Tater Tot Casserole

This easy tater tot casserole is a Midwestern classic comfort food combining seasoned ground beef, creamy sauce, tater tots, and cheese.

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion about 1 cup finely diced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste
  • 10.5 oz cream of mushroom soup 1 can
  • 2 cups sharp cheddar cheese shredded, divided
  • cup milk 2% or whole
  • 2 cups frozen corn thawed - or mixed vegetables
  • 20 oz frozen tater tots 1 bag

Instructions

  • Preheat the oven to 375 degrees F.
  • Lightly spray a 13x9 baking dish with cooking spray. Set aside.
  • In a medium skillet over medium-high heat, brown the ground beef for about 10 minutes.
  • Add the onions and continue cooking until the onions are soft and beef is completely cooked, drain if necessary.
  • Sprinkle the cooked beef with the seasonings, salt and pepper and cook for 1 more minute.
  • In a large bowl, whisk together the soup, 1 ½ cups of the cheese and the milk.
  • Stir in the beef mixture and the vegetables.
  • Pour the mixture into the prepared baking dish.
  • Top with a single layer of the tater tots.
  • Sprinkle with the remaining cheese.
  • Bake uncovered for 25-30 minutes or until the mixture is bubbly and the tater tots are golden brown.
  • Allow the casserole to rest for 5 minutes before serving.
  • Store any leftovers in the refrigerator in an airtight container.
