Easy Strawberry Shortcake Cookies
Easy Strawberry Shortcake Cookies are the perfect spring & summer dessert. Soft & chewy sugar cookies topped with delicious vanilla frosting & fresh strawberries. These taste just like your favorite old-fashioned strawberry shortcake.

- 1 Pillsbury Filled Pastry Bags - Vanilla
- 3 1/2 cups Sifted All-Purpose Flour
- 2 tsp Baking Powder
- 1 1/2 cups Granulated Sugar
- 2 Eggs
- 2 sticks Butter (1 cup)
- 2 tsp Vanilla Extract
- 1/4 cup Granulated Sugar to coat
- 2-3 cups sliced fresh strawberries
In a bowl, stir together flour & baking powder. Set aside.
In mixing bowl, beat together butter & sugar until fluffy.
Beat in eggs & vanilla.
Stir in flour mixture, a third at a time to make a stiff dough.
Preheat oven to 350 degrees F
Scoop a ball of dough, roll into a ball & roll in sugar to coat.
Bake on non-stick cookie sheet for 8 minutes
Cool completely on pan before transferring to a wire rack before decorating
Once cooled, use Pillsbury Filled Pastry Bags to swirl on the frosting on top of each cookie
Place several slices of strawberries on top of frosting - enjoy!
