Preheat oven to 350F,
Line a baking sheet with parchment or silicone mat; set aside.
In a large bowl, add egg, butter, sugars & vanilla - beat well.
Add the oats, flour, baking soda & salt - stir to combine.
Fold in Raisinets
Using a medium cookie scoop, form mounds & place on prepared baking sheet spaced about 2 inches apart
Bake 10-13 minutes or until edges have set -don’t overbake. Cookies firm up as they cool.
Immediately upon taking the baking sheet out of the oven, add about 3-4 additional Raisinets per cookie.
Cool cookies on baking sheet for about 10 minutes before serving.
