Ingredients
15ouncespumpkin pureenot pie filling
3eggs
1cupvegetable oil
2 ½cupsgranulated sugar
3cupsall-purpose flour
2teaspoonsbaking soda
1 ½teaspoonssalt
1teaspoonground cinnamon
1 ½teaspoonpumpkin spice blend
Instructions
Preheat the air fryer to 330 degrees.
Prepare four mini loaf pans by lightly spraying with cooking oil or coat with baker's release.
In a medium bowl, mix together the wet ingredients: pumpkin, eggs, and vegetable oil.
In a larger mixing bowl, whisk together the dry ingredients: sugar, flour, baking soda, salt, and seasonings.
Stir the wet ingredients into the dry ingredients just until mixed. Don't over-work the batter.
Divide the batter between the prepared mini loaf pans.
Bake in the air fryer for 35 to 45 minutes, depending on the wattage. Test the middle of the bread with a toothpick. The bread is done when a toothpick returns clean and somewhat dry. (The pumpkin can tint the toothpick orange if it isn’t done.) You can also lightly press in the center of the loaf - if it springs back, the bread is done.
If the bread is browning too much but needs to cook longer, tent with foil for the remainder of the cooking time.
