Blueberry Pie Filling 
Making homemade blueberry pie filling  is easier than you think! With just a handful of ingredients—fresh or frozen blueberries, sugar, cornstarch, lemon juice, and a touch of vanilla—you can create a rich, glossy filling bursting with juicy blueberry flavor.

4  cups  blueberries   - fresh or frozen ¾  cup  granulated sugar 3  tbsp  corn starch pinch  salt 1  tbsp  lemon juice 2  tsp  vanilla extract  optional Heat blueberries over medium heat in a saucepan until they release their juices and have soften. (about 7-9 minutes) 
Whisk the sugar, cornstarch, and salt together in a separate bowl. 
Once the blueberries are cooked, add the dry mixture and stir well to thoroughly combine. 
Continue cooking and stir constantly until mixture thickens - 2-3 minutes. 
Remove from the heat and carefully stir in the lemon juice and vanilla (if using). Allow to cool to room pemperature. 
Transfer to glass jars and keep refrigerated until ready to use.
