Preheat the oven to 350 degrees.
Line a 9x9" pan with parchment paper. Set aside.
In a medium microwave-safe bowl, melt the butter in the microwave for about 30 seconds. (until mostly melted & then stir the rest until completely melted)
Once the butter is melted, whisk in the granulated sugar until smooth.
Then add in the eggs, vanilla and instant coffee granules.
In another small microwave-safe container, melt a 1/2 cup of the chocolate chips in the microwave. You can do this at 50% power in 30 second increments until melted.
Once the chocolate is melted, whisk it into the sugar mixture until smooth - about 1 minute.
Use a large rubber spatula to stir in the flour, cocoa powder and salt. Don't over-mix. Stir until just combined.
Fold in most of the remaining chocolate chips - reserving a small portion to add to the tops of the brownies.
Pour into the prepared pan. Top with the reserved chocolate chips.
Bake 30 minutes or until toothpick test is clean.
Allow to cool before cutting.
Optional - dust with confectioners sugar before serving.
