White Corn Tortillas

White Corn Tortillas


  • 3-1/2 cups water
  • 2 eggs
  • 1 cup white cornmeal
  • 2 cups all-purpose flour
  • 3 tsp salt


  1. Combine all ingredients in large bowl & whisk well - add more water as needed 1/8 cup at a time
  2. (batter should be thin- more like cake batter than muffin batter.)
  3. Heat a large non-stick skillet over med-low heat
  4. Ladle in one scoop of batter like you would pancakes
  5. Take the backside of a spoon & smooth out the batter to the outer sides to get the tortilla as thin as you can & also even out the shape (this should make it more uniform in size & shape & help increase the size)
  6. Allow to cook until browned - flip & brown the other side - be patient & watch closely
  7. The first couple might take a little practice but once you have it down it's really quite simple
  8. This should make about 20-24 tortillas depending on their final size
