Ingredients

  • 3 pounds chicken breasts boneless, skinless , cut into 1 to 2-inch pieces

Marinade

  • 1 cup soy sauce low-sodium
  • 6 tablespoons brown sugar
  • 3 tablespoons hoisin sauce
  • 2 tablespoons chili paste
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 lime juiced

Kabobs

  • 1 head bok choy cut into 1 to 2-inch pieces (the stalk and the leafy greens)
  • 3 bell peppers in different colors, seeded and cut into 1-inch square pieces
  • ½ red onion - cut into 1-inch square pieces

Instructions

Chicken

  • Place the chicken in the zip-top bag.
  • Add the soy sauce, brown sugar, hoisin sauce, chili paste, sesame oil, minced garlic, and lime juice.
  • Close the bag. Shake around and mix the ingredients together until well blended.
  • Refrigerate for at least 2 hours.
  • Once marinated, place the chicken pieces on a water-soaked bamboo skewer or on metal skewers, alternating with the vegetables.

To make in the oven:

  • Preheat the oven to 450 degrees.
  • Prepare a large-rimmed sheet pan with parchment paper or aluminum foil spritzed with nonstick cooking spray.
  • Place the skewers on the baking sheet.
  • Bake the chicken kabobs for 15 minutes or until cooked through, turning once.
  • If more color is desired, preheat the oven’s broiler. Place the baking sheet under the broiler and cook for 1 to 2 minutes or until the desired color is reached.

GRILLING

  • Prepare the grill according to the manufacturer's directions to cook at medium-high heat.
  • Place the chicken on the grill and cook, uncovered, for 7 to 10 minutes on each side depending on the thickness.
  • Test the chicken for an internal temperature of 165 degrees.

Notes

Note: before cooking, soak the bamboo skewers in water for about 20 minutes prior to preparing the kabobs.
