Parchment Paper
- 12 dates
- ¼ cup peanut butter
- ¼ cup chopped nuts
- 1 cup semisweet chocolate chips
- 1 tablespoon coconut oil
Line a standard baking sheet with parchment paper.
Slice the dates open, remove the pit.
Spread a small spoonful of peanut butter inside each hollow date.
Press chopped nuts into the peanut butter filling.
Gently squeeze the dates to close them as best as possible. They won’t close all the way.
Freeze for 10 minutes.
Melt the chocolate chips and coconut oil in 30-second intervals in the microwave in a microwave-safe bowl, stirring until smooth.
Dip each chilled, stuffed date into the melted chocolate, turning to ensure it is fully coated.
Place the coated dates onto the prepared baking sheet.
Refrigerate for about 10 minutes or until the chocolate sets.
Serve chilled.
