Ingredients
1lbboneless skinless chicken tenders
1bagrefrigerated spinach tortellini
1tbspminced garlic
2cupshalf & half
1tbspall-purpose flour
½cupshredded cheddar cheese
½cupshredded parmesan cheese
1½cupsbroccoli florets
salt & pepper to taste
added parmesan cheese for garnish
Instructions
Chicken
Preheat the grill to 375 degrees.
Grill the chicken until fully cooked throughout and juices run clear. These tenders are small, so they should only need a few minutes per side.
Cut the chicken into slices and add to drained pasta once it is cooked.
Pasta
Cook the pasta over med-high heat according to the package directions - add olive oil to the water when cooking the pasta.
Remove from the heat and drain.
Add the pasta back to the pot.
Sauce
While the pasta is cooking - make your sauce by whisking together the half and half in a medium saucepan with the flour until flour is dissolved.
Cook over med-high heat until mixture is bubbling and thick (approx 4 min).
Slowly whisk in the garlic, cheeses, salt and pepper - continuing to stir.
Cook on low for 3-5 minutes - remove from heat.
Broccoli
Bring a small pot of water to a boil over med-high heat.
Once boiling, add the broccoli and blanch for 2-3 minutes or until fork-tender.
Remove and add to the chicken and noodles.
Combine
Add the cream sauce to chicken, broccoli and pasta and stir gently to coat before serving.
