Oh my goodness I’m so excited to share these with you all. (Imagine me talking super high pitched & fast – like a teenager) I have been playing with various recipes using blueberries- because – well, my family LOVES them & have been begging me to make more things with them. Sooooooo- I had the idea of Blueberry Pie Donuts. You already know I make a lot of donuts- in fact I’m actually contemplating an entire cookbook dedicated to them. But I have so many other cookbooks swirling around in my head that the idea of actually getting it together is overwhelming. So anyhow….
These turned out so much better than I could have ever imagined. I had a seriously hard time not eating more than a couple while I took the pics & an even harder time holding them for the kids’ breakfast – instead of hoarding them all for my coffee time in the mornings. Yeah- I’m pretty disciplined when it comes to having these things in the house- but these were really hard to resist.
I cooked them in my mini-donut maker like I usually do. Then I topped them with streusel & broiled them for like a second- then added the glaze. Seriously!!! If they were completely bite sized- they wouldn’t have made it through the session. Gone in a flash.
