Chewy RITZ Cracker Oatmeal Cookies

Ingredients

  • 1/2 cup crushed RITZ Crackers
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 3/4 tsp coarse sea salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1-1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 3 bars chocolate bars broken into chunks (divided) 1.55 ounces each

Instructions

  • In a large mixing bowl, combine butter, granulated sugar & brown sugar & beat well until light & fluffy.
  • Add in the egg, milk & vanilla & beat until well mixed.
  • Slowly add in the salt, baking soda & baking powder, mixing until just incorporated.
  • Slowly mix in the oats, flour & crushed RITZ Crackers until just combined.
  • Fold in most of the chocolate chunks.
  • Cover the bowl & refrigerate at least 1-2 hours.
  • Once the dough is properly chilled, preheat oven to 375 degrees.
  • Line your baking sheets with parchment paper & drop tablespoon-sized scoops of cookie dough on the parchment, placing the scoops approx 1-2 inches apart.
  • Bake for 8-10 minutes.
  • Top with remaining chocolate chunks if desired.
  • Cool on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.
