These simple no-chill Vanilla Cookies are not only quick and easy to make, but they are a great base to change them up with mix-ins too.

- 1 cup butter unsalted  - softened
- ⅔ cup granulated sugar
- ½ teaspoon salt
- 1 large egg room temperature
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- Preheat oven to 350 degrees F. 
- Line a baking sheet with parchment paper or a silicone mat. 
- In a large bowl, beat the butter until fluffy. 
- Add the sugar and salt and beat until well combined and fluffy. 
- Beat in the egg and vanilla until well combined. 
- Gradually add the flour and beat until well combined. 
- Roll into balls and place them on the prepared baking sheet. 
- Bake for 8-10 minutes or until edges are set and slightly golden brown. 
- Transfer to a wire rack and cool completely. 
- Store in an airtight container.
