Cinnamon Cookies Recipe

Fall is a favorite time of year because cinnamon smells so good when it's being baked, which is why these Cinnamon Cookies are always a hit!

Ingredients

  • 1 cup butter + 3 tbsp - slightly softened but still cool
  • ¾ cup brown sugar
  • cups all-purpose flour
  • 1 cup walnuts finely chopped
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ tsp baking powder

Topping

  • 1 cup granulated sugar
  • 1 tablespoon cinnamon

Instructions

  • Preheat the oven to 350 degrees and line two baking trays with parchment paper.
  • In a stand mixer, using a paddle, beat the butter and brown sugar together.
  • Then mix in the flour, chopped walnuts, vanilla, cinnamon and baking powder.
  • Once the paddle has pulled in all of the dough, take the dough out and roll it on lightly floured surface. Make sure it’s ¼ inch thick, evenly spread.
  • Cut out your cookies in the desired shape and place on the prepared baking trays. Repeat with remaining dough.
  • Bake for 15 - 20 minutes until the edges are a bit golden.
  • Meanwhile combine your granulated sugar with one tablespoon of cinnamon.
  • Once your cookies are ready, remove them from the oven. While they are still hot, dredge them in the sugar mixture - coating completely.
  • Let cool completely before serving.
