Skillet Breakfast Potatoes & Bacon makes a hearty morning meal. Crispy bacon, homefry style potatoes with parmesan cheese, chives and more. Delish!
I love a hearty breakfast on the weekends. After a week full of counting points & eating mostly fruit & veggies, by the time the weekend hits I’m having a major craving for some hearty comfort food. Usually that means carbs in the worst way possible. So when the hubs suggests whipping up some skillet breakfast potatoes & then decides to add some crispy bacon in there too- I’m all in. There’s no better way to to kick off my weekend.

We love to use a good seasoned, carbon steel skillet like one from Lodge. It makes the process so much easier & keeps those potatoes from sticking. Add a little homemade ranch dressing when serving & it’s pure heaven! I’m telling you, this really is one of my favorite breakfast recipes. Bacon, potatoes & cheese- you really can’t go wrong here. Hearty comfort food at it’s finest.
Skillet Breakfast Potatoes Bacon
Skillet Breakfast Potatoes & Bacon
- 6-8 russet potatoes- peeled & chopped
- 1 package bacon
- salt/pepper to taste
- 1/4 cup parmesan cheese
- 2 tbsp bread crumbs
- 1 tbsp chives
- Fry bacon in a large cast-iron skillet over medium-high heat until evenly browned and crisp
- Remove from the pan & add the potatoes to the bacon drippings
- Season with salt & pepper
- Reduce heat to medium & cook potatoes for about 20 minutes, stirring occasionally, until tender and browned
- Chop bacon & sprinkle on top along with cheese, chives & bread crumbs before serving.
