Ingredients

  • 10 tablespoons butter (salted) melted
  • 1 cup granulated sugar
  • 2 eggs whole large
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon instant coffee granules
  • 11.5 ounces milk chocolate chips divided
  • ¾ cup all-purpose flour
  • ¼ cup cocoa powder - unsweetened not dutch process
  • ½ teaspoon table salt

Instructions

  • Preheat the oven to 350 degrees.
  • Line a 9x9" pan with parchment paper. Set aside.
  • In a medium microwave-safe bowl, melt the butter in the microwave for about 30 seconds. (until mostly melted & then stir the rest until completely melted)
  • Once the butter is melted, whisk in the granulated sugar until smooth.
  • Then add in the eggs, vanilla and instant coffee granules.
  • In another small microwave-safe container, melt a 1/2 cup of the chocolate chips in the microwave. You can do this at 50% power in 30 second increments until melted.
  • Once the chocolate is melted, whisk it into the sugar mixture until smooth - about 1 minute.
  • Use a large rubber spatula to stir in the flour, cocoa powder and salt. Don't over-mix. Stir until just combined.
  • Fold in most of the remaining chocolate chips - reserving a small portion to add to the tops of the brownies.
  • Pour into the prepared pan. Top with the reserved chocolate chips.
  • Bake 30 minutes or until toothpick test is clean.
  • Allow to cool before cutting.
  • Optional - dust with confectioners sugar before serving.
