Senate Bean Soup

- 1 yellow onion - chopped
- 2 stalks celery - chopped
- 2 carrots - chopped
- 2 tbsp olive oil
- 8 cups vegetable stock
- 16 ounces diced ham
- 2 tsp granulated garlic
- 2 tsp pepper
- 1 tsp salt
- 31 ounces white beans - drained and rinsed (2 cans - any type of white beans)
- 4 ounce packet Roasted Garlic Flavored Instant Mashed Potatoes
Combine the chopped onion, celery and carrots with the olive oil in the Instant Pot insert.
Heat on the saute setting, stirring frequently until the veggies start to soften.
Press cancel.
Add the stock, ham, granulated garlic, pepper and salt.
Cover and set the valve to sealing.
Cook on manual pressure for 8 minutes.
Natural pressure release for 15 minutes.
Once the pin has dropped, remove the lid and press cancel.
Add in the beans and mashed potatoes packet. Stir.
Turn on the saute setting again and bring to a simmer for about 5 minutes.
Stir before serving.
- You can use a ham bone in place of the diced ham if desired.
- 1 cup leftover mashed potatoes or 1/3 cup instant potato flakes can be used in place of the flavored version called for.
- Any variety of stock can be used.
