Oven Roasted Mushrooms with Garlic and Thyme are super easy to make and the perfect addition to your weeknight dinners or holiday feast. Done in 15 minutes.

Ingredients
1poundcremini or button mushrooms
1tablespoonolive oil
2clovesgarlicminced
1teaspoonfresh thymeminced
1teaspoonkosher salt
½teaspoonblack pepper
Fresh herbsparsley, chives, or thyme, for garnish
Instructions
Preheat the oven to 425F.
Use a damp towel or sponge or rub any dirt off the outside of the mushrooms.
Place the mushrooms on a large baking sheet and drizzle with olive oil. Sprinkle over the garlic, thyme, salt and pepper and toss to combine.
Roast the mushrooms for 8-10 minutes, or until they are just tender. Serve with a garnish of fresh herbs and enjoy.
Store any leftover mushrooms in an airtight container in the fridge for up to three days.
Notes
This recipe calls for cremini or button mushrooms but shitake or king oyster would also work! If using portobello, I recommend slicing them into ½” slices.
I’m using olive oil but feel free to use your favorite neutral cooking oil.
Fresh garlic and thyme are my seasonings of choice but feel free to swap out your favorite herbs-- rosemary and sage would also be delicious!
