Ingredients
1cupold fashioned oats
3/4cupall-purpose or whole wheat flour
1/3cupbrown sugar
1/4tspkosher salt
6tbspunsalted butter- melted
1tbspmilk
3/4cupblackberry jampreferably homemade- search Kleinworth & Co. for an easy 5 min recipe
Glaze
1/2cupconfectioners sugar
1/2tspvanilla extract
1tbspmilk
Instructions
Preheat oven to 375 degrees
Line 8x8 baking pan with parchment paper - set aside
In a medium bowl, combine oats, flour, brown sugar, salt, milk & melted butter - stir until all dry ingredients are evenly moistened
Set aside 1/2 cup of the mixture & transfer remaining to prepared pan - press into an even layer
Spread jam over the top of the oat layer
Sprinkle crumbles of reserved oat mixture on top- do not press - leave scattered
Bake 35-40 minutes or until golden brown
Allow to cool completely before adding glaze
Make glaze
Combine all ingredients in a small bowl & whisk well
Drizzle over the top of chilled bars & then cut to serve
