Ingredients

– 1 cup butter at room temperature – ¾ cup granulated sugar – ½ cup brown sugar – 2 eggs at room temperature – 1 tsp vanilla extract – 2 ½ cups all-purpose flour – ¾ tsp baking soda – ½ tsp salt – 2 tsp ground cinnamon – 1 tsp ground ginger – ¼ tsp ground cardamon – ¼ tsp all-spice – ¼ tsp ground cloves

Combine the wet + sugars in one bowl and the dry in another bowl before combining both mixtures.

Cover the bowl in and let it chill in the fridge for at least 2 hours. The chilling process is key to the flavor and chewiness of the cookies.

Preheat oven to 350 and bake the cookies for 10-12 minutes or until the edges are set and lightly golden.
