Make tender, flavorful boiled peanuts in the Instant Pot with this easy recipe. A simple Southern snack ready in a fraction of the traditional cooking time.
Rinse the peanuts, discarding any loose shell pieces and any bad peanuts.
Soak the peanuts in cold water for about 30 minutes, then drain.
Transfer the peanuts to the Instant Pot insert and sprinkle with salt.
Add 4 cups of water, close the lid, and seal the valve.
Cook on high pressure for 40 minutes.
Manual quick release.
Do a texture test on the peanuts - make sure it is cooked to your desired softness and is salty enough for your liking.
Stir the peanuts; add the remaining 4 cups of water. If they aren’t quite as salty as you want, this is the time to add more.
Close the lid, cook on manual, high pressure for another 20 minutes if the peanuts were close to your liking. If you like them softer, cook for another 40 minutes.
Manual quick release. Drain the water before serving.

Yields 2 pounds total.Store in an airtight container in the fridge for up to 1 week. Do not store them in water; they must be drained. I do not suggest freezing.Everyone’s softness level is different when it comes to boiled peanuts. Always test halfway through to ensure you’re getting the texture you desire.Always start with ¼ cup salt per 2 pounds of peanuts. Tastes vary, so be sure to adjust the salt to your preference.Do not forget to add that extra water and stir at the halfway point.
