- In a large mixing bowl, combine butter, granulated sugar & brown sugar & beat well until light & fluffy. 
- Add in the egg, milk & vanilla & beat until well mixed. 
- Slowly add in the salt, baking soda & baking powder, mixing until just incorporated. 
- Slowly mix in the oats, flour & crushed RITZ Crackers until just combined. 
- Fold in most of the chocolate chunks. 
- Cover the bowl & refrigerate at least 1-2 hours. 
- Once the dough is properly chilled, preheat oven to 375 degrees. 
- Line your baking sheets with parchment paper & drop tablespoon-sized scoops of cookie dough on the parchment, placing the scoops approx 1-2 inches apart. 
- Bake for 8-10 minutes. 
- Top with remaining chocolate chunks if desired. 
- Cool on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.
