  • 3 very ripe bananas
  • 2 eggs
  • cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup vegetable or canola oil
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ tsp baking powder
  • ½ cup walnuts or pecans optional


  • Pre-heat oven to 350 degrees.
  • Combine bananas, eggs, flour, sugar, oil, baking soda, salt, baking powder and optional nuts into a large mixing bowl & beat well on med-high for approximately 30-45 seconds, or until it has the consistency of cake batter.
  • Pour into a greased 13x9 glass baking dish.
  • Bake for 30-35 minutes or until deep golden brown & springs back when you push slightly on top.
  • Let cool or serve warm. This recipe doubles well for 2 - 9x13 pans.


*Note - I had a reader tell me that she made this in a loaf pan instead. Baked for 1 hour 5 minutes.
