powder, cumin, salt & pepper - heat over medium
- In another stock pot, cook egg noodles to package directions for al dente
- Microwave your bag of Birds Eye® Protein Blends according to package directions & then add to your soup mixture
- Once noodles are done cooking, drain & add to your soup, stir
- Bring to a simmer stirring frequently
- Remove from heat - enjoy
