Easy Strawberry Shortcake Cookies

Easy Strawberry Shortcake Cookies are the perfect spring & summer dessert. Soft & chewy sugar cookies topped with delicious vanilla frosting & fresh strawberries. These taste just like your favorite old-fashioned strawberry shortcake.

  • 1 Pillsbury Filled Pastry Bags - Vanilla
  • 3 1/2 cups Sifted All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 1/2 cups Granulated Sugar
  • 2 Eggs
  • 2 sticks Butter (1 cup)
  • 2 tsp Vanilla Extract
  • 1/4 cup Granulated Sugar to coat
  • 2-3 cups sliced fresh strawberries


  • In a bowl, stir together flour & baking powder. Set aside.
  • In mixing bowl, beat together butter & sugar until fluffy.
  • Beat in eggs & vanilla.
  • Stir in flour mixture, a third at a time to make a stiff dough.
  • Preheat oven to 350 degrees F
  • Scoop a ball of dough, roll into a ball & roll in sugar to coat.
  • Bake on non-stick cookie sheet for 8 minutes
  • Cool completely on pan before transferring to a wire rack before decorating
  • Once cooled, use Pillsbury Filled Pastry Bags to swirl on the frosting on top of each cookie
  • Place several slices of strawberries on top of frosting - enjoy!
