Apple Fritter Cupcakes

Ingredients

  • 1/3 cup butter - room temperature
  • 3/4 cup granulated sugar
  • 1/2 cup cinnamon applesauce
  • 1 tsp vanilla extract
  • 2 eggs
  • 2-1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1-1/2 tsp cinnamon
  • 1 cup sour cream
  • 10 ounces apple pie filling

Topping

  • caramel drizzle
  • confectioners sugar

Instructions

  • Preheat oven to 350 degrees
  • Line 24 muffin tin wells with wrappers
  • In mixer bowl combine butter & sugar - beat until fluffy
  • Add applesauce, eggs, vanilla - mix until just combined
  • Add flour, baking powder, baking soda, salt & cinnamon
  • Stir in slowly & add in your sour cream to keep moist
  • Mix until just combined
  • Scoop out into your cupcake wrappers filling about 2/3 full
  • Top each with 1-2 tsp of apple pie filling
  • Bake 30-35 minutes or until the center springs back when touched
  • Remove & cool on wire rack before adding caramel drizzle & confectioners sugar
