Ingredients
3very ripe bananas
2eggs
1¼cupall-purpose flour
1cupgranulated sugar
½cupvegetable or canola oil
1tspbaking soda
½tspsalt
¼tspbaking powder
½cupwalnuts or pecansoptional
Instructions
Pre-heat oven to 350 degrees.
Combine bananas, eggs, flour, sugar, oil, baking soda, salt, baking powder and optional nuts into a large mixing bowl & beat well on med-high for approximately 30-45 seconds, or until it has the consistency of cake batter.
Pour into a greased 13x9 glass baking dish.
Bake for 30-35 minutes or until deep golden brown & springs back when you push slightly on top.
Let cool or serve warm. This recipe doubles well for 2 - 9x13 pans.
Notes
*Note - I had a reader tell me that she made this in a loaf pan instead. Baked for 1 hour 5 minutes.
