These simple no-chill Vanilla Cookies are not only quick and easy to make, but they are a great base to change them up with mix-ins too.

Ingredients

  • 1 cup butter unsalted - softened
  • cup granulated sugar
  • ½ teaspoon salt
  • 1 large egg room temperature
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour

Instructions

  • Preheat oven to 350 degrees F.
  • Line a baking sheet with parchment paper or a silicone mat.
  • In a large bowl, beat the butter until fluffy.
  • Add the sugar and salt and beat until well combined and fluffy.
  • Beat in the egg and vanilla until well combined.
  • Gradually add the flour and beat until well combined.
  • Roll into balls and place them on the prepared baking sheet.
  • Bake for 8-10 minutes or until edges are set and slightly golden brown.
  • Transfer to a wire rack and cool completely.
  • Store in an airtight container.
