Blueberry Pie Donuts

Oh my goodness I’m so excited to share these with you all.  (Imagine me talking super high pitched & fast – like a teenager)  I have been playing with various recipes using blueberries- because – well, my family LOVES them & have been begging me to make more things with them.  Sooooooo- I had the idea of  Blueberry Pie Donuts.  You already know I make a lot of donuts- in fact I’m actually contemplating an entire cookbook dedicated to them.  But I have so many other cookbooks swirling around in my head that the idea of actually getting it together is overwhelming.    So anyhow….


These turned out so much better than I could have ever imagined.  I had a seriously hard time not eating more than a couple while I took the pics & an even harder time holding them for the kids’ breakfast – instead of hoarding them all for my coffee time in the mornings.   Yeah- I’m pretty disciplined when it comes to having these things in the house- but these were really hard to resist.

Blueberry Pie DonutsI cooked them in my mini-donut maker like I usually do.  Then I topped them with streusel & broiled them for like a second- then added the glaze.Blueberry Pie DonutsSeriously!!!   If they were completely bite sized- they wouldn’t have made it through the session.  Gone in a flash.

Blueberry Pie Donuts


  • 3 cups all-purpose flour
  • 1-1/2 cups granulated sugar
  • 3 tsp baking powder
  • 2 sticks butter- melted & slightly cooled
  • 2 cups mashed blueberries with their juice
  • 1 cup plain Greek yogurt (I used Chobani)
  • 2 eggs - lightly beaten
  • Streusel Topping
  • 2 tbsp firm stick butter
  • 1/4 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1 tsp cinnamon
  • Glaze
  • 1 cup confectioners sugar
  • 1 tbsp sweetened condensed milk- room temp
  • 1-2 tbsp milk


  1. Preheat donut machine or preheat oven to 350 degrees.
  2. In large bowl- combine flour, sugar & baking powder.- Whisk.
  3. Whisk in eggs, then yogurt, then butter.
  4. Fold in mashed blueberries & their juice.
  5. Transfer to pastry bag & pipe into donut wells or scoop in to full size donut pan.
  6. Cook 6 minutes for mini-donuts or 10-12 for full size in the oven.
  7. Remove & cool on wire rack & repeat the cooking process for remaining batter.
  8. Streusel
  9. Combine all ingredients in bowl & use pastry blender to mash & combine until crumbly.
  10. Lay donuts out on cookie sheet- sprinkle streusel mix over the top.
  11. Broil on high 1-2 minutes. This goes really quick & they can burn fast. Watch closely- you only want to melt in the streusel to the donut tops just a little.
  12. Glaze
  13. Combine all ingredients in bowl- whisk until smooth & glossy.
  14. Transfer to pastry bag & pipe/drizzle over the tops of the donuts.
  15. Allow to set before stacking.
  16. Store in airtight container in refrigerator for up to 4 days.
  17. Microwave 2 at a time for 30 seconds before serving.

      Oh yay AnnMarie- I hope you give it a try & use that new pan. I have a lot of different recipes for mini donuts here- one of our family favorites is the banana oat.
