Preheat the oven to 350 degrees.
Spray the bottoms only of 3 mini loaf pans with baking spray - set aside.
In a small saucepan, combine bittersweet chocolate and the water.
Heat over low, stirring occasionally until the chocolate is melted.
Remove from the heat and set aside to cool to room temperature.
In a large bowl, combine the brown sugar, butter, eggs, and vanilla.
Whisk well, until creamy.
Add in the melted chocolate mixture and the sour cream. Whisk again until smooth.
Next, beat in the red food color, followed by the flour, baking soda, and salt.
Fold in the mini chocolate chips.
Spoon the batter into the prepared loaf pans.
Bake for 35-40 minutes or until the toothpick test is clean.
Cool the loaves in the pans on a cooling rack.
Once cool, remove and prepare the icing.
