Birthday Cookies

Sure, cakes are great for birthdays, but have you ever tried Birthday Cookies? They're so much more fun to decorate and eat!

Ingredients

  • 15.25 oz funfetti cake mix
  • 2 large eggs room temperature
  • ½ cup oil vegetable or canola
  • ¼ cup sprinkles plus more for garnish
  • 10 oz birthday cake chocolate kisses

Frosting, optional

  • 1 cup unsalted butter softened (2 sticks)
  • 4 cups confectioner's sugar
  • 1-2 tablespoons heavy whipping cream or milk
  • 1 teaspoon clear vanilla extract ** see notes

Instructions

  • Preheat the oven to 350 degrees F.
  • Line 2 large baking sheets with parchment paper or a silicone mat. Set aside.
  • In a large bowl, mix together the cake mix, eggs, and oil until completely combined.
  • Stir in the sprinkles until mixed throughout.
  • Scoop with cookie dough scoop or tablespoon onto the prepared baking sheets.
  • Bake for 8-10 minutes or until slightly firm but still soft.
  • Remove from the oven and place the baking sheet on a wire rack.
  • If adding chocolate kisses without frosting, add them immediately while the cookies are warm.
  • Or cool the cookies completely, then add the frosting, sprinkles, and chocolate kisses.
  • Store in an airtight container.

Frosting

  • In a mixing bowl, cream the butter until fluffy and smooth.
  • Sift the confectioner's sugar into a medium bowl - this step is optional, although it makes the frosting smooth and easier to mix.
  • Gradually add the confectioner's sugar, alternating with heavy cream or milk.
  • Add the vanilla extract and beat well.
  • Add to a piping bag with a large star tip and pipe onto cooled cookies before adding the chocolate kiss.

Notes

Clear vanilla extract will keep the frosting nice and white, regular vanilla extract can also be used.
