Christmas Wreath Cookies
Hi! I’m Krista and I blog over at Joyful Healthy Eats. I am honored that Gina is letting me take over her blog for the day. Today I am sharing one of my family favorite Holiday Treats, Christmas Wreath Cookies.
I have actually been baking up all kind of holiday treats the past couple of days like Mint Dark Chocolate Chip Cookies, Whole Wheat Cranberry Orange Scones, and Dark Chocolate Almond Biscotti. You should definitely go and check them out! Ok, back to the real reason your here, these cute Christmas Wreaths!
I inherited the recipe for these Christmas Wreath Cookies from my husbands family. They devour these during the holidays. I think last year we made 4 batches of these alone! They kinda remind me of rice crispy treats but with more crunch, and the awesome almond flavor with the cinnamon candy mixture is to die for. I actually converted my family to these cookies as well, now my brother asks for them!
If your looking for a super easy cookie recipe to make, a great activity with the kiddos, and festive treat for Christmas time then these Christmas Wreath Cookies are it! I hope you enjoy!
To get started, heat large non-stick sauce pan to medium heat. Add 1/3 cup of unsalted butter and 32 large marshmallows to pan and melt, stirring continuously.
Next add 1/2 teaspoon of almond extract, 1/2 teaspoon of vanilla extract, and 1 teaspoon of green food coloring {I try to get a dark rick forrest green color} In small amounts, add in 4 cups of whole wheat corn flakes until all flakes are coated green with the marshmallow mixture.
Scoop 2-3 tablespoons of corn flake mixture in piles onto parchment parchment and form piles into wreaths by putting a hole in the middle of the pile and shaping into a circle. {this can be kinda of sticky, but if you dip your fingers into a bowl of water and then form the wreath it will be much less sticky}
Lastly, decorate each wreath with Brachs cinnamon hard candies. {little red circles} Let sit for at least 10 minutes before devouring! 🙂

Has anyone done these lovely cookies with GF corn flakes?

I can’t see why it wouldn’t work since they aren’t baked – unless the texture of the GF variety would be more prone to breaking down when mixed in the coating.
If you give it a try, I’d love to know how it worked out.
