Chilled Lemon Roll Cake



Eggs Lemon Cake Mix Cold Water Canola Oil Lemon Cream Cheese Marshmallow Fluff Whipped Topping


Preheat oven to 375 degrees F. and prepare a 10x15 and 12x8 baking sheet with baking spray. Line with paper overhanging the edges.


Combine cake mix ingredients and then pour the batter evenly across both trays. Bake for 10-14 minutes.


Place two sheets of parchment paper on the counter. When cake is removed, flip over onto the paper right away. While cake is still hot, roll cake up into a log. Repeat for second cake.


Let cool for 15 min at room temperature then 1 hour in the fridge. While it is cooling, whip together the filling ingredients.


Go ahead and spread the filling on the cakes once cooled and then roll back up. Place cakes in fridge overnight. Next day, pour some powdered sugar over top and enjoy right from the fridge!
