These simple no-chill Vanilla Cookies are not only quick and easy to make, but they are a great base to change them up with mix-ins too.

- 1 cup butter unsalted - softened
- ⅔ cup granulated sugar
- ½ teaspoon salt
- 1 large egg room temperature
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
Preheat oven to 350 degrees F.
Line a baking sheet with parchment paper or a silicone mat.
In a large bowl, beat the butter until fluffy.
Add the sugar and salt and beat until well combined and fluffy.
Beat in the egg and vanilla until well combined.
Gradually add the flour and beat until well combined.
Roll into balls and place them on the prepared baking sheet.
Bake for 8-10 minutes or until edges are set and slightly golden brown.
Transfer to a wire rack and cool completely.
Store in an airtight container.
