Ingredients

  • 12 lasagna noodles
  • 1 tbsp olive oil
  • 1 lb ground beef or Italian sausage
  • 1 onion diced (small)
  • 3 cloves garlic minced
  • 24 oz marinara sauce
  • 2 cups cottage cheese
  • 2 cups mozzarella cheese - shredded
  • ½ cup Parmesan cheese - grated
  • 1 large egg
  • 1 tsp dried basil
  • 1 tsp dried oregano

salt and black pepper to taste

Instructions

  • Preheat the oven to 375°F.
  • Boil the lasagna noodles according to package directions, drain, and set aside.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion to the oil, and cook until softened.
  • Stir in the ground beef or sausage, cooking until browned.
  • Add the garlic and cook for 30 seconds, then pour in the marinara sauce and simmer for 5 minutes.
  • Mix the cottage cheese, egg, Parmesan cheese, basil, oregano, salt, and pepper in a medium bowl until combined.
  • Spread a thin layer of the meat sauce in the bottom of a 9x13 baking dish.
  • Start making the layers, starting with a layer of noodles on top of the sauce, followed by the cottage cheese mixture, then meat sauce, and a sprinkle of the mozzarella.
  • Repeat the layers until all the ingredients are used, finishing with sauce and mozzarella on top.
  • Cover with foil and bake for 30 minutes.
  • Remove the foil and bake for another 15 minutes. It should be bubbly and lightly browned on top.
  • Let rest for 10 minutes before slicing and serving.
