Ingredients

  • 2 tablespoons olive oil
  • 2 lbs beef sirloin steak sliced into thin strips - or flank steak
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 1 cup low-sodium beef broth
  • ½ cup low-sodium soy sauce
  • 1 tablespoon brown sugar or sweetener of choice, or omit for no added sweetness
  • 1 ½ teaspoons ground black pepper
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 orange bell pepper sliced (optional)
  • 1 yellow bell pepper sliced (optional)
  • 1 ½ tablespoons cornstarch
  • 1 ½ tablespoons water

Instructions

  • Spray the slow cooker insert with cooking oil.
  • Add the beef to the bottom of the insert, followed by the sliced onions.
  • Whisk the garlic, beef broth, soy sauce, brown sugar (or alternative), and black pepper in a mixing bowl. Pour over the beef and onions.
  • Cover and cook on low for 5–6 hours, until beef is tender.
  • In the last 30 to 45 minutes of cooking, add the bell peppers.
  • Create the slurry by whisking the cornstarch and water together. Then add it to the cooker to thicken the sauce before serving.
  • Serve over cooked rice, cauliflower rice, or noodles.
