Ingredients

  • 3 large eggs
  • 1 tablespoon milk
  • pinch salt and pepper
  • 1 tablespoon butter

Instructions

  • Whisk together the eggs, milk, salt, and pepper until combined.
  • Heat the butter in a large non-stick skillet over medium heat until melted.
  • Pour the eggs into the skillet and let cook for 1-2 minutes without moving them around.
  • Lift the edges of the eggs with a rubber spatula and fold them over into the center of the eggs to form soft curds.
  • Reduce the heat to medium-low and continue cooking and folding, do not stir.
  • Remove the pan from the stovetop when cooked to the doneness you like and season with additional salt and pepper if desired.
  • Serve immediately.

Microwave Method

  • Beat the eggs, milk, salt, pepper and butter in a microwave-safe bowl until blended.
  • Microwave on high for 45 seconds.
  • Remove the bowl and stir.
  • Return the bowl to the microwave and cook again for an additional 30-45 seconds.
  • Serve immediately.

Air Fryer Method

  • Using a medium-sized bowl that will fit in your air fryer AND that is air fryer safe - melt the butter in a preheated 350 degree air fryer for about a minute.
  • Carefully remove the bowl and swirl the melted butter around to coat.
  • Add the eggs, milk, salt and pepper and whisk well.
  • Place the mixture in the dish back into the air fryer.
  • Cook on 350 for 10-12 minutes.

Notes

Eggs will continue to cook for up to an additional 3 minutes once they are removed from the heat, so be cautious to not over-cook. The eggs are considered done when they are set but still glistening with moisture. If you cook too long they will be dry and rubbery.
