Equipment

  • 3 mini loaf pans

Ingredients

  • 2 ounces bittersweet chocolate baking chocolate - 2 squares
  • ½ cup water
  • 1 cup brown sugar firmly packed - light
  • ½ cup butter - softened (1 stick)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 tbsp red food color
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • cup mini chocolate chips

Icing

  • 1 cup confectioners sugar
  • 2 tbsp milk 1-3 tbsp - depending on desired thickness
  • snowflake sprinkles opt

Instructions

  • Preheat the oven to 350 degrees.
  • Spray the bottoms only of 3 mini loaf pans with baking spray - set aside.
  • In a small saucepan, combine bittersweet chocolate and the water.
  • Heat over low, stirring occasionally until the chocolate is melted.
  • Remove from the heat and set aside to cool to room temperature.
  • In a large bowl, combine the brown sugar, butter, eggs, and vanilla.
  • Whisk well, until creamy.
  • Add in the melted chocolate mixture and the sour cream. Whisk again until smooth.
  • Next, beat in the red food color, followed by the flour, baking soda, and salt.
  • Fold in the mini chocolate chips.
  • Spoon the batter into the prepared loaf pans.
  • Bake for 35-40 minutes or until the toothpick test is clean.
  • Cool the loaves in the pans on a cooling rack.
  • Once cool, remove and prepare the icing.

Icing

  • Place the confectioner's sugar in a bowl &andwhisk in 1 tbsp of milk at a time using a fork until you achieve the desired consistency.
  • Drizzle the icing over the cake loaves, and sprinkle with snowflake sprinkles. Enjoy or wrap and give away as gifts to friends and family.
