Easy Strawberry Shortcake Cookies

Easy Strawberry Shortcake Cookies are the perfect spring & summer dessert. Soft & chewy sugar cookies topped with delicious vanilla frosting & fresh strawberries. These taste just like your favorite old-fashioned strawberry shortcake.

Ingredients

  • cups all-purpose flour sifted
  • 2 tsp baking powder
  • cups granulated sugar
  • 1 cup butter 2 sticks
  • 2 eggs
  • 2 tsp vanilla extract
  • ¼ cup granulated sugar to coat
  • 1 Pillsbury Filled Pastry Frosting Bags - Vanilla
  • 2 cups strawberries sliced fresh

Instructions

  • In a bowl, stir together the flour & baking powder. Set aside.
  • In a large mixing bowl, beat together the sugar and butter until fluffy.
  • Beat in the eggs & vanilla.
  • Stir in the flour mixture, a third of it at a time, to make a stiff dough.
  • Preheat the oven to 350 degrees F.
  • Scoop a ball of the dough, roll it into a ball & then roll it in the remaining sugar to coat.
  • Bake on a non-stick cookie sheet for 8 minutes.
  • Cool completely on the pan before transferring them to a wire rack before decorating.
  • Once cooled, use the Pillsbury Filled Pastry Bags to swirl the frosting on top of each cookie.
  • Place several slices of strawberries on top of the frosting.
