- 12 ounces pasta rotini, shells, or elbow
- 2 cups chicken fully cooked, chopped, or shredded
- ½ cup mayonnaise
- ⅓ cup Greek yogurt optional, for lighter texture
- ½ cup celery finely chopped
- ⅓ cup red onion finely diced
- ½ cup red grapes halved (optional)
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- 2 tablespoons parsley fresh - chopped (optional)
Cook the pasta according to package directions for an al dente texture.
Drain and rinse the cooked pasta under cold water to cool completely, then set aside.
Whisk the mayonnaise, Greek yogurt if using, Dijon mustard, lemon juice, salt, pepper, and garlic powder in a large bowl until smooth.
Fold in the cooled pasta, chicken, celery, red onion, grapes if using, and parsley until everything is evenly coated in the dressing.
Adjust seasoning if desired.
Chill for at least 30 minutes before serving for best flavor.
