  • 8 oz rice noodles 225g
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 bell pepper thinly sliced
  • 1 carrot julienned
  • 1 zucchini sliced
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 green onions sliced

    Instructions

    • Cook the rice noodles according to package instructions. Drain and set aside.
    • Heat the vegetable oil in a large wok or skillet over medium-high heat. Add broccoli, bell pepper, carrot, and zucchini. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
    • Add the minced garlic and grated ginger to the vegetables, stir-frying for an additional 1-2 minutes until fragrant.
    • Whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil in a small bowl. Pour the sauce over the vegetables and toss to coat evenly.
    • Add the cooked rice noodles to the wok, tossing everything together until well combined and heated through.
    • Garnish with sliced green onions and sesame seeds before serving.
