Reese’s Potato Chip Cookie Bars – the best salty/sweet treat for peanut butter lovers- EVER! Incredibly easy yummy bar recipe loaded with peanut butter cups!
It’s time for peanut butter bash again! Are you excited? I sure am because I love love love peanut butter! This month the challenge was to pair peanut butter with potato chips. Sounds like a perfectly salty/rich & sweet combo that I had to jump in on. So I decided that another yummy bar recipe would be the best way to combine these awesome flavors. I made one of our favorite shortbread bar recipes & added chocolate chips, chopped mini peanut butter cups & crushed potato chips. I love this recipe because it’s so incredibly easy to make & they are just so good that they only last a few hours at best. No kidding! I no sooner photographed these & served them after dinner & the next thing I knew the container was GONE! Lickedy split!

Oh the buttery goodness of shortbread paired with chocolate! I love it so much. I suppose that’s why these are so incredibly addictive. Adding that bit of salty crunch in the potato chips just put these over the top. Usually, the richness of chocolate & peanut butter would slow us down. But adding the chips cut the sweetness just enough that it made it so easy to just keep grabbing one after another & another. Bad right? Well – I was just extra good for the rest of the week to even it out. No guilt!

Reese's Potato Chip Cookie Bars
- 2 sticks butter - softened
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- 1-3/4 cup all-purpose flour
- 1/2 cup chocolate chips
- 1/2 cup crushed potato chips
- 8 mini Reese's peanut butter cups- chopped
- Preheat oven to 350 degrees
- Line 9x9 baking pan with parchment - set aside
- In mixer bowl - combine butter & sugar & beat until fluffy
- Add in vanilla & flour - beat well
- Fold in chocolate chips
- Spread out into prepared pan
- Top with chips & peanut butter cups
- Bake 30-35 minutes or until just set & golden on top
- Remove & allow to cool to room temperature before cutting
