Spinach Artichoke Stuffed Mushrooms

A delicious and easy recipe for spinach artichoke stuffed mushrooms. These can be a great appetizer or a side dish to any meal.

Ingredients

  • 20 - 22 cremini or button mushrooms
  • 1 cup fresh spinach torn into small pieces
  • 1 cup artichoke hearts cut into small pieces
  • cup cream cheese
  • 1 ½ tablespoons mayonnaise
  • 1 ½ tablespoons sour cream
  • ½ cup parmesan cheese - shredded
  • salt to taste
  • pepper to taste

Instructions

  • Preheat the oven to 350 degrees F. Take a baking dish and cover it with non-stick spray, set aside.
  • Clean the mushrooms before using. Carefully break off stems. Set aside.
  • In a saucepan, add ½ cup of water, spinach, and artichokes.
  • Heat until boiling and then lower the heat to a simmer and cook for 5 minutes.
  • Remove from the heat, and discard the water. Transfer the spinach and artichokes to a plate and pat dry with a paper towel to remove the rest of the water.
  • Place them back into the saucepan, and heat the sour cream, mayonnaise, cream cheese, pepper flakes if you are using and mix until completely combined on low heat. .
  • Add most of the parmesan cheese and mix until combined. Save some for later.
  • Remove from heat, and using a little spoon, fill each mushroom cavity with a generous amount of stuffing.
  • Place them on your baking dish, sprinkle the extra parmesan cheese on top and bake for 25 minutes or until the top of the cheese looks a bit golden.
  • Serve immediately.

Note: The number of servings depends on the size of the cavity of the mushroom.
